PASTA WITH SAUSAGE PEPPERS AND ONIONS
Pasta with Sausage Peppers and Onions are always a favorite starter at any fine Italian restaurant. Serve it on top of your favorite pasta and you get a fabulous meal.

Steps:
- In 6 quarts of boiling salted water, cook the pasta until al dente. About 10 to 13 minutes. Drain and set aside.
- Stir in 2 Tbls of olive oil into the pasta.
- In the meantime, fry the sausage in a large frying pan in 2 Tbls of olive oil until the sausage cooked through and browned all over.
- Remove the sausage from the pan and let stand.
- Drain the excess oil in the frying pan.
- Add the peppers, onions, garlic, oregano and basil to the pan, cover and cook on medium heat until the peppers are tender and slightly browned.
- Cut the sausages into 1 inch pieces and add to the peppers.
- Increase the heat and add the white wine.
- Cook until the wine is reduced by half.
- Stir in the butter and the parsley.
- Season with salt and pepper.
- Plate the pasta and spoon the sausage mixture on top.
- Optional: Plate the pasta, pour a good quality, or homemade vodka sauce over the pasta, then top with sausages and peppers.
- Serve with Parmesan cheese.
SAUSAGES WITH PEPPERS AND ONIONS

Steps:
- Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
- Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
- Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
- Garnish with the basil and serve immediately.
SAUSAGE PEPPER AND ONIONS BAKED
The Italian herbs consists of thyme, sage, rosemary, oregano, basil, parsley, marjoram which you can mix as you like or buy store prepared mixes.

- Preheat oven to 350°F.
- In a large Dutch oven place peppers onions, sausage and bake covered for 1 hour.
- Place on stove top removing sausage and set aside.
- To the peppers and onions and juices (there will be lots of liquid) add the remaining ingredients and simmer till a thick consistency.
- Meanwhile slice sausage lengthwise.
- When sauce is to desired thickness and the sausage to reheat and serve over pasta or on a fresh roll.

- Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
- Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
- Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.

- Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
- Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
- In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
- Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
- Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
- Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
- Simmer about 10 minutes.
- Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
- Serve with grated parmesan.

- Take a large skillet and heat the olive oil in it over medium high heat. Brown the sausage completely in it while you break it up with a spoon, about 6-8 minutes. Remove it from the pan onto a plate and set it aside. Pour in a little more olive oil and add the peppers and onions to the pan. Cook them until they become soft and start to brown. Then add the garlic and let it get fragrant for a minute.
- Season the mixture with the salt, crushed red pepper, dried basil, dried parsley, nutmeg, marinara, ricotta and parmesan into the pan and give everything a big stir. Reduce the heat to low and let it simmer for 10 minutes. While that is all cooking, get a large pot of water on the stove and bring it to a boil. Salt it until it tastes like the sea. Cook the pasta until just tender, usually about 8 minutes.
- While the pasta cooks and the sausage mixture is simmering pre-heat the oven to 350. Grab a 9 x 13 pan and brush the whole inside with olive oil to grease it. Drain the pasta and pour it into the prepared baking pan. Take the sausage mixture and pour it over the pasta and give it all a stir in the pan. Flatten it out to be even. Evenly distribute the shredded mozzarella over the top and then the breadcrumbs on top of the mozzarella.
- Bake the sausage, pepper and onion pasta bake in the oven for about 30 minutes, until the top and edges are slightly crisp and the interior is bubbly. Take it out and let it set for 5 minutes, then just cut and serve!
