Rise & Shine Granola image

My Rise & Shine Granola has a coffee and cacao flavor and is packed with the heartiness of walnuts, hazelnuts, and macadamia nuts. It is less sweet for that true morning coffee vibe. I eat my granola over greek yogurt, but you can use it for granola bars or as a cereal topping.

Non-stick spray
¼ cup shredded coconut flakes, unsweetened
½ cup walnuts, halves or pieces
½ cup hazelnuts
¼ cup macadamia nuts
2 tablespoons flaxseeds
Pinch of salt
1/8 cup brown sugar
2 teaspoons ground coffee or espresso powder
1 teaspoon cacao powder (you can use cocoa powder as a sub)
2 tablespoons canola oil
¼ cup maple syrup
¼ cup honey
½ teaspoons vanilla
3 cups old-fashioned rolled oats
¼ cup cacao nibs
¾ cup dried dates, chopped

Steps:

  • Heat oven to 250º F and coat a baking sheet with non-stickspray.
  • In a small mixing bowl, mix coconut, walnuts, hazelnuts, macadamia nuts, and flaxseeds.
  • In a large mixing bowl, combine salt, brown sugar, ground coffee, cacao powder, oil, maple syrup, honey, and vanilla. Toss in the nut/seed mixture until the nuts are fully coated. Add rolled oats. Transfer mixture to baking sheet spreading out to make an even layer.
  • Bake for 40 minutes total - use a spoon to toss the granola around at least twice during baking, so the granola browns evenly.
  • Transfer cooled granola to a bowl and toss in cacao nibs and dates. Store in a covered glass container at room temperature for up to 5 days.

3 -4 cups rolled oats
1/2 cup raw sunflower seeds
1/2 cup chopped almonds
1/4 cup sesame seeds
1/4 cup flax seed
1/2 cup oil
1 tablespoon carob powder (optional) or 1 tablespoon cocoa (optional)
1 teaspoon cinnamon
1/4-1/2 cup dry sweetener
1/2 teaspoon salt
1/2 cup shredded coconut
1/2 cup raisins
1/2 cup chopped dates
1/2 cup dried cranberries

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together the pat flakes, sunflower seeds, almonds, sesame seeds, and flax seeds.
  • In a medium sized bowl, whisk together the oil, carob powder, cinnamon, sweetener, and salt.
  • Add this mixture to the large bowl and combine well.
  • In a lasagna pan or two flat cookie sheets, spread mixture evenly and bake for 15-20 minutes, until the top layer is browned (if you use cookie sheets, bake 12-15 minutes).
  • Flip over with spatula and bake for another 8-10 minutes, then remove from oven.
  • The mixture will be moist, but will dry and harden as it cools.
  • Mix in dried fruit ingredients and let cool, stirring every 10 minutes to prevent clumping.
  • Store in air-tight containers.
  • Serve with fresh fruit and soy milk.

1/4 cup orange juice
1/4 cup sugar
2 teaspoons vanilla extract
1 (12 ounce) container light cream cheese, softened
1 cup chopped fruit (fresh, frozen or canned; thawed, if frozen)
1 cup granola cereal

Steps:

  • In a small microwave-safe bowl, combine the raisins, orange juice, sugar, and vanilla.
  • Cover and microwave at high power for 45 seconds; let stand for 1 minute, until the raisins plump up. Stir until the sugar is dissolved.
  • In a medium bowl, whisk the cream cheese until smooth.
  • Stir in the raisin mixture until well combined.
  • In 4 dessert dishes or parfait glasses, layer the cream cheese mixture, fruit, and granola.
  • Repeat the layers then serve, or cover loosely and chill until ready to serve.
