1/2 cup whipped cream cheese
2 tablespoons chopped chives
Zest and juice of 1/2 lemon
Kosher salt and freshly ground black pepper
8 thin slices white bread, such as Pepperidge Farm
1/2 English cucumber, thinly sliced
6 ounces thinly sliced roast beef
1 stick (8 tablespoons) unsalted butter, at room temperature
2 1/2 tablespoons minced fresh dill
Kosher salt and freshly ground black pepper
8 thin slices white bread, such as Pepperidge Farm
6 ounces thinly sliced deli ham
4 slices Cheddar

Steps:

  • For the roast beef with cucumber and chive cream cheese: Combine the cream cheese, chives and lemon zest and juice in a medium mixing bowl. Season with salt and pepper, mixing together to blend.
  • Spread 1 tablespoon of the chive cream cheese onto each slice of bread. Top 4 of the bread slices with a thin layer of cucumber, 2 slices of roast beef and another slice of bread (making 4 sandwiches).
  • For the ham and cheddar with dill butter: Combine the butter and dill in a medium mixing bowl. Season with salt and pepper, mixing together to blend.
  • Spread 1 tablespoon of the dill butter onto each slice of bread. Top 4 of the bread slices with 2 slices of ham, 1 slice of cheese and another slice of bread (making 4 sandwiches).

  • Apple, Brie, Dijon, and Turkey Sandwich. Split 1 (6-inch) piece French baguette in half lengthwise. Spread 2 teaspoons Dijon mustard on the cut sides of baguette.
  • Pesto and Egg Baguette Sandwich. Split 1 (6-inch) piece French baguette in half lengthwise. Stir together 1 tablespoon pesto with 1 tablespoon mayonnaise; spread onto both cut sides of baguette.
  • Club Sandwich. Split 1 kaiser roll in half. Place 2 ounces sliced deli chicken breast on the bottom half of the roll. Spread a thin layer of Dijon mustard onto chicken.
  • Mozzacado Sandwich. Smash 1/2 of an avocado with a little salt and pepper. Spread onto 2 thick slices sourdough bread. Top one slice with 1/2 small ripe tomato, sliced, 2 thick slices whole-milk mozzarella cheese, and 4 fresh basil leaves.
  • Ham and Cheese Baguette. Split 1 (6-inch) piece French baguette in half lengthwise. Spread the bottom half with 2 teaspoons Dijon mustard. Layer 2 ounces unsmoked, thinly sliced deli ham and 2 thin slices Gruyere cheese on top of the mustard.
