ROASTED GARLIC PESTO
Roasting garlic mellows its sharp flavor and is a great way to use up extra heads of garlic hiding in your pantry. Mix it with nuts, fresh basil, Parmesan cheese, and lemon and you get a pesto that's perfect for pasta.

- Remove the loose papery stuff from the outside of the garlic. Slice the top of the garlic off, enough so the tops of the cloves are exposed. Place the whole head of garlic on a piece of tin foil, drizzle 1 teaspoon of olive oil over the top, and pull the tin foil up around it and twist close. There are two ways to roast the garlic:
- Preheat the grill to medium-high heat. Place the wrapped garlic directly on the grill, close the lid, and roast for 30 minutes.
- Once the garlic is cool enough to handle, squeeze it to extract the roasted cloves. Place the roasted garlic, basil, pine nuts, salt, lemon juice and Parmesan cheese in a blender or food processor. Pulse a few times to chop and mix the ingredients. With the machine running, slowly add 1/3 cup of olive oil. Check for salt and add additional, if necessary. Makes approximately 1 cup.

ROASTED GARLIC MASHED POTATOES

- Preheat oven to 425 degrees F.
- Slice off the very top of the garlic head. Drizzle head with olive oil and wrap in foil. Place on a sheet tray and bake until tender and fragrant, roughly 35 minutes. Remove from the oven and let cool. Remove the cloves and mash with a wooden spoon.
- Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil. Cook until fork tender and drain. Mash the potatoes until smooth.
- Meanwhile heat butter and cream until butter melts. Add the roasted garlic and potatoes and mash all together.
- Taste and season with salt and pepper. Serve immediately.

- Place garlic cloves in a small baking dish. Drizzle with olive oil, cover, and bake 45 minutes, or until golden brown.

- Separate head of garlic into individual cloves.
- Toss in olive oil and wrap tightly in small piece of aluminum foil.
- Bake in 350°F (180°C) oven for 45 minutes.
- When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
- Mash the roasted garlic with a fork, or force through a fine strainer.
- If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
- Peel and boil potatoes in salted water until tender.
- Force the cooked potatoes through a ricer (recommended) or mash by your usual method.
- Put the riced potatoes, garlic, sour cream, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth.
- Add cream or milk to adjust consistency.

- Preheat the oven to 450 degrees F.
- Place the garlic on a pie pan and drizzle with olive oil. Season with salt and pepper. Place in the oven and roast for 35 to 40 minutes, or until tender and golden brown. Remove from the oven and cool. Squeeze or remove the garlic cloves from the head and place in a small bowl. Using a fork, mash the garlic until smooth. Place the potatoes in a pot of salted water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12 to 15 minutes.
- Remove the pan from the heat and drain. Place the potatoes back in the pot and return to the heat. Stir the potatoes, constantly, for 2 to 3 minutes to dehydrate the potatoes. - Cut off the top of the garlic bulb, and roast in a preheated 350-degree oven in a ceramic dish for approximately 30 minutes.
- Place the red potatoes in a pot of water and boil until tender. Drain and set aside. Take 2 potatoes from the pile, cut them into quarters and place them on a cookie sheet. With a fork smash them down until flat, brush them with a little bit of the melted butter, and cook in a warm oven until crispy and golden brown. Set aside to top the finished potatoes.
- Saute the onions in the olive oil until the onions are translucent.

- Cut top 1/4-inch garlic head and wrap head in foil.
- Roast garlic 40 to 50 minutes, or until very soft, and cool.

- Preheat the oven to 400 degrees F (200 degrees C).
- Remove outer skin from garlic head, leaving individual cloves intact. Cut 1/4 to 1/2 inch off the top, exposing all cloves. Coat top of garlic with olive oil and use your fingers to work it in. Wrap in foil and place in a baking dish.
- Roast in the preheated oven for 45 minutes.

- The night before, cube the potatoes, and put them in a large saucepan with salted cold water and place in the refrigerator overnight.
- Roast the garlic: Preheat the oven to 350 degrees F, peel the outermost layers of skin off the heads of garlic; cut off the top 1/3 of the heads to open the cloves and heat olive oil in a large oven-safe saute pan over medium heat; Add garlic, and saute for about 10 minutes; Season with salt and pepper and transfer pan to the oven to roast for 15 minutes; Remove from heat and let cool.
- For the garlic paste: Pop garlic cloves from their skins and place cloves in a blender, along with any olive oil left in the pan; Puree until smooth; you should have a paste-like consistency.
- For the potatoes: The next day, add some more salt and then bring to a boil over high heat.
- Cook until tender, about 10 minutes.
- Drain well, place potato cubes in a food mill, and grind to remove skins.
- Alternatively, smash the potatoes with a large fork or potato masher.
- Heat 1 tablespoon of the butter in a large saucepan over medium heat until the butter stops foaming and turns a light brown.
- Add the garlic paste and cook quickly.
- Add the cream, season, to taste, with salt and pepper, and bring to a boil.
- Reduce the heat to low and fold in potatoes with a wooded spoon or large whisk.
- Add the remaining butter by tablespoons, until taste suits you, stirring after each addition.
- Season with salt and pepper, to taste, and serve.

ROASTED GARLIC PESTO MASHED POTATOES
I ate lunch at this place next to the Texas A&M campus that sold baked potatoes. I ordered the Italian chicken and pesto. It was alright, but made me think that better pesto and more of it would be great on potatoes. So this evening I made my wife's Recipe #209606 and used up the rest of the pesto. You can make your own or buy store bought. If you live close by an HEB, the make really good pesto in their deli.

- I like to dice my potatoes up so the cook fasted and take less mashing to get them smooth. Add your diced potatoes to a pot of boiling salted water. Make sure to add plenty of salt to the water. When you think you have enough, add a little more.
- While the potatoes are boiling, heat the Half & Half, the butter and the garlic.(I use the microwave, one high for 3 to 4 minutes).
- When the potatoes are done, drain them and return them to the pot.
- Add about half of the cream liquid to the potatoes and start mashing. I like and old school, dime store masher on a stick. Nothing fancy here. Oh, make sure to scoop all the garlic out of the liquid and into the potatoes.
- Mash until smooth and creamy, leaving as many lumps as you like. Add as much of the remaining liquid as it takes to get them to the smoothness you like. (Some lumps are good. That way they know they're real, not instant).
- Season with salt and pepper to taste.
- Fold in the pesto right before service.
