ROASTED GRAPE CROSTINI
Whip up this decadent crostini whenever you're hungry, craving something sweet and savory, need to elevate your brunch spread, or just want to impress your friends with a fancy appetizer.

- Preheat the oven to 425℉
- Add the grapes, olive oil, salt, and thyme to a rimmed baking sheet and toss to coat.
- Roast the grapes for about 30 minutes, or until they are blistered and bubbling. Remove from the oven and let cool while you prepare the crostini.
- Toast the bread to your desired level of toastiness, then spread the same amount of ricotta on each slice and sprinkle with a pinch of salt.
- Top with the grapes, then drizzle with honey and spring with salt (if desired) and serve immediately.
- Store leftovers in an airtight container in the fridge for up to 4 days.

- Basil spread :In a shallow dish, use a handheld blender to mix all the ingredients for the basil spread until you get a very smooth texture. Add a few tablespoons of water if it is too thick.Crostini :Preheat the oven to 400°F (200°C) with the rack in the middle position.Spread the crostini out on the baking sheet and brush them with oil. Sprinkle fleur de sel on top and bake for about 12 minutes or until they've turned golden brown. Let cool on the baking sheet.Roasted grape crostini :Line a baking sheet with parchment paper. Spread the grapes, thyme, and rosemary out on the baking sheet. Drizzle olive oil and white balsamic on top and season with salt. Bake in the oven at 400°F (200°C) for about 15 minutes or until they begin to burst.Spread a bit of the basil spread on half of the cooled crostini. Add the roasted grapes and top with basil and fleur de sel.Cherry and basil crostini :Spread a bit of the basil spread on half of the cooled crostini. - Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and set aside.
- Toss grapes, 1 tablespoon olive oil, thyme, and oregano together in a medium bowl. Spread grapes out evenly on the prepared baking sheet and sprinkle with salt and pepper.
- Bake in the preheated oven until grapes are tender and their skins start to wrinkle, 12 to 15 minutes.
- Meanwhile, brush baguette slices lightly with remaining olive oil and place on another baking sheet.
- Toast in the preheated oven until lightly browned, 3 to 4 minutes. Remove grape mixture and crostini from the oven and let cool slightly.
- Mix ricotta cheese and lemon zest together in a bowl. Spread onto each crostini and top with grape mixture. Drizzle with balsamic glaze and serve.

- Preheat oven to 400°. Toss first five ingredients; spread in a greased 15x10x1-in. pan. Roast until grapes are lightly browned and softened, 30-35 minutes. Stir in orange zest., Preheat broiler. Arrange bread slices on an ungreased baking sheet. Broil 3-4 in. from heat until lightly browned, 1-2 minutes per side. Top with warm grape mixture; sprinkle with cheese and basil.

- Preheat oven to 400 degrees Fahrenheit with racks in the top third and lower third of the oven. Line a large rimmed baking sheet and a small rimmed baking sheet with parchment paper for easy cleanup.
- Brush olive oil lightly over both sides of each slice of bread. Arrange the future toasts in a single layer on the large baking sheet. Remove all stems from the grapes. Transfer the grapes to the small baking sheet, toss them with about 1 tablespoon olive oil and then season them with a light sprinkle of salt and pepper.
- Place the grapes on the upper oven rack and the toasts on the lower. Set the timer for 20 minutes. Keep an eye on the toasts; they will be ready to remove from the oven around the halfway mark, once they are nice and golden on top. Let the grapes roast for the full 20 minutes, and maybe a few minutes longer. They’re done when they’re tender and their skins are lightly wrinkled.
- Slice the brie into long, 1/4-inch wide strips, then slice them into smaller strips to fit the crostini (leave the waxy rind on, it’s edible). Top each toast with enough brie to roughly cover the surface, followed by grapes. Finish the crostini with a light sprinkle of pepper and fresh thyme leaves.
