Roasted Poblano and Chicken Enchiladas With Sour Cream Sauce image

Love this recipe!!! This is a combination of recipes that Dh and I came up with. It's my filling recipe and his sauce recipe. This looks like a lot of work, but really it's not. I usually make the filling up ahead of time and then all I have to do is roll them and make the sauce. Serve with black beans and spanish rice! Enjoy!!

2 cups rotisserie-cooked chicken
2 poblano peppers, roasted and chopped
1 red onion, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons chili powder
1 cup monterey jack cheese, shredded
10 soft taco-size flour tortillas
1/4 cup green onion, finely sliced
1 large shallot, finely minced
2 garlic cloves, minced
1 -2 serrano peppers (optional) or 1 -2 jalapeno pepper, minced (optional)
2 tablespoons butter
1/2 teaspoon cumin
1/4 teaspoon coriander
1/2 teaspoon garlic powder
1/4 teaspoon white pepper
2 tablespoons flour
8 ounces sour cream
2 cups chicken broth

Steps:

  • To roast the peppers: Cut poblano peppers in half, remove all seeds and stem. Roast poblano peppers at 450 degrees until skin begins to blister and turn black in spots, this should take about 10-15 minutes. ***I save the plastic produce sack the peppers came in and when they come out of the oven, I place them in the sack and seal the sack. Let sit 5-10 minutes. The steam from inside will loosen the black skin. Pick what you can of the black parts off, then chop the peppers.
  • Combine the first 8 ingredients in a bowl. Set aside.
  • To make the sour cream enchilada sauce: Saute shallot, garlic and peppers in butter over medium heat in a large skillet until veggies soften. Add spices. Cook for another minute.
  • Combine sour cream and flour well. Add to skillet along with chicken broth. Wisk to combine. (It'll look a little funny for a minute, but don't worry!) Bring mixture to boil. Reduce heat, wisk and simmer until sauce is thick and creamy.
  • Add 3/4 cup of enchy sauce to the filling mixture. Combine well.
  • In a greased 13x9 casserole, coat the bottom of dish with 1/2 cup of enchy sauce.
  • Place 1/4 cup of filling down the center of each tortilla. Roll up and place seam side down in casserole. Repeat with remaining tortillas and filling. Top casserole with remaining enchy sauce.
  • Bake at 375 degrees for 20 minutes or until warm and bubbly!
  • Garnish with green onions.

Black Bean and Poblano Tacos image

There are many kinds of tacos, some piled high and overstuffed and some more minimal, meant to be more a snack than a meal. These little tacos are in the second category, similar to what you might find in a Mexican market for a quick bite. Savory black beans and roasted poblano chiles make a satisfying vegetarian version. Fresh soft corn tortillas, hot off the griddle, are essential.

1/2 pound black beans, rinsed and soaked 4 to 6 hours, or overnight if possible
1 small onion, halved
1 bay leaf
1 large sprig epazote (optional)
1 teaspoon salt
4 poblano chiles
Soft corn tortillas
1/2 pound fresh mozzarella or Oaxacan-style string cheese, shredded
1/2 pound queso fresco, available in Latino groceries
8 ounces crème fraîche or Mexican crema

Steps:

  • Drain beans, put in medium pot, add water to cover and bring to a boil over hight heat. Add onion, bay leaf, epazote and salt and reduce heat to a gentle simmer. Cook for about 1 hour, longer if necessary, adding water occasionally if liquid falls below surface of beans. When beans are tender, taste and adjust salt. Keep beans warm in their broth.
  • Meanwhile, roast poblano chiles over a charcoal grill, under the broiler or directly on a gas stovetop burners until skins are completely blackened and blistered. Set chiles aside to cool, then split lengthwise. Scrape away skins and seeds with a paring knife. Cut cleaned chiles into 1/2-inch ribbons, transfer to small bowl and season lightly with salt.
  • To serve, warm the tortillas on a hot griddle or cast iron pan over a burner. Put 2 warm tortillas side by side on a small plate. With a slotted spoon, place 2 tablespoons beans on each tortilla. Top with a few shreds of mozzarella and 2 or 3 strips of poblano. Crumble a little queso fresco and drizzle about 1 teaspoon crème fraîche on each taco.

2 (8 ounce) skinless, boneless chicken breast halves
2 tablespoons minced garlic
1 medium onion, chopped
3 cups water
1 tablespoon chicken bouillon granules
4 fresh poblano chilies
1 (8 ounce) container sour cream
2 tablespoons olive oil
10 (6 inch) corn tortillas
1 cup shredded mozzarella cheese

Steps:

  • Place the chicken breasts, garlic, onion, water, and chicken bouillon into a saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 40 minutes. When finished, remove the chicken to a plate to cool. Measure out 1 cup of the chicken broth and discard the rest.
  • Roast the poblano chiles over an open flame, or underneath a broiler until the skin has blackened on all sides. Place the chiles into a plastic bag, or a bowl covered with plastic wrap, and allow to steam as they cool, about 30 minutes. When cool, peel the blackened skin off of the pepper, and remove the seeds and membrane.
  • Place the reserved chicken broth into a blender along with the roasted poblanos and sour cream. Puree until smooth and set aside.
  • Heat the olive oil in a skillet over medium heat. Fry the tortillas one at a time until softened and beginning to crisp. Place onto a plate and set aside. Pour the pureed poblano mixture into the skillet and simmer for 10 minutes. While the sauce is cooking, slice the cooled chicken breasts into 1/4 inch strips.
  • Using tongs, dip a tortilla into the sauce, coating both sides. Place some of the chicken in the center of the tortilla, roll tightly, then place on a serving dish with the seam side down. Repeat with remaining tortillas. Spoon any remaining sauce over top of the enchiladas, then sprinkle with the shredded mozzarella cheese.

2 Cans (13 oz) Tomatillos Drained
2 Onions chopped fine
1 cup Fresh Cilantro
1/3 cup vegetable broth
1/4 cup heavy cream
1/4 cup vegetable oil
5 garlic cloves peeled
1 tablespoon lime juice
1 teaspoon sugar
1 can (15 oz) black beans rinsed
1 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
8 ounces Monterey Jack cheese shredded
12 corn tortillas

Steps:

  • 1. Adjust oven rack 6 inches from broiler element and heat broiler. Place poblanos on aluminum foil-lined rimmed baking sheet and broil, turning as needed, until skins are charred, 15 to 20 minutes. Transfer poblanos to large bowl, cover with plastic wrap, and let steam for 5 minutes. Remove skins, stems, and seeds, then chop poblanos into ½-inch pieces. Reduce oven temperature to 400 degrees and adjust oven rack to middle position. 2. Process tomatillos, half of onion, ½ cup cilantro, broth, cream, 1 tablespoon oil, 3 whole garlic cloves, lime juice, sugar, and 1 teaspoon salt in food processor until sauce is smooth, about 2 minutes, scraping down sides of bowl as needed. Season with salt and pepper to taste. 3. Mash half of beans in large bowl with potato masher or fork until mostly smooth. Heat 1 tablespoon oil in 12-inch skillet over medium heat until shimmering. Add remaining onion and cook until softened and lightly browned, 5 to 7 minutes. Stir in remaining 2 cloves minced garlic, chili powder, coriander, and cumin and cook until fragrant, about 30 seconds. Stir in chopped poblanos, mashed beans, and remaining whole beans and cook until warmed through, about 2 minutes. 4. Transfer bean mixture to large bowl and stir in 1 cup Monterey Jack, ½ cup pureed tomatillo sauce, and remaining ½ cup cilantro. Season with salt and pepper to taste. Spread ½ cup pureed tomatillo sauce over bottom of 13 by 9-inch baking dish. Brush both sides of tortillas with remaining 2 tablespoons oil. Stack tortillas, wrap in damp dish towel, and place on plate; microwave until warm and pliable, about 1 minute. 5. Working with 1 warm tortilla at a time, spread ¼ cup bean-cheese filling across center of tortilla. Roll tortilla tightly around filling and place, seam side down, in baking dish; arrange enchiladas in 2 columns across width of dish. Pour remaining sauce over top to cover completely and sprinkle remaining 1 cup Monterey Jack down center of enchiladas. Cover dish tightly with greased aluminum foil. Bake until enchiladas are heated serving.

4 poblano chiles, halved, stemmed, and seeded
1 teaspoon plus ¼ cup vegetable oil
2 onions, chopped fine
1 cup fresh cilantro leaves
⅓ cup vegetable broth
¼ cup heavy cream
4 garlic cloves, minced
1 tablespoon lime juice
1 teaspoon sugar
Salt and pepper
1 teaspoon chili powder
½ teaspoon ground coriander
½ teaspoon ground cumin
1 (15-ounce) can black beans, rinsed, half of beans mashed smooth
8 ounces Monterey Jack cheese, shredded (2 cups)
12 (6-inch) corn tortillas

Steps:

  • Serve with sour cream, diced avocado, sliced radishes, shredded romaine lettuce, and lime wedges. 1. Adjust oven rack 6 inches from broiler element and heat broiler. Line rimmed baking sheet with aluminum foil. Toss tomatillos and poblanos with 1 teaspoon oil. Arrange tomatillos cut side down and poblanos skin side up on prepared sheet. Broil until vegetables are blackened and beginning to soften, 5 to 10 minutes. Let vegetables cool slightly.
