PORK LOIN WITH ROASTED GARLIC VINAIGRETTE
This meal is simple enough to make any night of the week, yet its beautiful enough for company. The roasted garlic vinaigrette also makes the perfect salad dressing, yummy!!

Steps:
- Preheat the oven to 475.
- Cut the tops off of each garlic head, place each garlic on a sheet of aluminum foil, drizzle with olive oil and salt and pepper, wrap foil so that the garlic is completely enclosed. Roast the garlic for 1 hour.
- Place the pork in a medium-sized heavy saucepan.
- Season on all sides with salt and pepper.
- Place the pork in the oven after the garlic has been roasting for 30 minutes.
- Roast the pork for 30-40 minutes, or until cooked through.
- Remove for the roasting pan, tent with foil, and let sit for 15 minutes.
- Remove the garlic from the oven after it has been in for 1 hour, let cool to the touch.
- Squeeze the cloves out of the skin.
- Place in a blender with the parsley and balsamic vinegar.
- Pulse until blended.
- Drizzle in the 3/4 cup olive oil while the machine is blending.
- Add the sugar, salt, pepper, and water and blend to incorporate.
- Serve the dressing over the pork.

- Preheat oven to 425°(F). Line a sheet pan with aluminum foil, spray with a little non-stick cooking spray and set aside.
- Mix all dry ingredients in a small bowl and set aside.
- Trim any excess fat from top of pork loin roast. Place roast on a large plate and coat with Worcestershire sauce, then with dry seasonings. Rub liberally on all sides of the pork.
- Place seasoned pork roast, fat side up, on foil lined sheet pan and place in oven at 425°(F) for 15 minutes.
- After 15 minutes, reduce heat to 375°(F) and continue roasting for about 45 minutes or until internal temperature of the pork is 145°(F) at the center of the roast.
- Remove from oven and tent pork roast loosely with a piece of foil for 5-10 minutes before serving.
ROAST PORK LOIN WITH GARLIC AND ROSEMARY
Steps:
- Preheat oven to 400°F. Line 13 x 9 x 2-inch roasting pan with foil. Mix first 4 ingredients in bowl. Rub garlic mixture all over pork. Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes. Turn roast fat side up. Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer. Remove from oven; let stand 10 minutes.
- Pour any juices from roasting pan into small saucepan; set over low heat to keep warm. Cut pork crosswise into 1/3-inch-thick slices. Arrange pork slices on platter. Pour pan juices over. Garnish with rosemary sprigs, if desired.

Steps:
- With a sharp paring knife, cut into roast at 1-inch intervals. Insert garlic into each slit.
- Combine the fennel seeds, thyme, paprika, salt and dry mustard; rub onto all surfaces of pork.
- Place into a shallow dish; cover and refrigerate 4 to 24 hours.
- Preheat oven to 350°F
- Place shallots and potatoes in a shallow roasting pan.
- Pour broth and vermouth over vegetables; add bay leaves and bake, covered, 30 minutes.
- Remove pork from refrigerator; uncover vegetables and place pork on top of them.
- Roast, uncovered, 90 minutes longer or until thermometer reaches 150°F
- Remove pork from pan; cover with foil and let stand 10 minutes.
- Transfer vegetables to large serving platter, cover to keep warm.
- Remove bay leaves and transfer pan juices to saucepan; bring to boil. Lower heat and simmer, uncovered, 12 to 15 minutes or until reduced by half.
- To serve, pass pan juices to spoon over carved roast and vegetables.
