Steps:
- Season the pork roasts all over with salt and pepper. Prepare an outdoor barbecue by soaking mesquite wood chips in water and adding to the coals for added flavor. Sear the pork on the hot grill to lock in the natural juices. Whisk together guava jam, oil, and 1 teaspoon of water. Season with fresh cracked pepper. Rub the pork with guava paste. Set 2 wide pieces of heavy-duty aluminum foil on a flat surface. Lay 5 banana leaves on each piece of foil in a crisscross pattern, then place the pork roasts on top. Fold the banana leaves up around the roasts to make a bundle. Insert a sugar cane spear through the banana leaves and into the pork to secure. Tent the foil over the roasts and seal 3 of the sides to form a pouch. Mix liquid smoke and remaining water together in a small bowl, pour it into the pouch. Close up the remaining edge of foil to lock in the moisture and flavor. Transfer back to the hot grill. Roast for 2 1/2 to 3 hours with the grill cover down. When the pork is cool enough to handle, shred using 2 forks.

At the Princeville Hotel on the Hawaiian Island of Kauai, a mixture of dried and fresh fruits is used to fill the pork. Begin preparing this dish one day before serving. I haven't tried this yet, but it sounds delish. Cooking times do not include marinating overnight.

- Combine 2 cups Sherry, cinnamon stick, lemon juice and peel in medium saucepan over medium-high heat.
- Simmer 2 minutes.
- Add prunes and apricots.
- Simmer until fruits are tender and mixture thickens slightly, about 20 minutes.
- Combine 2 cups Sherry, peppercorns and cloves in small saucepan over medium heat.
- Simmer 2 minutes.
- Remove from heat; cool marinade to room temperature.
- Using sharp knife, make lengthwise cut down center of pork, cutting 3/4 of the way through.
- Open as for book.
- Sprinkle cut side with some of onion.
- Close pork.
- Place in 13x9x2-inch glass baking dish.
- Sprinkle with remaining onion.
- Pour marinade over.
- Cover pork and fruit separately; chill overnight.
- Preheat oven to 375°F
- Drain any liquid from fruit mixture; reserve liquid, discarding cinnamon stick.
- Stir mango, papaya and sugar into fruit mixture.
- Discard pork marinade; pat pork dry.
- Open pork as for book.
- Season inside with salt and pepper.
- Spoon 2/3 cup fruit mixture down center of pork; reserve remaining fruit mixture.
- Fold pork over, enclosing filling.
- Tie pork in several places with kitchen string to keep filling in place.
- Season with salt and pepper.
- Heat oil in heavy large Dutch oven over medium-high heat.
- Add pork and cook until brown, about 5 minutes per side.
- Transfer to large roasting pan.
- Roast until thermometer inserted into center of pork registers 160°F., about 1 hour 15 minutes.
- Place pork on platter; reserve pan juices.
- Tent pork with foil and let stand 20 minutes.
- Mix reserved liquid from fruit, remaining fruit and reserved pan juices in heavy small saucepan.
- Bring to simmer.
- Slice pork; serve with fruit sauce.

- Combine olive oil, garlic, orange juice, marjoram, and orange zest in a resealable plastic bag; add tenderloins, seal, and marinate, refrigerated, overnight.
- Preheat a grill pan over medium-high heat. Remove tenderloin from marinade, discarding marinade. Wipe excess marinade from pork and season with salt and pepper. Add pork to grill and cook, turning every 4 minutes, until grill marks appear and internal temperature of pork reaches 135 to 140 degrees on an instant-read thermometer, about 21 minutes total. Set aside and let cool completely.
- Slice cooled pork crosswise into thin slices. Serve with fruit salsa.
ROASTED PORK LOIN WITH WILD MUSHROONS, GARLIC, AND SAGE PAN JUS
In this recipe the whole garlic cloves are roasted along-side the pork loin while the mushrooms are sauteed on the stove top. The recipe is from my favorite celebrity chef, Eric Ripert.

- Tie the pork loin with kitchen string; string it once lengthwise, then at 1-inch intervals crosswise.
- Season generously with salt and pepper on all sides.
- Heat the oil in a skillet, over medium high heat, then sear the pork on all sides, including the 2 ends, until a golden color.
- Lower the heat, toss in the whole, unpeeled garlic cloves, cover, and let pan roast for 25 minutes.
- Meanwhile, trim and clean the mushrooms.
- Heat another skillet and cook the shallots, garlic, and thyme in the butter and garlic until softened, about 3 minutes.
- Add the mushrooms and cook them until tender, about 5 minutes; set aside.
- Continue to pan roast the pork until it registers 150 degrees F on an internal meat thermometer.
- Transfer pork to a cutting biard and ket rest.
- Return the pan to medium heat, stir in the bay leaves and sage, then deglaze the pan with wine.
- Continue to cook until the wine is reduced by half; add the chicken stock, bring to a boil, and reduce a little more.
- Stir in the mushrooms and let them infuse their flavor into the sauce.
- Cut the pork into 1/2-inch slices and serve with the mushrooms and sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
- Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove roast to a platter. - For the pork and peach bbq sauce:.
- Preheat the oven to 400 degrees F. Combine the peaches, brown sugar, ketchup, vinegar, soy sauce, garlic and ginger in a food processor or blender.
- Pat the pork dry with paper towels and sprinkle liberally with salt and pepper. Reserve half (about 2 cups) of the peach BBQ sauce and set aside. Transfer the pork, fat-side up, to a rack over a heavy-bottomed roasting pan and brush the rest of the sauce all over the pork. Add the stock to the bottom of the roasting pan.
- Roast the pork until a meat thermometer inserted into the thickest part reads 140 degrees F, about 1 hour.
- For the smashed potatoes:.
- Meanwhile, place the potatoes in large pot and cover with salted cold water. The potatoes will soak up that salt like pasta and it will make a big difference in flavor. Cover and bring to a boil and cook until fork-tender, 20 to 30 minutes. Drain the potatoes, and return them to the same pot, allowing them to dry. Heat the half-and-half and butter in a small saucepot over low heat. Add the mixture to the potatoes along with the cream cheese and sprinkle with salt and pepper. Smash the potatoes with a potato masher and set aside, keeping warm until ready to serve.
- For serving the pork:.
- Transfer the pork to a baking sheet to rest for 10 minutes, and then thinly slice half of the loin. Store and reserve the other half for leftovers.
- Remove the rack from the roasting pan and place on the stove over medium-high heat. Whisk in the reserved BBQ sauce and scrape the bottom of the pan to incorporate the browned sauce. Cook until slightly reduced and thickened, about 10 minutes.
- Serve the sliced pork with the reduced peach BBQ sauce and the smashed potatoes.

- Preheat oven to 375°F. Sprinkle pork with 2 teaspoons rosemary, salt, and pepper. Heat oil in heavy large ovenproof skillet over medium-high heat. Add pork (cut to fit, if necessary) and sauté until brown, turning occasionally, about 10 minutes. Using tongs, transfer pork to plate. Add shallots to skillet and sauté until brown, about 4 minutes. Add apples, kumquats, and cranberries; stir until fruit mixture is heated through, about 1 minute. Add broth, wine, and remaining 1/2 teaspoon rosemary. Boil 1 minute. - Preheat oven to 400 degrees F (200 degrees C). Generously season pork tenderloin with salt and black pepper.
- Heat oil in a large, oven-proof skillet over medium-high heat. Cook tenderloin until browned on all sides, 2 to 4 minutes per side. Transfer tenderloin to a plate.
- Saute onion with a pinch of salt in the same skillet until just softening, 3 to 5 minutes. Add shallots, reduce heat to medium, and cook and stir until shallots and onion are golden brown and caramelized, about 10 minutes.
- Stir thyme into onion mixture; place tenderloin over onion mixture, and set plum quarters, skin-side down, around pork tenderloin. Transfer skillet to preheated oven.
- Cook until pork is slightly pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer pork and plums to a plate.
- Place skillet over medium-high heat and pour water and balsamic vinegar into onion mixture. Bring mixture to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook and stir until liquid is reduced by half, 5 to 10 minutes; remove from heat. Whisk butter into mixture until melted and sauce is shiny. Pour sauce over pork and plums.

- In a skillet, combine the first 12 ingredients; saute until the vegetables are tender. Untie roast and separate. Randomly cut 20 deep slits, 1 in. wide, on inside surface of roast. Fill slits with some of the vegetable mixture; retie roast. Place on a rack in a shallow baking pan. Spread remaining vegetable mixture over the roast. - Preheat oven to 375 degrees. Season pork loin with salt and pepper. Tuck sage leaves under kitchen twine along the length of the pork loin.
- Heat olive oil in a large cast-iron skillet over medium-high heat until hot but not smoking. Add pork, and sear until golden brown on all sides, including ends, 10 to 15 minutes. Wrap pork loin in parchment paper, tucking ends under to seal completely. Place in skillet, and transfer to oven. Roast until an instant-read thermometer inserted into the center registers 150 degrees. 40 to 50 minutes. Remove pork loin from parchment paper, and transfer to a serving platter. Let rest for 10 minutes before removing twine and slicing into 1/2-inch-thick slices.
- Place skillet over medium heat, and add cider and stock. Cook, stirring with a wooden spoon to loosen any browned bits on the bottom of the pan. Add any accumulated juices from bottom of serving platter. Continue to cook until liquid is syrupy and reduced to about 1/3 cup. Add butter, stirring until melted. Drizzle over pork, garnish with sage leaves, and serve.
