- In a small bowl, combine the wafer crumbs, sugar and butter; press onto the bottom of an 8-in. square dish coated with cooking spray. Cover and refrigerate. , In a large saucepan, combine the pudding mixes and milk until smooth. Bring to a boil, stirring constantly. Remove from the heat; cool slightly. , Spread half of the pudding over crust. Stir cream cheese into remaining pudding until smooth; gently spread over pudding layer. Cover and refrigerate for at least 2 hours or until set. , Spread whipped topping over dessert. Sprinkle with pecans. Cut into squares.

- In a small heavy saucepan, combine egg and lemonade concentrate. Cook and stir over low heat until mixture is thickened and reaches 160°, 8-10 minutes. Cool to room temperature. Stir in lemon peel and vanilla. , In a small bowl, beat cream cheese and lemon mixture until blended. Spoon into 2 dessert dishes. Refrigerate until chilled.

VANILLA CREAM DELIGHT
Though this delicious sauce is made in minutes, it should always be served chilled. This versatile dessert may be enjoyed over cake, ice cream, fresh fruit or berries.

Steps:
- Whisk eggs lightly in medium bowl; set aside.
- Combine sugar and cornstarch in medium saucepan. Gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens slightly. Remove from heat.
- Whisk about one-third of hot mixture slowly into eggs. Return egg mixture to saucepan. Cook and stir over low heat just until mixture thickens, about 1 minute. Remove from heat; stir in vanilla.
- Let cool briefly, then stir. Cover surface completely with plastic wrap. Cool to room temperature, then chill in refrigerator, covered, until serving time.
- Makes approximately 1 ¾ cups (425 mL), or 7x ¼ cups (60 mL each).

ANGEL FOOD CREAM DELIGHT
This is an old standby for me and I'm planning to make it again for Easter dessert. Angel food cake filled with vanilla pudding, crushed pineapple, strawberries, whipping cream and chopped pecans. Prep time will vary if you make your own cake - mine includes that time. From Soupcon I

Steps:
- Cut off top of cake 1 inch down from top. Scooping carefully, make a tunnel in bottom part of cake, 1 inch from sides and bottom.
- Mix dry pudding mix and pineapple (including juice) and let stand.
- Whip 1 cup of cream, add nuts, sliced berries and pineapple mixture, folding completely.
- Sprinkle rum around inside cake tunnel and cake top,.
- Fill tunnel with cream mixture and replace top on cake, pressing gently to seal.
- Whip remaning cream and add remainder of filling that didn't fit into the cake. (Hopefully you have some left!)
- Frost cake and decorate with whole berries and pecans.
LEMON CREAM DELIGHT
From my Great Aunt's collection. She clipped this one from the Chicago Tribune, where it had won the weekly "Favorite Recipe" prize of $10. This is different from the other lemon delight recipes in that is contains no pudding mix or gelatin - this one is made with sweetened condensed milk and contains nuts & coconut.

Steps:
- Combine nuts and coconut in a 9" square baking pan and toast for 3-5 minutes in a preheated 350 F (watch carefully so they do not burn); set aside to cool.
- Cut margarine into flour and brown sugar using two knives (or a pastry blender) until mixture resembles crumbs.
- Stir in just 1/3 cup of the nut& coconut mixture; save the rest for topping later.
- Press dough into the bottom of a buttered 9" square baking pan and bake at 350 F for 15 minutes; let cool.
- Fold powdered sugar and vanilla into the whipped cream.
- Combine milk, lemon juice, and lemon zest; portion out 1/3 of the whipped cream mixture and gently combine with the milk mixture.
- Spread this mixture into the crust and let chill 15 minutes.
- Spread remaining whipped cream over the first layer and sprinkle the remaining nuts& coconut over all.
- Chill, covered.
- Cut into 9 squares to serve.

This recipe is very easy and cool. It requires very little baking. The longer it sits, the better it gets--if you can keep from eating it!

- Preheat oven to 350 degrees F (175 degrees C). In a 7x11 inch baking dish, combine flour, melted butter and half of pecans. Spread mixture evenly and bake 25 minutes, or until golden brown. Let cool completely.
- In medium bowl, cream together cream cheese and confectioners' sugar until smooth. Spread over cooled crust. Chill 30 minutes in refrigerator.
- Spread lemon pie filling over chilled dessert. Spread whipped topping over lemon filling, and top with remaining pecans. Refrigerate until serving.

- Preheat the oven to 350 degrees F (175 degrees F). In a medium bowl, stir together the flour, 1/2 cup pecans and melted butter or margarine. Press into the bottom of a 9x13 inch baking dish. Bake for 15 minutes in the preheated oven, then chill until cold.
- In a medium bowl, mix together the cream cheese and confectioners' sugar until smooth. Stir in the whipped topping. Drop spoonfuls onto the chilled crust, and spread evenly. Return to the refrigerator while you prepare the next layer.
- In a medium bowl, mix together the pudding mixes and milk. Yes this is half as much milk as the package states. Spread over the cream cheese layer. Chill until set.
- Spread remaining whipped topping over the top, and garnish with chopped pecans.
