12 ounce Evaporated Milk
1 cup Splenda
2 tbsp Butter
1/2 tsp Guar Gum

Steps:

  • Whisk together the evaporated milk with the sugar alternative. Then heat this mixture on low-medium heat on the stove, stirring continually until it starts to bubble.
  • Reduce the heat to low and allow to simmer. Skim off layers as needed.
  • Remove from heat and stir in the butter .However, if your desired thickness has not been reached in an hour, you can stir in the Guar Gum just before you sir in the butter

1/4 cup butter
3/4 cup granulated sweetener of choice (* See notes)
1/2 teaspoon vanilla extract (optional)

Steps:

  • Add all your ingredients into a small saucepan.
  • On medium heat, bring the mixture to a boil. Stir regularly, until it begins to simmer. Once it begins to simmer, reduce the heat to very low. Let the condensed milk simmer for around 45 minutes.
  • Remove from the heat and allow it to cool down completely. Once cool, transfer to a glass jar or container and refrigerate.

⅛ t Xanthan Gum
⅛ t Guar Gum

2 T Cold Butter

Steps:

  • Whisk and begin heating heavy cream, sweetener and both gums. Cook very slowly, whisking occasionally until reduced and thickened. This should take about 12-13 minutes or so. 2/3 c splenda
3 Tbsp butter, melted
few drops of vanilla

Steps:

  • 1. Add the liquids first, then the powders, cover and blend on high speed for 30 seconds or until smooth. Remove from the blender. Use in a recipe immediately or store in a covered container in the refrigerator
  • 2. Tips: A food processor may also be used to blend the ingredients.
  • 3. I've used this in most pies that called for a can of sweetened condensed milk and it worked fine. Works particularly well for Key Lime Pies.

Steps:

  • 1. In microwave safe mixing bowl, combine dry milk and Splenda blend
  • 2. Add the water
  • 3. Mix well to combine using a wire whip.
  • 4. Microwave on high for 45-60sec or till mixture is hot but not boiling.
  • 5. Place bowl on counter and mix well .
  • 6. Let set 5 mins .
  • 7. Stir,cover,and refrigerate for at least 2 hrs.
  • 8. Use in any recipe that calls for a can of sweetened condensed milk. . This will keep for up to two weeks in refrigerator if properly covered.

  • In a medium saucepan add milk and sugar alternative together and simmer over medium heat. Stir constantly and when the milk shows small bubbles lower the heat to simmer.
  • Continue to simmer until milk reduces and begins to thicken (this can take up to 1 1/2 hours). Skim the top of the milk if a layer forms.
  • To thicken with guar gum, in a small bowl quickly whisk together guar with a couple of tablespoons of the cooled milk. Add it to the mix and immediately whisk in.
  • Once the desired thickness is achieved remove the pan from the heat and whisk in the butter and vanilla extract. Cool and store in the refrigerator.
