Thank goodness avocados contain omega-3's! Eating guacamole, it's *practically* going to the gym. That's a joke, people. It's just really delicious, and we all can dream.

4 avocados, ripe
1 tablespoon lime juice
1/2 teaspoon kosher salt
1/3 cup red onion, finely chopped
1/4 cilantro leaf, well washed, finely chopped
1/4 jalapeno pepper, finely chopped, more to taste
1 (13 ounce) bag corn tortilla chips, for serving

Steps:

  • Using a sharp knife and protecting your hands with a kitchen towel, remove the pits from the avocados. Peel, then and chop avocados. In a large bowl, combine chopped avocados and lime juice. Toss until evenly coated. Add salt and mash avocado with two forks until the texture of lumpy mashed potatoes.
  • Stir in onion, cilantro, and peppers. Taste, and add more salt if desired. Serve with tortilla chips.
  • Serve immediately. Or to refrigerate, place in a bowl and press plastic wrap directly on top of the entire surface of the guacamole so no part is exposed to air. Serve within one day of making.

I got this off the website "Chipotle Fan.com". It's suppose to be the guacamole from the restaurant Chipotle. I haven't made it yet, but can't wait! I love Chipotle and their guac so it should be yummy.

2 Hass avocadoes
1/2 of a jalapeno pepper, seeded, and minced
1/4 of a red onion, finely chopped
2 tablespoons cilantro, finely chopped
1/4 of a lime, juiced
1/4 teaspoon salt

Steps:

  • Combine all of the ingredients into a bowl, and mash together until smooth.
  • Add additional lime juice or salt to taste.
  • For extra spicy guacamole, you can leave in the jalapeno seeds!
