2 tsp. olive oil
1 lime
1 small onion, chopped
1 medium red pepper, chopped
1 tsp. ground cumin
1 (15 to 19 oz.) can black beans, rinsed and drained
2 tbsp. chopped fresh cilantro leaves

Steps:

  • Sprinkle shrimp with 1/4 teaspoon salt and 1/8 teaspoon coarsely ground black pepper. In 12-inch nonstick skillet, heat 1 teaspoon oil on medium 1 minute. Add shrimp and cook about 6 minutes or until shrimp turn opaque throughout, stirring frequently.
  • Meanwhile, from lime, grate 1 teaspoon peel and squeeze 2 tablespoons juice; set aside.
  • Transfer shrimp to small bowl; cover with foil to keep warm. In same skillet, heat remaining 1 teaspoon oil on medium 1 minute. Add onion and red pepper, and cook 8 minutes or until tender. Stir in cumin; cook 1 minute. Add black beans, lime peel and juice, 1/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper. Cook 3 minutes or until heated through. Spoon black bean mixture onto 4 dinner plates. Top with shrimp and any liquid in bowl; sprinkle with chopped cilantro.

1 small clove garlic, cut into thin slices
8 ounces calamari cut into rings
8 ounces (net) peeled and deveined shrimp, cut in half, along the vein line
1/2 cup cooked Great Northern beans (if canned, get from health food store)
2 to 3 tablespoons sherry wine vinegar
Salt and freshly ground black pepper
2 (4-ounce) cans smoked mussels
2 navel oranges, cut into supremes
4 cups mixed greens such as frisee, bibb, red leaf lettuce washed, dried and torn into pieces lightly dressed with olive oil and sherry wine vinegar

Steps:

  • Heat the olive oil in a skillet. Add the garlic, calamari and shrimp and saute for 1 minute. Add the beans and saute for a minute. Add the vinegar and immediately remove the skillet from the heat and season to taste with salt and pepper.
  • Transfer the mixture to a bowl and add the smoked mussels and oranges and toss. Set on a bed of mixed greens and serve at room temperature.

1 teaspoon olive oil
1 medium onion, peeled and diced
1 cup Great Northern beans, soaked overnight and drained
7 cups water
1 medium-size ancho chili
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste
2 teaspoons chopped cilantro
1 large clove garlic, peeled and minced
2 tablespoons fresh lime juice
3 tablespoons olive oil
1/8 teaspoon salt
Freshly ground pepper to taste
1/2 cup sesame seeds
1/4 cup cumin seeds
1/2 teaspoon salt, plus more to taste
Olive oil spray
1 pound large shrimp, peeled and deveined
2 egg whites, lightly beaten
1 lime, halved

Steps:

  • To make the beans, heat the olive oil in a large saucepan over medium heat. Add the onion and cook until soft, about 5 minutes. Add the beans and water and bring to a boil. Reduce heat so the liquid simmers and cook until the beans are tender, about 1 hour. Drain and season with the salt and pepper to taste.
  • Meanwhile, place the chili in a saucepan and cover with water. Simmer until the chili is soft, about 5 minutes. Stem and seed the chili. Cut into small dice and set aside.
  • To make the dressing, whisk together the garlic, lime juice, olive oil, salt and pepper. Set aside.
  • To make the shrimp, heat a small skillet over medium heat. Add sesame seeds and shake pan until seeds are toasted, about 20 seconds. Place in a bowl. Place cumin seeds in the skillet and toast for about 15 seconds. Place in a spice grinder and pulse until cracked but not ground. Stir together sesame and cumin seeds and 1/2 teaspoon salt.
  • Preheat broiler. Spray a baking sheet with the olive oil. One at a time, dip the shrimp into the egg whites and then coat with the sesame seed mixture. Place on the prepared baking sheet. Broil the shrimp until cooked through and nicely browned, about 3 minutes per side. Season with additional salt and squeeze the lime juice over the shrimp.
  • Place the warm beans in a large bowl. Stir in the chili and toss with the vinaigrette. Season with additional salt if needed. Divide the salad among 4 plates and top with shrimp. Garnish with the cilantro and serve.

2 lemons, juiced
2 heads butter lettuce

3 whole cloves
1/2 small onion, peeled
3 cloves garlic, peeled
1 bay leaf
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
Kosher salt and freshly ground black pepper to taste
2 shallots, peeled and finely chopped
1/2 cup sliced, pitted black olives
1/2 yellow bell pepper, finely diced
1/4 cup chopped parsley
4 teaspoons chopped thyme leaves
2 tablespoons basil-flavored oil or extra-virgin olive oil
1 1/4 pounds rock shrimp, cleaned and shelled
2 cloves garlic, peeled and thinly sliced
Chopped basil leaves for garnish

Steps:

  • To make the bean salad, combine the beans and 4 cups water in a large saucepan and bring to a boil. Boil 1 minute, remove from the heat and set aside for 1 hour. Drain the beans and return them to the pan. Stick the cloves into the onion and add it to the pan along with the garlic, bay leaf and 4 more cups water. Place the pan over high heat, bring to a boil, adjust the heat and simmer, covered, until the beans are tender but not mushy, about 40 minutes to 1 hour.
  • Drain, discard the onion, garlic and bay leaf and transfer the beans to a large bowl. Whisk together the oil, lemon juice, salt, pepper and shallots and pour over the hot beans. Toss to coat. Add the olives, bell pepper, parsley and thyme and toss to coat. Set aside and keep warm.
  • To make the shrimp, in a large skillet, heat the basil oil over high heat until very hot. Add the shrimp, garlic and salt and pepper and cook, tossing, until the shrimp are just cooked through, about 3 to 4 minutes. (Do not overcook.)
  • To serve, place a generous amount of warm bean salad in the middle of each of 4 plates. Surround the salad with shrimp. Garnish with basil and serve immediately.
