1 teaspoon freshly grated nutmeg
1 1/2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons chopped fresh sage
2 1-pound pork tenderloins, trimmed
Kosher salt and freshly ground pepper
1 small butternut squash, peeled and cut into 1-inch pieces
2 cooking apples, peeled and cut into 1/2-inch pieces
1 medium red onion, cut into 1/2-inch pieces
1 tablespoon honey mustard
1 sprig fresh rosemary
5 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 425 degrees. Mix the nutmeg, 1 teaspoon garlic and the sage in a bowl. Rub over the pork and season with salt and pepper.
  • Toss the squash, apples, onion, the remaining 1/2 teaspoon garlic, the honey mustard, and salt and pepper to taste in a bowl. Spread out on a long sheet of foil. Add the rosemary and 3 tablespoons butter, then bring the ends of the foil together and crimp to seal into a packet. Place the packet on a baking sheet and roast on the upper rack until tender, 30 to 35 minutes. Poke holes in the packet to release steam.
  • Meanwhile, heat a large ovenproof skillet over medium-high heat. Add the remaining 2 tablespoons butter, then brown the pork on all sides, about 8 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan, then transfer the skillet to the lower oven rack and roast until a thermometer registers 150, about 15 minutes. Transfer the meat to a cutting board and let rest 5 minutes.
  • Return the skillet to medium heat. Add 1/2 cup water, scrape up any browned bits and simmer about 2 minutes. Slice the pork and drizzle with the pan juices. Serve with the squash and apples.

Steps:

  • Preheat oven to 400 F. Brush the pork with olive oil, sprinkle Italian seasoning and season to taste. Place the pork tenderloin in an oven-proof pan or baking dish. Add the sliced apple, pear, onion and butternut squash in a bowl; mix with a little bit of olive oil and garlic. Season to taste. Place the fruit and vegetables around the pork. Bake in the oven 30 to 35 minutes or until pork reaches 145 F and squash is tender.

3 lb squash (1 large or 2 small)
2 lb apples (4 large)
2 tbsp olive oil
1 tsp salt
½ tsp pepper
4 sprigs thyme
2 lb pork tenderloin (cut into 1-pound pieces)
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
½ tsp cinnamon
½ cup apple cider
1 tbsp Dijon mustard
1 tbsp butter

Steps:

  • Preheat oven to 425°F.
  • Peel the squash, slice in half lengthwise and remove the seeds. Cut into 1/2-inch slices and place in a roasting pan. Drizzle with olive oil, salt, and pepper. Mix to evenly coat the squash with the oil and spread in an even layer. Add the thyme sprigs. Roast in the preheated oven until the squash just begins to become tender, 20 minutes.
  • While the squash is roasting, prepare the tenderloin. In a small bowl, combine the salt, pepper, garlic powder, onion powder, and cinnamon. Stir to combine and sprinkle all over the dry tenderloins. Rub into the meat, picking up any fallen bits.
  • In a large 12-inch skillet, heat the olive oil over medium-high. Once the oil is shimmering and hot, sear the tenderloin until browned all around, about 3-5 minutes on all four sides. Remove from heat and set aside.
  • Cut apples into quarters and remove the core. After removing the core, cut each quarter in half again.
  • When the squash is just beginning to become tender, remove from the oven and add the apples. Stir to combine and spread in even layer. Add seared tenderloin on top of squash and apples, adding any juice that gathered under the meat.
  • Continue to roast until the apples are tender and the pork registers 145°F, about 20 minutes. Remove from oven and let rest for 10 minutes.
  • While resting, prepare pan sauce. Heat skillet over medium-high for 2 minutes. Add apple cider and bring to a boil. Turn down to a simmer and scrape the browned bits from the bottom. When the apple cider is reduced by half, about 3 minutes, turn off the heat and whisk in the Dijon mustard and butter. Whisk until smooth.
  • Cut pork and pour the pan sauce over the cut pieces. Serve with the squash and apples.

1 (2 lb) acorn squash, quartered, seeded and sliced 1/2 inch thick, skin on (see note)
8 garlic cloves, peeled
1/2 teaspoon dried rosemary
1 1/2 teaspoons coarse salt
1/4 teaspoon ground pepper
2 (1 lb) pork tenderloin
4 teaspoons olive oil
2 tablespoons hoisin sauce

Steps:

  • Preheat over to 375 degrees.
  • Scatter squash and garlic in a lrge roasting pan.
  • Mix rosemary, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; rub into pork.
  • Place in pan with vegetables; drizzle with oil.
  • Roast 25 minutes.
  • Brush pork with hoisin sauce.
  • Continue roasting, about 15 minutes, until pork reaches and internal temperature of 140 degrees.
  • Let meat stand 5 minutes before slicing into 1 1/2 inch tenderloins.
  • Serve with squash, garlic, and any pan juices.
  • NOTE: The recipe says to leave the skin on the squash. Perhaps this is so the squash will not fall apart during the cooking process. I did cook it as specified but took it off prior to eating.

2 medium whole pork tenderloins (3/4 # each)
1 tsp olive oil
1/4 tsp ground black pepper
3 large granny smith apples, cored and thickly sliced
1 medium butternut squash (1 1/2 #'s) peeled, seeded and cut into cubes
2 Tbsp packed brown sugar
1/2 tsp ground cinnamon
1/2 c onion, chopped
1 3/4 c chicken stock
2 tsp all purpose flour

Steps:

  • 1. Heat oven to 425^. Spray a roasting pan with cooking spray.
  • 2. Brush the pork with the oil and season with the pepper. Place pork in the roaster. In a large bowl stir the apple, squash, brown sugar, cinnamon, onion and 1/2 cup of the stock. Add the apple mixture to the pan.
  • 3. Roast for 25 minutes or until the pork is cooked through, stirring the apple/squash mixture once during roasting. Remove the pork from the pan and keep it warm. Roast the apple mixture for 15 minutes or until it's browned. Remove the apple/squash mixture from the pan.
  • 4. Stir the remaining stock and flour in a small bowl until the mixture is smooth. Stir the stock mixture in the pan. Cook and stir over medium high heat until the mixture boils and thickens, scraping up the browned bits from the bottom of the pan. Serve the gravy mixture with the pork and apple/squash mixture. Scrumptious!!!

Salt and black pepper
2 teaspoons chopped fresh thyme
1 teaspoon olive oil
2 green apples, each cut crosswise, or horizontally, into 3 rounds
1/2 cup barley
1/2 cup white wine or apple cider

Steps:

  • Preheat the oven to 400°F. Pat the pork dry with a paper towel. Season with salt and pepper and sprinkle with the thyme.
  • Warm the oil in a large ovenproof skillet over medium- high heat. Sear the pork until browned on all sides, about 8 minutes. In the last 2 minutes of cooking, add the apples, cut side down.
  • Turn the apples over and transfer the skillet to the oven. Roast for 12 minutes, until the internal temperature of the pork reaches 145°F for medium.
  • Meanwhile, cook the barley according to the package directions. Keep warm.
  • Transfer the pork to a cutting board; tent with aluminum foil to keep warm. Remove the apples to a serving platter.

1 tablespoon Dijon mustard

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.

1 (1 1/4 pound) pork tenderloin, trimmed
1 ½ teaspoons kosher salt
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 teaspoons vegetable oil
1 tablespoon Dijon mustard
2 teaspoons maple syrup
¼ teaspoon ground cumin
⅓ cup finely chopped pumpkin seeds
1 cup chicken broth, divided
2 tablespoons rice vinegar
2 teaspoons balsamic vinegar
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Season pork with salt, freshly ground black pepper, and cayenne.
  • Heat vegetable oil in an oven-proof pan over high heat. Sear pork in the hot oil until well-browned on all sides. Turn off the heat, and transfer to a plate.
  • Mix mustard, maple syrup, and cumin together in a small bowl. Use a spoon to spread mustard mixture all over the surface of the pork, getting as thick a layer as possible.
  • Transfer the pumpkin seeds on top of the mustard mixture in a thick layer, and lightly press down into the surface. Press pumpkin seeds into the sides as well.
  • Transfer pork back into the pan and add 1/2 cup of broth.
  • Roast in the preheated oven until pork is slightly pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork to a plate and cover loosely with foil.
  • Place the same pan back over medium-high heat and add remaining 1/2 cup of broth, rice vinegar, and balsamic vinegar. Stir with a spoon and bring to a boil.
  • Cook until liquid has reduced by half, about 1 minute. Turn off the heat and stir in butter. Taste for seasoning and serve over sliced pork.
