- In a large bowl, add beans, corn, tomatoes, bell pepper, onion, garlic, and cilantro. Add olive oil, red wine vinegar, and lime juice, and salt and pepper to taste (I like 1/2 teaspoon salt, and 1/4 teaspoon pepper). Stir to combine.
- Cover and chill until serving time. Serve with tortilla chips or as an accompaniment to grilled meats.

- Preheat the oven to 450 degrees F (230 degrees C).
- Slice corn off of cobs and toss with olive oil. Spread across a rimmed baking sheet.
- Roast in the preheated oven, checking frequently, for 20 to 25 minutes.
- Meanwhile, combine tomatoes, black beans, onion, jalapeno peppers, cilantro, lime juice, and garlic in a large bowl. Stir to combine.
- Remove corn from the oven and stir into salsa. Cover and refrigerate for at least 2 hours before serving.

ROASTED VEGETABLE BLACK BEAN SALSA
It is summer time and I wanted to use some of the garden vegetables. I found a black bean salsa recipe (#60617) on recipezaar. It sounded good, but I made roasted potatoes the night before and I had zucchini and yellow squash, onions and a green pepper at home, so I combined the one recipe with the other. Oh did it turn out well. It tasted better that most salsas that I get at restaurants. It isn't that spicy, but very flavorful and perfect for the summer time. It is great with tortilla chips and beer. This recipe can probably be halved easily.

- Combine corn, green pepper, squash and onion in a baking pan.
- Drizzle olive oil over vegetables and season with salt and pepper, toss to coat.
- Roast in 425 degree F oven stirring once until tender and lightly browned, about 25 minutes.
- Allow to cool.
- Combine black beans, tomatoes, spices and lime juice in a large bowl.
- Add roasted vegetables.

- To roast the corn, thaw frozen corn and toss with 2 tablespoons extra virgin olive oil. Roast in a 450 degree oven for about 20 minutes, with some kernels becoming light golden brown. Remove from oven and cool. In a large bowl, combine all of the ingredients with the roasted corn.
- For the dressing, combine all dressing incredients and whisk together. Toss above salsa mixture with dressing. To prevent the avocados from discoloring dip in dressing mixture immediately after chopping.

- Preheat the oven to 400 degrees. Rinse the vegetables (tomatoes, onion, garlic, bell pepper, poblano, jalapeno) and cut into large chunks. Place vegetables on a baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss the vegetables to coat. Roast the vegetables in the oven for about 45 minutes or until the skins are bubbled up and brown (see photos below).
- Remove the vegetables from the oven. Let them cool enough to handle then remove the skin and seeds from the poblanos and bell peppers. Place all of the roasted vegetables, any juice from the baking sheet and a handful of cilantro into a food processor or blender. Process until you have a fairly smooth, salsa-like consistency.
- Combine the pureed vegetables and the cooked beans in a large pot. Add 1 Tbsp of bouillion (vegetable or chicken) and 3 cups of water. Add the juice from one lime, cumin and salt to taste (I added 1 tsp of salt). Heat the mixture through (about 10-15 minutes).
- Transfer about 2/3 of the soup to the food processor or blender and process again until smooth. Add it back to the pot and stir it into the larger chunks that were left behind. Give the soup a final taste and adjust the seasoning as needed (salt, pepper, hot sauce, cumin, cayenne, whatever you like).
