Top bite-size pretzels with melted chocolate that's bursting with fluffy marshmallows and buttery cashews.

6 oz milk chocolate, chopped
2 oz bittersweet baking chocolate or mildly sweet dark chocolate, chopped
1/3 cup coarsely chopped cashews
1/3 cup miniature marshmallows
24 lattice pretzels or small pretzel twists

Steps:

  • Line large cookie sheet with waxed paper or cooking parchment paper. In medium microwavable bowl, microwave chocolates uncovered on High about 1 minute or until chocolates can be stirred smooth. Fold in cashews and marshmallows.
  • Arrange pretzels on cookie sheet 2 inches apart. Spoon heaping teaspoon chocolate onto each pretzel. Let stand in cool place until set, about 15 minutes (do not refrigerate).

8 oz/230 g ((1 and 1/3 cups) chopped bittersweet or semi-sweet chocolate)
½ cup (1 stick/115 g) unsalted butter
1/2 teaspoon vanilla extract
1 and ½ cups miniature marshmallows ((if you only have large marshmallows, cut them into small pieces))
¾ cup (75 g) hazelnuts (or use your favorite - salted peanuts, walnuts, almonds, pecans)
¾ cup (75 g) digestive biscuits or cookies (any kind)

Steps:

  • Line an 8x8-inch baking pan with foil or parchment paper. Set aside.
  • In a medium heatproof bowl, combine chocolate and butter. Heat in the microwave for 30 seconds. Heat more, at 20-second intervals, stirring in between each interval, until melted. Stir in vanilla extract. Fold in marshmallows, nuts, and cookies.
  • Spread mixture into prepared pan. Refrigerate for at least 2 hours, or until set. Lift from pan using the foil or parchment paper, and cut into squares. Keep in the fridge. I like to take it out of the fridge 15 minutes before serving.

  • In a medium saucepan over medium low heat, melt the chocolate chips and the Hershey's chocolate syrup. Stir constantly until all of the chips are melted and mixture is smooth.Alternatively, place the chocolate chips and syrup in a microwave safe bowl and microwave on high for 30 seconds. Stir and microwave in 30 second intervals and stirring between each one until the mixture is melted and smooth.
  • Combine the marshmallows and pretzels in a large bowl and pour the chocolate mixture on top. Use a rubber spatula to mix all of the ingredients together until everything is coated in chocolate.
  • Using a melon baller or large spoon, scoop 24 clusters of the rocky road mixture onto a wax paper lined (or a sil-pat like I have here)making sure the clusters don't touch. Place the pan in the fridge for at least 30 minutes or until the candy is set.
