Steps:
- In a large bowl, cream together the butter, brown sugar and egg until well blended. Stir in the molasses. Combine the flour, baking soda, cinnamon and ginger; stir into the molasses mixture. Cover the dough and chill for at least 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the prepared cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

OLD-FASHIONED MOLASSES COOKIES
Steps:
- Combine butter, brown sugar, shortening, molasses and egg in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking soda, cinnamon, ginger, cloves and salt; beat at low speed until well mixed.
- Divide dough in half; wrap each half in plastic food wrap. Refrigerate 1-2 hours or until firm.
- Heat oven to 375°F.
- Working with one-half of dough at a time, shape dough into 1 1/2-inch balls. Roll balls in granulated sugar. Place, 2 inches apart, onto ungreased cookie sheets. Flatten balls to 2 1/2-inch diameter with bottom of glass. Bake 8-11 minutes or until set.

SOFT MOLASSES CUTOUT COOKIES
I received this recipe years ago, when my husband and I managed a retirement home. We'd always put out homemade cookies for morning and afternoon coffee, and these were the first to disappear.

- In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses. Combine the flour, baking soda, ginger, cinnamon and salt; add to the creamed mixture alternately with water, beating well after each addition. Cover and refrigerate for 3 hours or until easy to handle. , On a lightly floured surface, roll out to 1/4-in. thickness. Cut with 2-1/2-in. cookie cutters dipped in flour. Place 1 in. apart on greased baking sheets. , Bake at 350° for 8-10 minutes or until edges are firm. Remove to wire racks to cool. Frost or dust with confectioners' sugar if desired.

- In a large bowl, combine the oil, sugar and molasses. Add egg; mix well. Combine the flour, baking soda, cinnamon, salt, cloves and ginger; add to sugar mixture and mix well. Cover and refrigerate for 4 hours or until easy to handle., Shape dough into 1-in. balls; roll in additional sugar. Place 3 in. apart on greased baking sheets. AUNT CLARA'S FILLED MOLASSES COOKIES
This old-fashioned filled molasses cookie is my great Aunt Clara's recipe which continues to be passed down through the family.

- Preheat oven to 375 degrees F (190 degrees C).
- Toss raisins and 1 teaspoon flour together in a saucepan until raisins are coated in flour. Stir 1/4 cup sugar, 1 teaspoon vanilla extract, and lemon juice into raisins. Pour 1 cup boiling water over raisin mixture; bring mixture to a boil. Cook, stirring constantly, until raisins start to break down and mixture thickens, 5 to 10 minutes. Remove from heat and cool to room temperature.
- Stir 2 3/4 cups flour, 3/4 cup sugar, and salt together in a bowl.
- Whisk melted shortening and molasses together in another bowl; stir in remaining vanilla extract. Dissolve baking soda in 1/3 cup boiling water. Stir soda water into molasses mixture until mixture foams and is well-combined. Stir flour mixture and molasses mixture together in a large bowl until a stiff dough forms.
- Divide dough into 2 balls; 1 dough ball for the bottom cookie rounds and 1 ball for the top cookie rounds. Cover 1 dough ball with a damp paper towel; roll remaining dough ball out to 1/8-inch thickness. Cut dough into rounds using the top of a glass or a round cookie cutter. Place these bottom rounds 2-inches apart on a baking sheet. Top each dough round with 1 tablespoon of raisin filling mixture.
- Roll out remaining dough ball to 1/8-inch thickness and cut into rounds using the same cutter. Moisten fingers slightly with water and carefully work each top round from the center outwards until each is about 1/4-inch larger around than the bottom round. Working from one edge, place top round over bottom round and filling, pressing firmly to seal the cookie. Lightly press down tops of cookies to settle filling in the pocket.
- Bake in the preheated oven until cookie is set, 10 to 12 minutes. Cool briefly on the baking sheet before transferring to a wire rack to cool completely.

- In large bowl, mix 1 1/2 cups granulated sugar, the shortening, molasses and eggs until well blended. In small bowl, dissolve baking soda in water; stir into molasses mixture. Stir in remaining cookie ingredients until well blended. Cover and refrigerate at least 2 hours.
- Heat oven to 375°F. Lightly grease cookie sheet. On floured surface, roll dough 1/4 inch thick. Cut with floured 2 3/4-inch round cutter (or cut with clean food can with both ends removed, such as rectangular-shaped pork luncheon meat can). Place about 2 inches apart on cookie sheet.
- Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
- In 2-quart saucepan, sprinkle gelatin on cold water to soften; stir in 1 cup granulated sugar. Heat to a rolling boil; reduce heat. Simmer uncovered 10 minutes. In large bowl, place powdered sugar and hot gelatin mixture. Beat with electric mixer on medium speed about 2 minutes or until foamy. Add vanilla, baking powder and salt; beat on high speed 12 to 15 minutes or until soft peaks form. Frost bottoms of cookies with frosting. Let stand until frosting is dry, 2 to 3 hours, before storing.

JOHN'S ROLL-OUT MOLASSES COOKIES
A coworker of mine gave me this recipe. There isn't one exactly like it on Zaar, in that it uses allspice and has no eggs. It is a dense, spicy cookie that is rolled out and cut into shapes. Cooking time includes time to chill dough. I have halved the amounts in the original recipe because it made SO many cookies; hence the weird measurement for the shortening. It was originally 1/3 c. shortening, and this is the best I could come up with for getting half of that. Be sure not to roll them thinner than 1/4 - 1/2 inch (nor overbake) so that they keep their good, dense, kinda chewy texture.

- Mix together shortening, molasses and brown sugar. Stir in 1/4 cup cold water.
- Mix together the flour, salt and spices. Add to molasses mixture.
- Dissolve soda in 1.5 teaspoons cold water. Stir it into the above mixture.
- Gather up dough into a ball; on waxed paper, pat into a disk. Wrap up. Chill for at least an hour.
- Roll out between 1/4-inch and 1/2-inch thick. I thought 1/2-inch was a bit too thick, but it's up to you. Cut into shapes, specifically gingerbread men or bears. Gather up scraps, pat into a ball, reroll and cut into shapes, etc., until you have used most of your dough.
- On lightly greased or sprayed cookie sheets, bake at 350 degrees for 15-18 minutes.
- These swell a little during cooking, so be sure to leave some space between them on the cookie sheets. Also, they taste better the day after baking when the spices have had a chance to meld with each other.
ROLLED MOLASSES COOKIES

- If you want to use vegetable shortening instead of lard, increase the amount by 1/2 cup I have never done this.
- (I add cinnamon too).
- Cream lard, sugars; add eggs, salt, spices, and baking soda.
- Add molasses and beat well, add water slowly.
- Stir in enough flour to make a dough stiff enough to roll.
- (I chill dough for a few hours) Roll 1/4 inch thick (or thicker if you want cake-y cookies) and you may sprinkle with extra sugar.
- Cut cookies, place on ungreased cookie sheets, bake in a 400 oven for 8 to 10 minutes.
- They are done when you can press down with a finger and leave a dent.
- Cool on wire racks.
- I prefer to gauge doneness by looking at the underside of the cookie and seeing how brown it is.
- If you want a cake-y cookie, don't let the cookies get dark browned, you want them golden, dark tan.
- Baking time will vary with the size of your cookies too.
- Small ones take a lot less time to bake.

- Heat oven to 375 degrees. Line 2 baking sheets with silpats.
- Sift together flour, 1 cup of the sugar, baking soda, salt, ground ginger, and ground clove into a large mixing bowl.
- Add the shortening, egg, and molasses. Mix until smooth. Add oatmeal and stir until just incorporated.
- Using a 1-ounce ice cream scoop, scoop batter onto baking sheets, about 3 inches apart. In a small bowl, place 1/4 cup sugar. Dip the bottom of a glass in sugar and press down on each scoop of dough until it is about 1/4-inch thick, dipping the glass in sugar between each one. For your first dip, you may want to press the bottom of the glass onto a cookie. The moisture from the cookie will allow the sugar to stick to the glass.
- Bake until brown and crisp, about 12 minutes. Remove from the oven and transfer to a wire rack to cool.
