ROMAINE CLUB WRAP
Steps:
- Place a square of parchment paper on the kitchen counter and place three romaine lettuce leaves on the parchment, overlapping generously. Drizzle sriracha mayonnaise over the insides of the leaves and place 2 slices turkey on top of the mayonnaise. (The mayonnaise acts as the "glue" to hold the romaine together.) Top the turkey with 2 half slices Cheddar, 2 slices tomato and a slice of bacon.
- Use the parchment to assist in rolling it up like a sushi roll. Once the lettuce wrap is rolled, use the parchment to wrap it completely by folding in three corners and rolling up tight. Repeat with the remaining ingredients to make 3 more wraps.
TUNA LETTUCE WRAPS
These are a low-calorie, low-carb, but very tasty, light alternative to a tuna wrap sandwich! Try to choose larger leaves of lettuce with no tears or holes; lettuce leaves are replacing the tortilla in a traditional wrap sandwich. Cheese is optional, but even a little adds a lot of flavor.

- Combine tuna, mayonnaise, onion, salt, and pepper in a bowl.
- Lay lettuce leaves out. Divide tuna mixture among the leaves, placing it in the middle of each leaf. Sprinkle Cheddar cheese over the tuna. Roll leaves up to create wraps.

- Heat oil in a nonstick skillet over medium heat. Add garlic, celery, and red-pepper flakes; saute until celery is softened and golden, about 5 minutes.
- Add lettuce, pressing it down to fit. Season with salt and pepper. Cover; cook, tossing occasionally, until lettuce is completely wilted and liquid has evaporated, 10 to 12 minutes.
CHICKEN CAESAR WRAPS WITH CRISPY CHEESE
Steps:
- Coat the lettuce in some Dressing and reserve the remaining Dressing for serving on the side.
- To assemble a wrap: Lay a tortilla flat on a clean surface. Pile about 1 1/2 ounces dressed lettuce on the lower third of the tortilla. Top with 3 to 4 slices chicken (more or less, as desired) then sprinkle with the Parmesan crisps. Fold the wrap over the filling, tuck in the sides and continue to roll. Repeat with the remaining tortillas, lettuce, chicken and Parmesan crisps.
- Heat a drizzle of olive oil in a large skillet over medium-high heat and crisp the tortilla for a few minutes on both sides, or until golden. Repeat with the remaining wraps.
- Remove the wraps to a work surface. Cut in half on a bias and serve with additional Dressing for dipping.
- Whisk together the mayonnaise, lemon juice, Dijon mustard, Worcestershire and garlic in a mixing bowl or measuring cup. Slowly drizzle in the olive oil and whisk to emulsify. Stir in the Parmesan and season with salt and pepper. Adjust the consistency with a little water if it is too thick.
- Sprinkle the salt and pepper all over the outside and in the cavity of the chicken and rub into and underneath the skin. Place on a rack over a sheet pan and refrigerate, uncovered, for at least 6 hours or up to overnight. Allow the chicken to come to room temperature before cooking.
- Place an oven rack in the middle position. Preheat the oven to 425 degrees F.
- In a small bowl, combine the mayonnaise, garlic and Worcestershire, then schmear the mixture all over the chicken. Roast the chicken on a rack in a roasting pan until a thermometer inserted in the thickest part of the thigh (avoiding bone) registers 165 degrees F, begin checking at around 50 minutes. (If the skin gets too dark, tent with aluminum foil.) Allow to rest 30 minutes before carving. Carve the chicken into bite-sized pieces.
- In a medium bowl, add the cheese and cayenne pepper. Toss to combine. Spread the cheese evenly across the prepared baking sheet. Bake until the cheese is bubbling, crispy and golden brown, 18 to 20 minutes. Set aside to cool completely, then break up into shards.
SHRIMP LETTUCE WRAPS

- Melt butter in a large nonstick skillet over medium-high heat. Add bell pepper; cook for 2 minutes. Add shrimp and garlic and sprinkle with Greek seasoning. Cook until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Remove from the heat and stir in cherry tomatoes, cucumber, and olives.
- Serve shrimp mixture in romaine leaves and sprinkle with feta cheese.

ROMAINE HEARTS LETTUCE WRAPS
Steps:
- Blend garlic cloves, 1 tsp. salt, cilantro leaves, & pine nuts in a small food processor until you get a creamy texture. Transfer to a bowl & start adding oil while whisking. Bring to desired texture, adding the chicken stock if needed. Finish with salt and pepper to taste. Keep aside. Core and seed tomatoes and cut into strips. Slice green onions and avocado and set aside. Clean romaine and separate lettuce leaves. Mix the chicken with the cilantro pesto. Take a leaf of romaine & put some of the chicken mixture, add avocado slices, tomatoes, onions and top with cheese.

- Dice the meat into tiny pieces. Place the meat in a mixing bowl and add 2 tablespoons oil, ginger, garlic, red pepper flakes and 2 tablespoons soy sauce. Mix together in circular motion until well mixed. Let marinate in refrigerator for 4 hours.
- Mix together the citrus juices, soy, and hoisin sauce with a whisk. Reserve until needed. Clean the romaine lettuce, chopping off the stem, peeling each 'spear' and running under clean cold water. Reserve in refrigerator until ready to use. Chop scallions into rings and reserve chilled.
- Coat a very hot saute pan lightly with oil. Lay the meat around the saute pan being careful not to lay too many on top of each other. Sear the meat until crispy and golden brown, about 2 1/2 minutes. Once meat is brown, toss gently in pan and sear another 2 1/2 minutes. The pan will appear to "burn", but that is the carmelization and where all the flavor comes from.
- Add 1/2 of the citrus soy mixture to the saute pan and coat well. Let the sauce coat the meat until it is glazed, and thickens on the meat. Add more or less depending on how "wet" you want your mixture. Spoon meat onto a serving bowl. Wrap the chicken mixture in romaine lettuce and top with scallion rings. Serve and enjoy!
