MIXED GREENS WITH ROMANO CRISPS

Steps:
- Heat a nonstick skillet or griddle pan over medium high heat.
- Pile 1 tablespoonful of grated cheese in several spots on the hot pan, allowing about 1/2 inch between each pile. Cheese will melt, bubble, and form a cheesy lace. When the crisps turn light golden in color, remove them from pan carefully with a thin spatula. The cheese crisps will harden as they cool.
- Combine lettuces and fresh herbs, drizzle mixed greens with extra-virgin olive oil and balsamic vinegar, just enough to coat. Season with salt and pepper.
- Top dressed salad with crisps.
ROMANO GRITS
This recipe can be multiplied by 2, 3, 4. The leftovers can be cut into 2 inch squares, seared & served as polenta cakes. Posted for Cookgirl!

Steps:
- Place the water in a medium sauce pan over high heat.
- When the water boils reduce the heat to medium-high and slowly add the grits. Stir continuously while adding the grits.
- Add the salt and stir.
- Reduce the heat to medium and cook the grits for 12 minutes stirring to keep the grits from sticking to the bottom of the pan.
- Add the cheese and stir until well blended.
SOUTHERN GRITS
Hubby says these grits are fit for a Southern Tea Room. No higher compliment than that! It is not a mistake to use quick cooking grits, and cook them for almost half an hour. These grits have body!

Steps:
- In a small pot, bring water, milk, and salt to a boil.
- Slowly stir grits into boiling mixture.
- Stir continuously and thoroughly until grits are well mixed.
- Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring frequently.
- Add more water if necessary.
- Grits are done when they have the consistency of stiff cream of wheat.
- Stir in butter.
- Serve with additional butter on top of each portion, or serve with fruit or with a savory meal.

- On baking sheets, sprinkle 1 tablespoon Romano cheese into a 3-in. circle; repeat 15 times to make 16 crisps. Bake at 300° for 10-12 minutes or until golden brown.

- Melt 1 tablespoon butter in heavy large saucepan over medium-high heat. Add sausage and sauté until brown, about 3 minutes. Add 3 3/4 cups broth and bring to boil. Gradually whisk in grits. Reduce heat to medium and simmer until mixture is thick, stirring occasionally, about 8 minutes. Mix in more broth by 1/4 cupfuls to thin, if desired. Stir in remaining 3 tablespoons butter. Season grits to taste with salt and pepper and serve.
