These are truly world famous. I have made them for guests from England and the Netherlands as well as from Nova Scotia. I remember the first time I ever made them. I was a fairly newly wed when my husband asked me for pancakes. I very sweetly replied, " I can't make pancakes, I don't have any pancake mix." To which my husband answered, "Don't you have a cook book?" Thus begun my obsession of cooking things from scratch. ( I was 14 when I learned you could make a cake from scratch).

Number Of Ingredients 6

2 eggs
1 cup milk (I prefer buttermilk)
1 cup flour
1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Preheat griddle.
  • Beat eggs and milk together.
  • Add dry ingredients and beat well.
  • Pour on griddle.
  • Cook until bubbles appear and flip over.

1-1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 large eggs, room temperature
1/4 cup butter, melted
1 teaspoon vanilla extract
Optional: Mixed fresh berries, whipped cream, maple syrup and butter

Steps:

  • In a large bowl, whisk together the first 5 ingredients. In another bowl, whisk remaining ingredients; stir into dry ingredients just until moistened., Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with toppings as desired.

It's fall. It's time for hot cocoa, cozy blankets, and lazy Sundays spent watching movies. In honor of the season, this is a recipe I love for Sunday morning pumpkin pie pancakes. They're tasty, perfect for the season, and pretty healthy for you too! These are the best in town. Try them out and let me know what you think.

1 cup oats
1 cup cottage cheese
¾ cup egg whites
½ cup pumpkin puree
¼ cup skim milk
1 ½ teaspoons pumpkin pie spice
1 teaspoon honey
½ teaspoon ground cinnamon
cooking spray

Steps:

  • Blend oats, cottage cheese, egg whites, pumpkin puree, milk, pumpkin pie spice, honey, and cinnamon in blender until batter is smooth; pour into a bowl.
  • Heat a pan or skillet over medium heat; spray with cooking spray.
  • Scoop batter, about 1/4 cup per pancake, into the hot pan; cook until bubbles form and the edges are dry, about 2 minutes. Flip pancakes and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.

1 cup flour, plus
3 tablespoons flour
1 egg
1 cup buttermilk
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil

Steps:

  • Just toss it all in the blender or magic bullet and blend until smooth.
  • Cook on hot griddle.
  • Serve with maple syrup.
  • Eat. Yum!
  • I substitute 3/4 c fat free half and half plus 1/4 c water for the 1 c buttermilk.
