Steps:

  • Whisk together the ingredients in a small saucepan set over medium-low heat.
  • Bring to a gentle simmer then cook for a few minutes while stirring continuously until the sauce thickens.
  • Pour through a fine mesh strainer and transfer to a serving bowl or jar.
  • Serve warm or store covered in the fridge for up to 2 weeks.

¾ cup white sugar
1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.
  • Pour hot over ice cream or store in airtight containers in the refrigerator.

Whew! Talk about decadent! This is one of the most popular recipes I shared on my social media and after one taste you'll see why. You know I love anything cheesecake, so of course I knew that a brownie-cheesecake combo, with those famous chocolate sandwich cookies, would be a hit.

Nonstick cooking spray or shortening, for the pan
1/2 cup unsweetened cocoa powder, plus more for dusting the pan
1 cup all-purpose flour
1/4 teaspoon kosher salt
1 1/2 cups sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted
1 tablespoon canola oil
1 teaspoon vanilla extract
2 large eggs
3/4 cup mini chocolate chips
15 chocolate sandwich cookies (I like Oreo)
Three 8-ounce blocks cream cheese, at room temperature
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
12 chocolate sandwich cookies, coarsely chopped
Chocolate sauce, optional, for garnish

Steps:

  • Preheat the oven to 325 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray or shortening and dust with cocoa powder. Set aside.
  • Combine the flour, salt and cocoa powder in a medium bowl. Combine the sugar, melted butter, oil, vanilla and eggs in a large bowl. Add the flour mixture to the butter mixture and stir until combined. Stir in the chocolate chips. Pour the batter into the bottom of the prepared baking pan. Arrange the chocolate sandwich cookies on top of brownie batter, spacing them out evenly.
  • Make the cheesecake layer. Beat the cream cheese and sugar in a large bowl until the mixture becomes fluffy. Slowly beat in the eggs, one at a time, until the batter is smooth. Add the vanilla, stirring until combined. Pour the cheesecake batter over the top of the chocolate sandwich cookies and brownie batter, spreading out evenly. Sprinkle the top with the chopped cookies. Bake until the edges are slightly golden brown and the center is a little jiggly, about 45 minutes. Remove to a wire rack to cool completely. Refrigerate for at least 2 hours or up to overnight. Cut into squares and serve with a drizzle of chocolate sauce, if desired.

Maxine is a friend of mine who is an expert chef in her own right. She would deny it, but she is my go-to person for anything homemade and delicious. I figure that since she has been cooking for 80, yes, eighty years-that she can answer all of my silly cooking questions. She and her sisters started cooking when they were about 12 years old (you do the math). As they say in the south, Maxine "can make a silk purse out of a sow's ear." Anyway a couple of months ago I was having a MASSIVE craving for chocolate so I called Maxine.

2 tablespoons cocoa
3/4 cup milk
2 cups sugar
1/4 cup butter or 1/4 cup margarine
1 tablespoon white Karo
1 teaspoon vanilla

Steps:

  • After mixing cocoa with sugar, mix in all other ingredients except vanilla. Place on stove. Cook on medium heat until it cooks down and mixture becomes thicker-according to Maxine about 10 minutes. Do not over stir. Remove from stove and add vanilla. Stir. Pour into something that won't crack. Serve over chocolate cake, ice cream, or Maxine's homemade pound cake (recipe for another day). Too Good!

8 ounces semisweet chocolate, such as Valrhona Equatoriale, finely chopped
1 cup heavy cream
1/2 cup light corn syrup

Steps:

  • Place the chocolate in a metal bowl.
  • Combine the cream and corn syrup in a small heavy nonreactive saucepan and bring to a simmer. Pour the liquid over the chocolate and allow it to sit for 3 to 4 minutes, or until the chocolate has melted. Whisk to combine. Allow the sauce to cool slightly, then pour into a bowl or other container. (Stored in the refrigerator, tightly covered, the sauce will keep for up to 2 weeks.)
  • To serve, warm the sauce gently in the top of a double boiler or in the microwave.

Steps:

  • Add water, oil, sugar, and salt into a saucepan and bring to a boil. Whisk until combined. Take off heat once combined.
  • Add flour and mix with a wooden spatula until dough forms. Let cool.
  • Beat an egg into the dough mixture thoroughly.
  • Fill dough into a pastry bag with a star tip or into a zipper storage bag with the corner tip cut off.
  • Squeeze dough into hot oil and cut off about every 3-4 inches. Fry until golden-brown, about 6 minutes. Immediately place into the cinnamon sugar mixture.
  • For chocolate sauce, combine cocoa powder, sugar, salt, vanilla, and water in a saucepan. Bring to a boil whisking constantly. Let cool.
