3 split fryer breasts cooked and cubed
1 bag of tortilla chips crushed
1 can of Rotel
1 can cream of chicken soup
1 small can of chopped green chilies
1 pound of Velveeta or American Cheese

Steps:

  • Cook and dice chicken. Mix together Rotel, cream of chicken soup, green chiles, and cubed cheese. Heat this mixture in a microwave till melted. Add chicken. In a casserole pan, layer 1/2 of the chips and 1/2 your cheese mixture. Repeat these layers and top with a few crushed chips. Bake at 350°F until hot and bubbly.

4 cups cooked, diced chicken
4-5 cups crushed tortilla chips
2 cans Rotel
2 cans cream of mushroom soup
16 ounces Velveeta cheese

Steps:

  • Spray a 9x13 dish with cooking spray and preheat oven to 350 degrees Fahrenheit.
  • Make a layer of chicken in the bottom of the dish. Sprinkle with garlic salt.
  • Layer the crushed tortilla chips over the chicken.
  • Pour Rotel (juices and all) over the tortilla chip layer.
  • Grate Velveeta and mix with cream of mushroom soup in a large bowl.
  • Cook at 350 for 30 minutes. Serve and enjoy!

5 boneless skinless chicken breasts (or more, if desired)
2 onions, diced
2 carrots, sliced
2 stalks celery, sliced
salt (to taste)
pepper (to taste)
10 cups water (or more)
8 -10 cups broth (or more)
16 ounces spaghetti or 16 ounces vermicelli
2 onions, diced
2 bell peppers, diced or
3 hot bananas, peppers. seeded and diced
olive oil
2 lbs Velveeta cheese
2 (10 ounce) cans Rotel Tomatoes
2 (15 ounce) cans English peas, drained
2 (10 3/4 ounce) cans cream of mushroom soup
1 tablespoon Worcestershire sauce

Steps:

  • Simmer chicken and vegetables for 30 minutes over low heat or until chicken and vegetables are tender.
  • Remove chicken from broth and boil noodles according to package directions in 8 to 10 cups broth. Try to get the onion in the broth. You almost can't have too much onion in this dish. The carrot and celery don't hurt anything, either. When finished, noodles should still be slightly soupy. Add an extra cup or so of broth if they are not.
  • Saute onion and peppers in a little olive oil until tender.
  • Over medium high heat, add Rotel, cream soup, onions, peppers, english peas,and worchestershire to noodles.
  • Reheat and reduce to simmer.
  • Add cubed Velveeta and stir until melted. May bake for 20 to 30 minutes to combine flavors, but this is not essential. We usually eat it right out of the pot.

1 (10 3/4 ounce) can cream of onion soup
1 (10 3/4 ounce) can diced Rotel Tomatoes
1 medium onion, chopped
3 -4 cups monterey jack cheese or 3 -4 cups cheddar cheese, grated
1 (16 ounce) size bag nacho cheese flavor Doritos, crushed

Steps:

  • Combine soups, rotel and chopped onion in a bowl, stir well.
  • Spray a 13x9 pan with pam and layer soup mixture, shredded chicken, grated cheese and crushed Doritos on top.
  • Bake at 350 for 30-35 minutes, until bubbly.

1 (10 ounce) can Rotel tomatoes
1/2 teaspoon chili powder
2/3 cup cooked rice (Optional)
1 (15 ounce) can beans (Optional)
1 cup cheese, shredded
Fritos, for garnish

Steps:

  • Preheat oven to 350°F. Spray a 7 by 11 inch baking dish with nonstick spray. Line the prepared dish with raw chicken tenderloins. Set aside. Melt Velveeta in a large microwave safe bowl. Stir in yogurt, Rotel, chili powder, rice and beans. Pour mixture over the chicken. Top with shredded cheese. Bake 30-40 minutes. Top with Fritos and serve with a nice, fresh salad.
