ROTEL GOULASH
I don't know where this came from; it's similar to others listed, but the addition of the Rotel really gives it a spicy flavor. If you don't like as much heat, use the milder Rotel and/or substitute one of the cans of Rotel with petite diced tomatoes. Very inexpensive, easy and quick to make! I serve with garlic toast.

Steps:
- Brown hamburger/turkey in large skillet.
- While hamburger is browning, cook macaroni per package directions, usually 5-7 minutes.
- Add tomato sauce, Rotel (and tomatoes, if you are using those) to hamburger.
- Drain macaroni and add to hamburger.
- Add salt and pepper to taste.
- Mix together all ingredients.
- Simmer uncovered for 15-20 minutes.
- You may have to add a little water while cooking, depending on how "saucy" you like it.
- Serve with a salad and garlic toast.

GRANDMA'S GOULASH
This is the wonderful goulash that my mother and grandmother make (a cheesy version)and yet another Southern dish that I grew up on. Its cheap, fulfilling, and easy to make.

Steps:
- Cook elbow macaroni according to package directions and drain.
- Brown hamburger meat with chopped onion.
- Drain.
- In large pot combine macaroni, hamburger meat, Rotel, Tomatoe sauce, corn, garlic, salt, and pepper.
- Cut up Velveeta into cubs and add to pot.
- Cover and cook on low stirring occasionally, until Velveeta is thoroughly melted.
- If too thick for your liking, you may add milk by the ¼ cup until desired consistency, but it's supposed to be rather thick.
- Serve with cornbread and pinto beans.

GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

Steps:
- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.
TEX-MEX GOULASH
This recipe makes much more than I anticipated when I made it. If you have a larger group it works out perfect. You could also freeze leftovers and just re-heat them in the oven. Be sure not to top the whole dish with torillia chips unless you are going to eat the whole thing right then. Otherwise just top each plate that is served with the crushed tortillia chips.

- Start by boiling the elbow noodles. While elbow noodles are boiling brown the ground beef and strain off any fat. Add taco seasonning, onion, strained can of corn or frozen corn, Rotel, and Jalapeno black eyed peas. Keep warm while noodles finish cooking. Strain noodles when cooked and add them to the meat mixture. Blend well then add cheese and sour cream. Stir well and keep warm serve when its dinner time. Add crushed tortillia chips to the top of each served plate. Then just eat!
