1 Pound sweet italian turkey sausage (casings removed)
1 ,6 ounce bag Baby spinach
3 Cloves Garlic (,chopped)
2 medium Onions (,diced)
1 ,16 ounce bag Frozen cheese tortellini
2 ,32 ounce boxes Chicken broth
1 ,28 ounce can Diced tomatoes
2 1/2 Cup Water
1 1/2 teaspoons Dried basil
1/2 teaspoon Pepper
Pinch Crushed red pepper flakes
Grated parmesan cheese for topping (,optional)

Steps:

  • In a large Dutch oven or large soup pot, cook onion and sausage until meat is cooked through. Add the garlic and cook for another minute. Pour in broth, water, and diced tomatoes and bring to a boil.
  • Add tortellini and cook for about 3-4 minutes. Reduce heat and add spinach, basil, pepper and red pepper flakes. Cook for another minute, just until spinach has wilted. Remove from heat and serve.
  • ** If you are planning to save some of the soup in jars to eat on another day you can cook the tortellini in a seperate pot and keep them in a tupperware container. Add them to your serving of soup as you reheat it.This will prevent the tortellini from getting too soft and also from soaking up too much broth.

1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

Steps:

  • Remove Sausage from casing and crumble sausage into a Dutch Oven. (I just brown sausage whole enough to slice it into coins and use it that way), add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic, cook 1 minute longer. Stir in broth, water and tomatoes. Bring to a boil. Add tortellini, return to a boil. Cook for 7-9 minutes or until tender, stirring occasionally. Reduce heat, add spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted. Serve with parmesan cheese sprinkle on top if desired.

1 tablespoon prepared pesto
1 jar (7 ounces) roasted sweet red peppers, drained

GARNISH:
8 thin slices prosciutto or deli ham

Steps:

  • In a Dutch oven, saute mushrooms in oil until tender. Add the water, tomatoes, cheese, bouillon and pesto. , Place peppers in a food processor; cover and process until blended. 1 teaspoon olive oil
1 (12 ounce) package mild Italian sausage
1 small onion, chopped

1 (28 ounce) can tomato puree
1 bunch fresh spinach, chopped

Steps:

  • Pour 1 can broth into a small saucepan and add tortellini; bring to a boil. Cook tortellini until tender yet firm to the bite, about 5 minutes.
  • Heat oil in a large stockpot over medium heat; cook and stir sausage, onion, garlic, and Italian seasoning until sausage is browned and crumbly, 5 to 10 minutes. 1 1/2 lbs Italian sausages
1 cup chopped onion
1 teaspoon garlic, minced
1/4 teaspoon ground black pepper
4 cups beef broth
2 cups water
1 1/2 teaspoons italian seasoning
1 1/2 cups peeled and thinly sliced carrots
1 (16 ounce) can whole tomatoes
1 (15 ounce) can kidney beans, drained and rinsed (can use butter beans)
1 (6 ounce) can pitted sliced ripe olives, drained
2 cups diced zucchini
16 ounces tri-color cheese tortellini, cooked al dente and drained
garnish with grated parmesan cheese
serve with garlic or regular French bread

Steps:

  • Preheat oven to400 degrees.
  • In roasting pan, combine sausage, onion, garlic and pepper. Add olive oil and toss to coat.
  • Roast, uncovered, stirring occasionally, 20-30 minutes until sausage is browned.
  • Remove from oven and reduce oven temperature to 325 degrees.
  • Drain grease from sausage and cut into ¼ in slices.
  • Return to roasting pan. Add beef broth, water, Italian seasoning, and carrots.
  • Cover and return to oven. Bake 30 minutes, until sausage is tender. Remove from oven.
  • Stir in tomatoes with juice, beans, olives, and zucchini. Bake 15-20 minutes.
  • Add tortellini and bake 5 minutes longer.
  • Garnish with parmesan cheese.
  • The soup may also be prepared entirely on the stove.
