GARLIC SMASHED POTATOES
This is a rustic pot of mashed potatoes that the whole family loves. They are chunky, creamy, buttery potatoes and they're perfect for any occasion.

Steps:
- Add the potatoes to a large pot and cover with water. Bring to a boil over high-heat. Check the potatoes periodically and drain them as soon as you can easily pierce the potatoes with a fork, this typically takes about 15 minutes. (You don't want them to be soft enough to just fall off the fork.)
- After you drain the potatoes in a colander, transfer them back into the hot pot. Place the pot back on the stove over the lowest heat setting. Smash the potatoes with a handheld potato masher (this is my favorite one for potatoes) and add the butter.
- Continue smashing the potatoes until they are as smooth as you like. Depending on how dry the potatoes are, start by adding a splash of milk or cream. Stir it in and continue adding liquid slowly until the desired consistency has been reached.
- Stir in the salt, garlic, and pepper. Taste and adjust the seasonings. Top the hot potatoes with the additional butter right before serving. Enjoy!

- Heat oven to 375ºF.
- Place potatoes on rimmed baking sheet sprayed with cooking spray; bake 20 to 25 min. or until tender. Meanwhile, combine coating mix, bacon and paprika in medium bowl; stir in cheese.
- Remove potatoes from baking sheet. Use back of spatula to flatten potatoes to 1/2-inch thickness. Brush both sides of each potato with egg, then coat evenly with cheese mixture. Return to baking sheet.
- Bake 15 min. or until crisp and golden brown. Sprinkle with chives. Serve with sour cream.

- Place potatoes in a medium saucepan and add water to cover by at least an inch. Add one teaspoon salt and bring to a boil over medium-high heat. When the water starts to boil, reduce the heat to medium-low and continue to cook for about 10-20 minutes. How long it takes the potatoes to cook depends on the size. They are done when they are tender and you can easily stick a fork in them.
- When they are done, remove from the heat and reserve 1/2 cup of the cooking liquid. Pour the potatoes into a colander to drain them. Put them back in the pan and let them sit for a few minutes to let the steam escape.
- While the potatoes are cooking combine the softened cream cheese and butter in a small bowl. Add two tablespoons of the reserved cooking water, one-fourth teaspoon of salt and pepper, and the chives and mix well to combine. Add more water if you want a creamier consistency.
- Use the back of a wooden spoon or a potato masher to gently smash the potatoes just until the skin breaks. Do not mash.
- Add the cream cheese mixture and combine being careful not to break up the chunks of potato. Add two tablespoons of the reserved cooking water and stir to combine.
- Taste and add additional salt and pepper, if needed, and serve immediately.

- Put the whole unpeeled potatoes in an 8-quart pot and add enough water to cover. Cover and bring to a boil over high heat. Reduce the heat to medium low and simmer until the potatoes are tender when pierced with a skewer or toothpick, 25 to 30 minutes.
- Cut the potatoes into chunks and pass them through a food mill or a ricer into a large heatproof bowl. Alternatively, put them in a stand mixer fitted with the paddle attachment. Cover the mixing bowl with a towel to contain any splashes and mix on low speed until mostly smooth, about 1 minute.

SMASHED ROASTED POTATOES RECIPE BY TASTY

- Add the potatoes to a large pot and cover with cool water by at least 1 inch. Generously season the water with salt and stir in the baking soda. Bring the water to a boil and cook the potatoes for 18-20 minutes, until a fork can be easily inserted into a potato, but they are not so soft that they fall apart when pierced. Drain the potatoes and let cool until safe to handle, about 20 minutes. Transfer the potatoes to an airtight container and refrigerate overnight for best results.
- Preheat the oven to 425°F (220°C).
- Melt together the butter and 3 tablespoons of olive oil in a small saucepan over medium heat. Stir in the rosemary, thyme, garlic, and salt. Cook for 30-60 seconds, until fragrant, then remove the pot from the heat.
- On a clean surface, evenly press down on each potato using a flat-bottomed 1-cup measure or plate until they are about ¼ inch thick.
- Brush 2 large baking sheets with about 2 teaspoons of olive oil each. Arrange the smashed potatoes on the baking sheets in a single layer, spacing evenly. Using a pastry brush or small spoon, top each potato with some of the butter-herb mixture. Season with the black pepper.
- Roast the potatoes for 35-38 minutes, gently flipping once, until golden brown and crispy.
- While the potatoes are roasting, make the whipped feta dip: Add the feta, crème fraîche, olive oil, lemon zest, lemon juice, and salt to a food processor. Process until completely smooth, about 2 minutes, scraping down the sides of the bowl occasionally. Transfer the dip to a small bowl and top with a drizzle of olive oil, black pepper, lemon zest, and minced rosemary.
- Arrange the potatoes on a platter and top with any remaining butter-herb mixture, if desired. Serve with the whipped feta dip.

DELICIOUS SMASHED POTATOES

I leave the skins on for even extra flavor for this recipe, but you can peel the potatoes if you wish, I also add in roasted garlic that I keep frozen in my freezer, so good!
