1/2 taza de aderezo italiano fuerte reducido en grasa KRAFT Lite Zesty Italian Dressing
4 mitades de pechuga de pollo deshuesadas y sin pellejo, pequeñas (1 lb)
1/4 taza de ralladura estilo parmesano reducida en grasa KRAFT Reduced Fat Parmesan Style Grated Topping
1 taza de champiñones (hongos) frescos rebanados
2 cucharadas de albahaca fresca picada
1/4 taza de queso colby y monterrey desmenuzado con leche al 2% KRAFT 2% Milk Shredded Colby & Monterey Jack Cheese

Steps:

  • Calienta el horno a 350°F.
  • Vierte el aderezo sobre el pollo en una fuente llana de vidrio; voltea el pollo para cubrirlo bien. Ponlo a marinar en la nevera durante 1 hora.
  • Retira el pollo de la marinada; deshazte de ésta. Pon la ralladura en una fuente llana. Reboza el pollo, dándole vuelta para cubrirlo parejamente por ambos lados. Colócalo, sin encimarlo, en un molde llano rociado con aceite en aerosol.
  • Hornea el pollo por 30 min. Entretanto, cocina los hongos en una sartén rociada con aceite en aerosol a fuego alto hasta que estén blandos, revolviéndolos con frecuencia. Incorpora la albahaca.
  • Pon encima del pollo los hongos y el queso desmenuzado. Hornéalo durante 5 min. más o hasta que el queso se derrita.

Pollo Sabroso means delicious chicken in Spanish so I thought the name would be perfectly fitting for this flavorful chicken that everyone loves in my house.

6 medium chicken thighs (with bone and skin)
1 tbsp vinegar
2 teaspoons soy sauce (coconut aminos for whole30)
1 packet Sazon with achiote (Badia or Goya (1/2 tablespoon))
1 teaspoon Adobo seasoning (in Spanish aisle)
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano

Steps:

  • Season chicken with vinegar and soy sauce.
  • Add sazon, 1 teaspoon of adobo, garlic powder, oregano and adobo and mix well. (Don't use your hands or they will turn orange)
  • Let chicken marinate while you heat the grill.
  • Broil or grill on low until chicken is cooked through, turning a few times, careful not to burn, about 30 minutes. Enjoy with rice and salad.

1 tablespoon white vinegar
2 cloves of garlic minced
1/2 teaspoon salt
1/2 teaspoon crumbled dried oregano
1/8 teaspoon ground pepper
1/4 teaspoon mild chili peppers finely minced (the key is to make sure they are VERY finely minced)
6 ounces pineapple juice
2 tablespoons lime juice
1 tablespoon vegetable oil
4 pounds of chicken for frying, cut up in the size you plan to serve

Steps:

  • Mix vinegar, garlic, salt, oregano, pepper, chili peppers, pineapple juice, lime juice and vegetable oil together. You can save ¼ of a cup on the side to use for basting the chicken later to add even more flavor. Stick your chicken in the marinade; make sure it is completely covered and as airtight as possible. Leave it in the refrigerator overnight and somewhere around halfway turn your chicken, so all sides are equally exposed to the marinade. Then just grill up your chicken and enjoy, maybe with some warm El Pollo Loco tortillas.

I would imagine this being delicious on pork chops, too. These are 4 weight watcher points. Recipe from Skinny Taste blog. Note: 1. The packaged Sazon and Adobo contains salt. Should you make your own blends, remember to season with salt to taste. 2. If using packaged Sazon, any flavor will do, even the tomato blend.

2 tablespoons soy sauce
2 tablespoons vinegar
1 teaspoon paprika
1 teaspoon ground cumin
ground black pepper to taste
1 clove garlic, minced
½ (32 ounce) package frozen steak-cut French fries
½ tablespoon vegetable oil
1 onion, sliced lengthwise
1 green bell pepper, sliced into strips
1 aji pepper, minced
3 Roma tomatoes, sliced lengthwise and seeds removed

Steps:

  • Place chicken strips in a resealable plastic bag with soy sauce, vinegar, paprika, cumin, black pepper, and garlic. Seal bag and shake up to cover chicken completely. Let marinate in the refrigerator for at least 15 minutes and as long as 24 hours.
  • Preheat the oven to 450 degrees F (230 degrees C). Arrange frozen fries in a single layer on a baking sheet.
  • Bake in the preheated oven until light golden, 20 to 25 minutes.
  • Meanwhile, heat oil in a large wok on high heat. Add the marinated chicken. Cook, flipping pieces occasionally, until mostly white on the surface, 4 to 5 minutes.
  • Add onion, bell pepper, and aji pepper to the wok with the chicken. Continue stir-frying until onions are slightly translucent but still hold their shape, 3 to 5 minutes.
  • Arrange baked fries on plates and place the chicken stir-fry on top.

¼ cup olive oil
¼ cup lime juice
2 teaspoons white vinegar
2 teaspoons ground cumin
2 cloves garlic, smashed
2 small dried red peppers
1 teaspoon sea salt
½ teaspoon ground black pepper
4 boneless, skinless chicken breasts

Steps:

  • Place onion, olive oil, lime juice, vinegar, cumin, garlic, red peppers, sea salt, and black pepper in a blender. Blend until smooth. Place chicken in a container or resealable plastic bag and pour marinade on top; toss to coat. Marinate in the refrigerator for 2 to 24 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
