SAILBOAT CAKE

Sailboat Cake image

Set sail on a journey to a delicious dessert. Cut and frost an ordinary 13x9-inch cake into a dessert fit for a captain.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 3h30m

Yield 14

Number Of Ingredients 8

1 box Betty Crocker™ Super Moist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
2 containers Betty Crocker™ Rich & Creamy vanilla frosting
Yellow or brown food color
Tray or cardboard (20x18 inches), covered with wrapping paper and plastic food wrap or foil
2 pull-and-peel cherry licorice twists (from 14-oz package)
1 roll Betty Crocker™ Fruit Roll-Ups® chewy fruit snack (from 5-oz box)
Ring-shaped hard candies and assorted candies for decorating

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottom and sides of 13x9-inch pan or spray with baking spray with flour. Make and bake cake mix as directed on box for 13x9-inch pan. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour. Refrigerate or freeze cake about 1 hour or until firm.
  • Cut cake as shown in diagram. Arrange pieces to form sailboat on tray. Tint 1 1/3 cups frosting with yellow or brown food color for hull. Spread a thin layer of white frosting over top and sides of sails, and a thin layer of tinted frosting over top and sides of hull, to seal in crumbs. Refrigerate or freeze cake 30 to 60 minutes to set frosting.
  • Frost entire cake with remaining frosting. Cut licorice pieces to desired length for the mast; place near the edge of the longest sail. To create the top flag, spread a thin layer of frosting on a small piece of aluminum foil. Unroll and remove wrapper from fruit snack roll; press onto frosting-coated foil. Using kitchen scissors, cut into flag shape. Secure flag to mast with a small amount of frosting. Use candy for portholes, or decorate as desired. Store loosely covered.

SAILBOAT CAKE

Sailboat Cake image

This glossy sea of dreams is made to delight even the most land-locked little boy. Fluffy icing, tinted the gentlest blue, is scalloped into waves around the sides of a chocolate cake that's swimming with fish cookies. A homemade paper sailboat crests the frothy waves of the cake's surface.

Categories     Cake Recipes

Yield Serves 10 to 12

Number Of Ingredients 17

Unsalted butter, for pans
1 1/2 cups unsweetened cocoa powder, plus more for pans
3 cups unbleached all-purpose flour
3 cups sugar
1 tablespoon baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
3 large eggs
1 1/2 cups buttermilk
3/4 cup vegetable oil
1 1/2 teaspoons pure vanilla extract
2 1/4 cups sugar
3 tablespoons light corn syrup
8 large egg whites
2 teaspoons pure vanilla extract
Blue food coloring
Fish Cookies, for decorating

Steps:

  • One-Bowl Chocolate Cake: Preheat oven to 350 degrees. Butter two 8-inch square cake pans, and line bottoms with parchment; butter parchment, and dust with cocoa.
  • Into the bowl of an electric mixer fitted with the paddle attachment, sift cocoa, flour, sugar, baking soda, baking powder, and salt. With the mixer on low, stir in eggs, 1 1/2 cups warm water, buttermilk, vegetable oil, and vanilla until smooth, about 3 minutes.
  • Divide batter among prepared pans. Bake, rotating once, until tester inserted in center comes out clean, 35 to 45 minutes.
  • Let cakes cool in pans on a wire rack for 20 minutes, then remove from pans and cool completely, right side up on rack. Cakes can be made in advance and stored up to 1 day in refrigerator. They can be stored 1 week in the freezer.
  • Using a serrated knife, trim the tops of both cake layers to be level. Brush away excess crumbs. Place the bottom layer on an 8-inch cardboard square. Add food coloring, one drop at a time, to the frosting, and mix until desired color. Spread 1 1/2 to 2 cups tinted frosting over the top of the bottom layer. Top with the second layer, cut side down. Spread 2 cups frosting in a thin layer over the entire cake.
  • Seven-Minute Icing: In small heavy saucepan over medium heat, heat 2 cups sugar, the corn syrup, and 2/3 cup water, stirring occasionally, until sugar has dissolved. Wash down sides of pan with pastry brush dipped in water to keep crystals from forming. Increase heat to high; bring to boil without stirring. Cook until mixture is 235 degrees on candy thermometer.
  • While syrup cooks, place egg whites in bowl of an electric mixer fitted with whisk attachment. Whip on medium speed until frothy. When syrup in pan has reached 235 degrees, pour hot syrup into egg whites in a slow, steady stream down side of bowl. Increase mixer speed to medium-high; whip until fluffy and cool, 7 to 10 minutes. Add vanilla; whisk well. Tint with food coloring.
  • Using serrated knife, trim tops of both cake layers to be level. Brush away excess crumbs. Place bottom layer on 8-inch cardboard square. Spread 1 1/2 to 2 cups icing over top of bottom layer. Top with second layer, cut side down. Spread 2 cups icing over cake in thin layer.
  • Place the assembled cake on inverted cake pan to raise the bottom edge for easier decorating. Use a large offset spatula to generously cover all of the cake with more icing. Use the long edge of the spatula to smooth the frosting on each side.
  • Press cake-decorating comb into sides to make vertical lines around the cake, dividing each side into four equal parts; these guides will help you keep the waves even and neat. Pull comb or serrated knife across sides, making a U shape from one line to the next to form waves.
  • On top of cake, use a small offset spatula to pull the still-moist frosting straight up, creating frothy waves. Press decorated fish cookies into sides of cake; icing will help them stick. Place paper sailboat on top of cake. Serve slices of the cake with more fish cookies on the side.

PIRATE SHIP AND TREASURE ISLAND CAKE

Pirate ship and treasure island cake image

A stunning children's birthday chocolate cake with hidden treasure buried on a sandy desert island for the kids to dig into

Provided by Valerie Barrett

Categories     Dessert

Time 3h15m

Number Of Ingredients 26

200g butter , cubed
300g dark plain chocolate , broken into pieces
200g plain flour
¾ tsp baking powder
¾ tsp bicarbonate of soda
250g light muscovado sugar , plus extra for decoration
3 eggs
200g soured cream
1 ½ tsp vanilla extract
150g sieved apricot jam , warmed
650g brown ready-to-roll icing
18 mini Toblerones
6 malt chocolate balls
6 chocolate caramels (we used Rolos)
8 mini chocolate fingers
100g white marzipan
gold covered chocolate coins
chocolate skull (optional)
250g royal icing made from packet royal icing sugar (use 250g sugar)
blue food colouring
1 chocolate stick (we used Mikado) (optional)
30 x 20cm cake tin
30cm square cake board (preferably blue)
2 sheets black, white or blue paper
2 drinking straws
2 sandwich flags

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Grease and line a 30x20cm cake tin with baking parchment.
  • Put the butter and 200g of the chocolate into a saucepan and heat gently until melted. Remove from the heat. Sieve the flour, baking powder and bicarbonate of soda into a large bowl. Mix in the sugar. Beat together the eggs, soured cream and vanilla extract. Pour the chocolate and egg mixtures into the flour and sugar and beat well until smooth. Pour into the prepared tin and bake in the oven for about 40 minutes. Leave until completely cold before cutting and shaping.
  • Cut the cake in half lengthways. Place one complete half on the 30cm cake board. Cut the remaining half into 3 rectangles, 13x10cm, 7x10cm and 10x10cm. Attach the 10x10cm piece to one end of the base cake using a little warm jam. Cut a 'V' shape to represent the prow of the ship. Place the 13x10 piece at the other end of the base cake, attaching with jam. Using jam again attach the 7x10 piece on top of the 13x10 piece to make the upper deck. Slice the back of the ship at a very slight angle.
  • Brush the whole cake with jam. Roll out about 550g of the ready-to-roll icing and cover the cake. Trim the edges at the base and keep any trimmings.
  • Melt the remaining 100g chocolate in the microwave or in a heatproof bowl over a saucepan of barely simmering water. Use melted chocolate to stick the mini Toblerones to the edges of the two decks and to the 'V' shape of the prow. Trim any to fit exactly. Use the chocolate to stick on the chocolate balls for canon balls, finger biscuits stacked up as canons and chocolate caramels for port holes. Using a little of the marzipan, roll out and cut four windows. Make window frames from brown icing trimmings, rolling out to thin sausages to form a cross and sticking with chocolate. Attach to the sides of the ship with chocolate. Poke the chocolate stick out of the front of the prow, if using.
  • Arrange the chocolate coins in a little pile on the cake board, reserving 3 or 4 coins for the top. Roll out the remaining brown icing and cover the coins completely. Brush with melted chocolate and sprinkle with muscovado sugar. Push 3 or 4 coins into the sand along with the chocolate skull if using.
  • Put a little of the royal icing in a bowl. Colour the remainder blue. Spread the icing on the cake board around the ship and the island. Use the white icing to make 'surf' around the edge of the island.
  • Using the remaining marzipan and brown icing, make three barrels. Place one on the deck of the ship and the others in the sea. Cut out sails from the paper and make holes in them so you can push the straws through. Attach the sails to the ship and poke sandwich flags out of the top to finish.

  • Preheat oven to 325°F. Grease and lightly flour one 9x5x3-inch loaf pan and one 8x8x2-inch square baking pan; set aside. Prepare batter for Yellow Cake as directed. Pour 2 1/2 cups of the batter into the prepared loaf pan, spreading evenly. Pour the remaining batter into the prepared square pan, spreading evenly. Bake about 35 minutes for loaf cake, 20 to 25 minutes for square cake, or until a wooden toothpick inserted in the centers comes out clean. Cool cakes in pans on wire racks for 10 minutes. Remove from pans; cool completely on wire racks.
  • Tint about 1-1/2 cups of the Creamy White Frosting desired shade(s) of blue. Trim ends of loaf cake to resemble a football. Place loaf cake on a flat serving platter. Frost top and sides of cake with blue frosting. Use frosting to attach licorice to breadstick; insert breadstick into loaf cake for mast pole.
  • Cut square cake in half diagonally to make two large triangles. Using a small amount of white frosting, sandwich the two triangles together. Cut in half to make two smaller triangles; trim one of the triangles to make it slightly smaller than the other triangle. Arrange the two triangles on top of loaf cake on either side of mast pole for sails. If necessary, insert a wooden crafts stick or lollipop stick into the sails and loaf cake to secure. Carefully spread white frosting over all sides of sails. Decorate sails with blue frosting. Decorate boat with assorted small candies; add jelly candy rings for life preservers.
  • If desired, place doughnut next to sailboat for a dinghy. Use licorice to attach dinghy to sailboat. If desired, sprinkle platter with glitter.
