SENSATION SALAD



Sensation Salad image

The distinct flavors of garlic, lemon juice and Romano cheese combined with light oils are tossed with simple iceberg or romaine lettuce, making this a true Louisiana "sensation"!

1/2 cup salad oil
1/2 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon white vinegar
5-6 cloves garlic (pressed or chopped fine)
Kosher salt and fresh ground pepper to taste
18 - 20 ounces iceberg or romaine lettuce
1 cup Romano Cheese (grated )
2 tablespoons parsley chopped
1/4 cup blue cheese (optional)

Steps:

  • Mix the ingredients for the Dressing together in a jar or a small bowl and set aside.
  • Trim the hard, white centers from the lettuce. Wash and dry the lettuce, then tear or chop it into bite size pieces and place on a large platter or in a large salad bowl.
  • Sprinkle chopped parsley and Romano cheese on top of the lettuce.
  • Sprinkle on the blue cheese (if using).
  • Shake or whisk the dressing to mix well and ladle as much as you like on the lettuce.
  • Toss the lettuce, cheese and dressing until all the lettuce leaves are well coated.

1/3 cup crumbled blue cheese
3/4 cup lemon juice
1/4 cup vinegar
2 1/4 teaspoons salt
1/2 cup olive oil
1 1/2 cups canola oil
1 teaspoon minced garlic
1 head romaine lettuce, cleaned and torn

Steps:

  • Combine cheeses and refrigerate in airtight container.
  • Mix remaining ingredients except lettuce.
  • Whisk until blended and refrigerate overnight preferably.
  • Place lettuce in large bowl.
  • Drizzle dressing over lettuce to taste.
  • Sprinkle cheeses over lettuce to taste.

Sensation Salad originated decades ago at a now-closed restaurant in Baton Rouge, Louisiana, and many home cooks have since adopted it as a family recipe. Bright lemon and a kick of garlic, Worcestershire sauce, and Dijon mustard define the dressing, and a heavy-handed grating of salty, hard cheese like Parmesan or Pecorino Romano tops it off. My grandmother, Mama Te, often made her version of Sensation Salad for barbeques, serving it with chicken, rice pilaf, and garlic bread. This easy, everyday salad also pairs well with red meat, seafood, and Italian dishes. Top each serving more grated Parmesan if desired.

1 cup olive oil
3 tablespoons red wine vinegar
1 medium lemon, juiced
3 cloves garlic, minced
1 teaspoon Worcestershire sauce
¾ teaspoon salt
¼ teaspoon Dijon mustard
3 heads romaine lettuce
1 cup grated Parmesan cheese

Steps:

  • Whisk olive oil, red wine vinegar, lemon juice, garlic, Worcestershire sauce, salt, and Dijon mustard together until combined.
  • Tear the leaves of romaine lettuce heads into 2-inch pieces and place in a bowl.
  • Pour the dressing over the lettuce to taste and toss until well coated. Add grated Parmesan cheese and toss again.

6 tablespoons grated Romano cheese
2 tablespoons grated blue cheese
1 lemon juice from 1 lemon, more if desired
2 cloves garlic, pressed
1/3 cup olive oil
2/3 cup vegetable oil
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Grate cheeses and mix together. Set aside. Combine remaining ingredients. For each individual serving of tossed green salad, sprinkle with 1 tablespoon of the mixed cheeses and 3 tablespoons dressing. Hint: Freeze bleu cheese to grate.
