Salad Soup image

Cold garden salad soup, great for a hot day and filling. Serve with French bread, Easy to prepare no cooking but a little chopping and refrigerate and your done. Looks like alot of ingredients but its really easy and tasty I have had this recipe for about 25 years, got it from a lady who made it for a pot luck at work. Its just wonderful, It is a COLD soup usually called Gazpacho

Number Of Ingredients 14

1 small garlic clove, diced
1 tablespoon sugar
1/2 teaspoon salt
1 (46 ounce) can tomato juice
1/4 cup salad oil (I use Canola oil)
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
3 large tomatoes, finely diced
1 cucumber, seeded and finely diced
1 green pepper, finely diced
1 cup carrot, shredded
1 cup celery, thinly sliced
1 cup green onion, thinly sliced

Steps:

  • Mix together all the first ingredients together
  • after all the vegetables are diced, shredded and thinly sliced.
  • add all together.
  • Chill at least 1 hour. This is served cold.

Number Of Ingredients 17

1/2 onion - sliced thin
1 1/2 inch piece of ginger - chopped
1/2 cup carrots - chopped
1/2 cup of parsley - chopped
3 cloves garlic - chopped
1 cup of red beans - or your choice
1/2 head of lettuce - sliced thin
1 cup of uncooked rice
1 1/2 tsp. salt
1/2 tsp. red pepper flakes
1 tsp. cumin
1/2 tsp. turmeric
1 tsp. curry
6 - 8 cups of chicken broth
1/2 tsp. chili powder
1 tbs. sesame oil
2 tbs. olive oil

Steps:

  • Heat a sauce pot with the olive oil and the sesame oil. Add the garlic, onion, carrots and ginger to simmer until the garlic is fragrant and the onion softened. Add the broth, beans and seasonings and continue to simmer on low. Adjust the seasonings to your taste. Prepare the rice as directed while the soup is simmering. Add the lettuce to the soup and continue to simmer. Place a scoop of rice in a bowl and cover with the soup.

Quick, easy and tasty! You may add 1 to 2 tablespoons of lemon juice if needed, for extra zing.

1 pound smoked sausage, finely diced
6 tablespoons chopped onion
6 tablespoons all-purpose flour
2 cups milk
2 cups half-and-half
1 teaspoon dried thyme
1 (8 ounce) can sauerkraut, undrained

Steps:

  • Cook and stir smoked sausage and onion in a large saucepan over low heat until lightly browned, about 15 minutes; stir in flour to coat the sausage and onion. Gradually stir in milk, followed by half-and-half. Raise heat to medium, and simmer the soup until thick, about 5 minutes. Stir in thyme. Mix sauerkraut and its juice into the soup and cook just until sauerkraut is heated through, 1 to 2 more minutes.
