One 8-ounce package cream cheese, softened
2 tablespoons finely chopped fresh chives
1 small jar pimentos, patted dry
20 thin slices salami

Steps:

  • Mix together the cream cheese and chives in a bowl. Cut the pimentos into small pieces.
  • Spread a thin layer of the cream cheese mixture onto a salami slice; fold in half, then half again to form a wedge shape. Thread 2 pieces of pimento onto toothpicks and use to secure the roll-up. Repeat for the remaining salami slices.
  • Slice the roll-ups in half and serve on a platter.

8 eggs, lightly beaten
1/2 cup sharp cheddar cheese, grated

Steps:

  • Preheat oven to 400°F
  • Line base and sides of two 12-hole, 1/3-cup capacity muffin pans with salami.
  • Pour 1 tablespoon egg into each salami case. Sprinkle with cheese.
  • Bake for 6 to 8 minutes or until egg is set and cheese has melted. Season with salt and pepper. Serve.

1 (8-ounce) package cream cheese cream cheese with chives and onion
8 ounces Muenster cheese shredded
1/2 cup sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper freshly ground
1 egg hard-cooked, minced, or 1 jar (2 oz.) caviar
olives Sliced
1 (6-ounce) package frozen shrimp thawed, or 1 cup small cooked fresh shrimp
12 cucumbers thin slices, cut in half
Crackers

Steps:

  • Line the bottom of an 8 x 1 1/2 -inch round cake pan with waxed paper. In a small mixer bowl at high speed, beat cream cheese until smooth. Add Muenster, sour cream, Worcestershire sauce, onion and garlic powders and pepper. Beat about 5 minutes or until fluffy. (Some small chunks of Muenster will remain.) Spread cheese mixture into pan. Cover and chill at least 2 hours.Unmold cheese mixture onto a chilled serving plate. Carefully peel off waxed paper. Smooth surface with a spatula. Place egg or caviar in center. Surround with a ring of olive slices. Drain shrimp well and cut in half, if large. Place a ring of shrimp around the outer edge. Stand cucumbers around sides of cheese round. Lay a row of cucumbers on the plate to form a scalloped edge. Serve with crackers.* Or use 1 package (8 ounces) cream cheese and 1 tablespoon minced chives.

Steps:

  • Combine cream cheese and olives.
  • Roll each salami into a cone and skewer with a toothpick (the frilly ones look really nice).
  • Pipe the cream cheese filling into the salami cone using a star tipped pastry bag.
  • Refrigerate until serving time.

1 (7 1/2-ounce) can red salmon drained, boned and flaked
2 tablespoons celery minced
2 tablespoons green onions minced, including some tops
3 tablespoons mayonnaise
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon liquid smoke
Thinly sliced cucumber
Crackers or toasted bread rounds
Thinly sliced green onions
Watercress sprigs

Steps:

  • In a small bowl, mix salmon, celery and minced green onion. Add mayonnaise, lemon juice, salt, pepper and liquid smoke. Mix well. Cover and chill at least 1 hour to develop flavor or up to 24 hours.Just before serving, place a cucumber slice on crackers or toast. Top with salmon mixture and garnish with green onion slices and watercress.

4 to 5 teaspoons apricot preserves or pineapple preserves
1 (5-ounce) jar pineapple-flavored processed cheese spread
9 slices bread sandwich
18 slices salami (3" diameter each)
36 olives small pimiento-stuffed or pitted

Steps:

  • In a small bowl, mix cream cheese and preserves. Fill a star-tipped pastry bag with cream cheese mixture set aside.In a double boiler, melt the cheese spread. Cheese will be a soft consistency and easily spreadable. Trim crust from bread spread each slice with 1 tablespoon spread. Cut in triangles.Cut the salami slices in half and roll each half into a cone. With a wooden pick, skewer on olive, then the salami cone. Fasten the salami cones to the bread triangles. Pipe cream cheese mixture into each cone. Cover and chill.
