SAUSAGE AND OLIVES PIZZA



Sausage and Olives Pizza image

Sweet Italian sausage and briny green and black olives top this flavorful grilled pizza. No grill? no problem. Cook this pizza dough in a cast-iron skillet over high heat, or on a preheated sheet pan or pizza stone in a 500-degree oven.

Yield Makes one 10-inch pizza

Number Of Ingredients 7

3 ounces cooked sweet Italian sausage
1/4 cup pitted black and green olives
1 1/2 ounces shredded part-skim mozzarella
1/2 teaspoon fresh rosemary leaves
Herb Oil
Basic Grilled Pizza Dough
Coarse salt and ground pepper

Steps:

  • Heat it up:Set up a grill with heat source, coals or gas, on one side over medium-high. Clean and lightly oil hot grill.
  • Stretch it:On a lightly floured work surface, stretch or roll 1 piece Basic Grilled Pizza Dough or 4 ounces store-bought dough into a 10-inch-long oval or other desired shape. Brush one side lightly with Herb Oil or olive oil and season with salt and pepper.
  • Grill it:Using your hands, place dough, oiled side down, directly over heat source. Brush dough with herb oil or olive oil and cook until underside is lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and cook until lightly charred, 1 to 2 minutes. Slide dough to cooler side of grill.
  • Top it:Top with sausage, olives, rosemary, and mozzarella; cover grill. Cook until cheese melts and toppings are heated through, 2 to 5 minutes.

1/3 cup Chunky Tomato Sauce
1/2 cup arugula leaves
6 thin slices salami
1 tablespoon slivered black olives
1 cup shredded mozzarella cheese

Steps:

  • Brush edge of crust with oil. Spread center with tomato sauce, arugula, salami, olives, and cheese.

A decidedly different topping - we were pleasantly surprised with this one! Preparation time does not include that of preparing the pizza base.

Number Of Ingredients 8

4 tablespoons olive oil
675 g red onions
12 stoned black olives
1 teaspoon herbes de provence
8 slices italian salami
3 tablespoons parmesan cheese
ground black pepper
pizza dough, of your choice enough to line a 30cm x 18cm swiss roll tin

Steps:

  • Preheat oven to 220C/425°F.
  • Heat 2 tablespoons of oil in a frying pan and add the thinly sliced onions. Stir and cover.
  • Cook over a gentle heat for about 20 minutes, stirring occasionally until onions are soft and lightly coloured. Cool.
  • On a lightly floured surface, knead the olives and herbs into the dough and line the base of the swiss roll tin pushing up the edges to make a narrow rim around.
  • Brush pizza with half the remaining olive oil.
  • Spoon half the cooled onions over the base.
  • Cover with the quartered salami slices and then the remaining onions.
  • Grind over lots of black pepper and drizzle the rest of the oil.
  • Bake for 15 - 20 minutes until crust is golden.
  • Remove from oven and sprinkle with parmesan cheese.
