1 small sweet red pepper
1 salmon fillet (8 ounces)
1/2 cup finely chopped carrot
1 tablespoon chopped shallot
1 tablespoon canola oil
2 garlic cloves, minced
3 tablespoons all-purpose flour
1 can (14-1/2 ounces) chicken broth
2 cups 2% milk
1 teaspoon seafood seasoning
1/4 teaspoon Liquid Smoke, optional

Steps:

  • Broil red pepper 4 in. from the heat until skin blisters, about 5 minutes. With tongs, rotate pepper a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place pepper in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Remove stems and seeds. Set roasted pepper aside., Broil salmon 4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork. Break salmon into small pieces; set aside. , In a large saucepan, saute carrot and shallot in oil until tender. Add garlic; saute 1 minute longer. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Transfer to a blender; add roasted pepper. Cover and puree until smooth. Return to the pan. Stir in the milk, seafood seasoning, Liquid Smoke if desired and salmon; heat through.

1 tablespoon chopped yellow onion
1 tablespoon all-purpose flour
½ teaspoon chicken bouillon granules
½ pound salmon fillet, finely chopped
¾ cup half-and-half cream, divided
¼ teaspoon dill weed
⅛ teaspoon white pepper
⅛ teaspoon paprika
2 tablespoons port wine
salt to taste

Steps:

  • Melt butter in a saucepan over medium heat. Stir in onion, and cook until it begins to brown. Sprinkle with flour and bouillon granules, and stir until the melted butter is absorbed.
  • Stir in salmon and 1/2 cup half-and-half. Stir in dill, white pepper, and paprika; cook about 10 minutes, stirring occasionally. Remove from heat, and let cool slightly.
  • In a food processor or blender, puree salmon mixture. Return to saucepan over medium-low heat, and gradually add remaining 1/4 cup half-and-half. Stir in the port, and cook 5 to 7 minutes. Season with salt to taste.

2 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
3 cloves garlic
2 salmon fillets
5 cloves garlic
1 cup fresh parsley
2 tablespoons fresh chives
2 tablespoons fresh dill
½ teaspoon salt
½ teaspoon pepper
2 tablespoons olive oil
¼ cup lemon juice
1 bunch asparagus
parmesan cheese, optional, to taste
¾ cup brownie mix, prepared
2 tablespoons vegetable oil
1 egg
1 tablespoon water
⅓ cup peanut butter

Steps:

  • For the Garlic Smashed Potatoes - Boil potatoes in a medium pot for 15-20 minutes or until tender.
  • Place boiled potatoes on a parchment covered oven tray and smash each potato down leaving the skin intact.
  • Mix melted butter, garlic, salt and pepper and brush mixture onto potatoes.
  • Bake at 425˚F (220˚C) for 15-20 minutes or until crispy.
  • Garnish with thyme.
  • For the Herb Crusted Salmon - In a small bowl combine parsley, chives, dill, olive oil, garlic, salt, pepper and lemon juice.
  • Place salmon and asparagus on parchment covered oven tray.
  • Drizzle with olive oil and garnish with salt and pepper.
  • Spoon herb mix onto salmon fillets and coat evenly.
  • Bake at 425˚F (220˚C) for 12-14 minutes.
  • For the Chocolate Peanut Butter Skillet Brownie - In a medium mixing bowl, combine brownie mix, oil, water, and an egg and stir until evenly mixed.
  • Transfer mix into skillet.
  • Spoon softened peanut butter into skillet and mix in using a knife.
  • Bake at 350˚F (180˚C) for 10-15 minutes or until toothpick comes out of the brownie clear.
  • If desired, garnish with ice cream.

2 cups sliced leeks
1/2 lb sliced mushrooms
1 tablespoon crushed garlic
46 ounces clam juice or 46 ounces fish stock
4 cups canned crushed tomatoes in puree
1/2 cup chopped fresh parsley
2 teaspoons dried dill weed
1 teaspoon salt
1/2 teaspoon pepper
4 cups salmon, boned and cut into 1/2 inch cubes
4 cups cream
1/4 cup flour
fresh dill sprig (to garnish)

Steps:

  • Melt butter in a large pot. Add leeks, mushrooms & garlic. Saute' for approximately 5 minutes. Add clam juice, tomatoes, parsley, dill salt & pepper. Heat broth to almost boiling & add salmon. 1/4 lb. angel hair pasta, uncooked
2 cups small broccoli florets
1-1/2 Tbsp. olive oil
2 cloves garlic, minced
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 400°F.
  • Mix mayo, mustard and dill until blended. Place fish in shallow ovenproof dish; drizzle with lemon juice. Spread with mayo mixture; sprinkle with cracker crumbs.
  • Bake 12 to 14 min. or until fish flakes easily with fork. Meanwhile, cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 2 min.
