Butter Garlic Herb Salmon Foil Packets image

Butter Garlic Herb Salmon Foil Packets are made with tender and flaky salmon with fresh summer veggies. They cook to perfection with the best garlic herb compound and will become a family favorite!

Number Of Ingredients 13

4 6 ounce salmon filets
1 bunch asparagus (chopped into thirds)
1 red pepper (chopped into 1 inch pieces)
1 zucchini (sliced)
1 yellow squash (sliced)
salt and pepper
½ cup butter (room temperature)
¼ cup freshly chopped parsley
4 garlic cloves (minced)
1 teaspoon fresh rosemary (chopped)
1 teaspoon fresh thyme (chopped)
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Place four 18x12-inch pieces of heavy aluminum foil on counter. Place the salmon fillets in the center and evenly place vegetable mixture on each piece of foil.
  • To make the garlic herb butter: In a small bowl add the butter, parsley, garlic, rosemary, thyme, salt and pepper. Divide evenly and place on top of the salmon. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  • Place packets on the grill and cover. Grill or bake at 400 degrees for 15-20 minutes or until salmon is cooked through and veggies are tender. Carefully open packets and serve.

These Salmon Foil Packets are quick and easy to make! The perfect way to make juicy and flavorful salmon baked in foil packets, in the oven, in just 20 minutes.

2 salmon fillets
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices of lemon
1 teaspoon minced garlic (divided)
1 tablespoon unsalted butter (thinly sliced into four pieces)
parsley and dill (for garnish)

Steps:

  • Preheat the oven to 400 degrees F.
  • Prepare sheets of aluminum foil, one per piece of salmon.
  • Arrange salmon on foil. Season with salt and peppers.
  • Place lemon slices and butter on top of each piece of fish.
  • Bring the sides of foil together to make packets.
  • Cook for 18 to 20 minutes in the oven.
  • Once done, remove from the oven and baking sheet. Wait a few minutes until the packets are cooler and safer to handle.
  • Serve with veggies, rice or pasta.

Baking salmon in a foil packet it a very healthy way of preparing fish, because you don't need to use any fat for the baking process. I season the salmon with an exotic mix of marjoram, lemon, and star anise, but you could use the same method with different herbs and spices.

olive oil
2 medium onions, halved and sliced
1 teaspoon dried marjoram
salt and freshly ground black pepper to taste
2 lemons, sliced
5 pods whole star anise pods
⅓ cup water
aluminum foil
1 (1 1/2-pound) salmon fillet

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a skillet over medium heat and cook onions until soft and browned, about 10 minutes. Season with marjoram and a little salt. Remove from heat.
  • Place lemon slices in a single layer in a clean skillet over high heat and cook until lightly browned on both sides, about 3 minutes. Add star anise and water and bring to a boil. Remove from heat.
  • Cover a baking pan large enough to hold the salmon with sheets of aluminum foil, leaving an overhang on all sides. Lay onions in a single layer on the bottom; place salmon fillet on top, skin-side down. Rub fillet with salt and pepper. Cover with lemon slices and star anise. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges well.
  • Bake in the preheated oven until salmon flakes easily with a fork, 35 to 40 minutes. Remove from oven, open foil carefully, and serve.

1 small sweet potato, peeled and sliced into 1/4-inch slices
1 small zucchini, cut into 1/4-inch rounds
1 small yellow squash, cut into 1/4-inch rounds
1 ½ teaspoons smoky mesquite seasoning (such as Weber®)
1 (5 ounce) salmon fillet
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Set out 2 large squares of foil, nonstick side up, one on top of the other. Layer sweet potato, zucchini, and squash in the middle of the top sheet, seasoning each layer with mesquite seasoning. Place salmon filet on top. Fold over the foil to seal the packet tightly.
  • Bake in preheated oven until vegetables are tender and fish flakes easily with a fork, 20 to 25 minutes. Serve with lemon wedges.
