nnThis is a slightly more sophisticated, mayo-free, salmon salad studded with briny capers to create depth and contrast to the creaminess of the sour cream. I'm salivating as I type! Wild Salmon is a nutritional powerhouse and sour cream contains a healthy fat called Conjugated Linoleic Acid aka CLA and depending on what type of sour cream you buy- it could even have probiotics!

This is a very quick and tasty great salmon salad that can be eaten as a sandwich on thickly sliced specialty bread (fantastic on foccacia). To serve as a salad, mound mixture on a bed of lettuce, or on an avocado half.

  • Spread each cracker with salmon salad and top with avocado slices and watercress leaves. Season with salt and pepper and squeeze with lemon.
  • Slice each cracker in half with a serrated knife.

1 teaspoon Dijon mustard
1 teaspoon freshly squeezed lemon juice
1 medium scallion, chopped

salt and ground black pepper to taste
1 ½ cups cooked flaked salmon

Steps:
