Easy Salsa Chicken is made with four ingredients for a high protein, low carb meal with a lot of flavor! This salsa chicken recipe is easy and delicious!

4 boneless (skinless chicken breasts (either 4 small chicken breasts or 2 larger ones cut in half))
4 tsp. taco seasoning
1 cup salsa
1 cup shredded cheese (cheddar, fiesta blend, etc.)

Steps:

  • Place the chicken breasts in a lightly greased baking dish. Sprinkle half of the taco seasoning on top of the chicken breasts and then turn them over and sprinkle the remaining taco seasoning on the other side of the chicken.
  • Pour the salsa all over the top of the chicken and then bake in the oven at 375° for about 25-30 minutes. The time may vary depending on the size of the chicken breasts. I like to use a meat thermometer to make sure the chicken is done perfectly every time. Chicken should cook to an internal temperature of 165°.
  • As soon as the chicken is done, sprinkle the cheese on top and put back in the oven for about 2-3 minutes or until cheese is melted. If you want to brown the cheese a little bit, you can broil it for a minute or two. Serve immediately.

4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  • Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  • Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

1 tablespoon baby capers
1 tablespoon chopped salted anchovies
2 tablespoons fresh tarragon, leaves and stems

Steps:

  • Preheat the oven to 350°F
  • Mix all the salsa the ingredients together. Season with sea salt and freshly ground black pepper.
  • Separate the skin of the chicken from the breast - without completely removing it and spread the salsa butter underneath.
  • Heat an oven-proof frying pan and brown the chicken on both sides.
  • Place in the oven for 8 - 10 minutes until the chicken is cooked through.
  • Serve with salad leaves.

1 1/2 cups Old El Paso™ Thick 'n Chunky hot salsa
1/2 cup peanut butter
1/4 cup lime juice
2 tablespoons soy sauce
2 teaspoons grated gingerroot
1/4 cup chopped peanuts
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 375°F. Spray rectangular pan, 13x9x2 inches, with cooking spray. Place chicken, skin side down, in a single layer in pan.
  • Mix salsa, peanut butter, lime juice, soy sauce and gingerroot; spoon over chicken.
  • Cover and bake 30 minutes. Turn chicken pieces and spoon pan sauces over chicken. Bake uncovered 20 to 30 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut. Sprinkle with peanuts and cilantro.
