Steps:
- Melt the caramel candies with the heavy cream and butter in a medium-size saucepan on low heat, stirring often. Add the marshmallows and, stirring often, heat until they're completely melted. Place the popcorn in a large bowl and pour the caramel mixture on top. Working quickly, using a rubber spatula that has been sprayed with cooking spray, gently fold the caramel mixture into the popcorn. Immediately, spray your hands with cooking spray and form the popcorn balls into the size of golf balls. Place them on a nonstick cookie sheet to cool. Meanwhile, fill a small saucepan with an inch of water and bring it to a boil. Place the chocolate in a small bowl and then melt it over the boiling water. Drizzle the chocolate on top of the popcorn balls with a teaspoon. Then, sprinkle the sea salt on top.

Steps:
- Light coat a 12-cup muffin tin with cooking spray.
- Combine the popcorn, pretzel pieces, 1 cup of the peanut butter chips and 1 cup of the milk chocolate chips in a large bowl. Toss to distribute evenly.
- Melt the butter, confectioners' sugar, corn syrup and marshmallows in a large microwave-safe bowl in 15 second intervals, stirring between each interval, until completely melted.
- Pour the melted marshmallow mixture over the popcorn mixture and stir until evenly coated. Quickly, but gently form twelve 2 1/2-to-3-inch-diameter balls with either your hands or a large cookie scoop lightly coated with cooking spray. Pretend you're making snowballs, but don't pack them too hard. Place each of them in a well of the prepared muffin tin so they hold their shape as they cool.
- When the popcorns balls are cool, melt the remaining 1/2 cup peanut butter chips, the remaining 1/2 cup milk chocolate chips and the white chocolate chips in each of 3 small microwave-safe bowls in 15 second intervals, stirring occasionally. Transfer the melted chips to each of 3 small piping bags or resealable bags. Snip the tips and drizzle over the popcorn balls. Top evenly with the crushed potato chips and let set, about 30 minutes, before serving.

The kids love helping me make these. They are wonderful for school party treats. Also, you can add almonds or peanuts for an extra flair.

GRANDMA'S CARAMEL POPCORN BALLS
My mom made these delicious popcorn balls when I was growing up. While doing my Christmas candy and cookie baking, I came across her recipe. I made the family recipe for the first time this year. My daughters, grown with their own families, asked why I hadn't made these sooner. Thirty plus years later, this recipe will now be a family tradition at Christmas.

- Coat two rimmed baking sheets with cooking spray then add an equal amount of popcorn to each one. Spread in an even layer then distribute peanuts and pretzel pieces equally over the popcorn. Set aside while you prepare the caramel.
- Add butter, brown sugar, corn syrup and 1 tsp salt to a very large saucepan—the mixture will foam up and triple in volume. Bring to a boil over medium heat.
- Once mixture has reached a full rolling boil, reduce heat to medium-low then simmer exactly 5 minutes, stirring occasionally.
- Remove from heat then stir constantly while carefully adding baking soda, vanilla, and rum—the mixture will bubble vigorously and foam up, so be prepared! Drizzle caramel evenly over popcorn mixture then use two wooden spoons (like you are tossing a salad) to coat popcorn mixture in the hot caramel.
