1/4 cup salsa
1/8 teaspoon chili powder
1/8 teaspoon ground cumin
1/8 teaspoon pepper
3 breakfast turkey sausage links, casings removed
1/4 cup shredded reduced-fat cheddar cheese
4 fat-free flour tortillas (6 inches), warmed

Steps:

  • In a small bowl, whisk the eggs, salsa, chili powder, cumin and pepper; set aside., Crumble sausage into a large skillet; cook over medium heat until no longer pink. Drain. Push sausage to the sides of pan. Pour egg mixture into center of pan. Cook and stir until set. Sprinkle cheese over the top. Remove from the heat; cover and let stand until cheese is melted., Place 1/2 cup mixture on each tortilla; roll up.

¼ cup refried beans
2 (10 inch) flour tortillas
1 tablespoon vegetable oil
2 eggs
2 tablespoons egg whites
¼ cup grated Cheddar cheese
2 tablespoons salsa
2 tablespoons sour cream

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Wrap tortillas in aluminum foil; place in the preheated oven.
  • Cook bacon in a skillet over medium heat until browned, about 5 minutes. Remove bacon from skillet. Cook and stir refried beans in bacon grease until heated through, about 1 minute. Cover beans and remove from heat.
  • Whisk together eggs and egg whites in a bowl until uniform, about 1 minute. Heat oil in a skillet over medium heat, add egg mixture. Cook and stir until almost solid, about 2 minutes; stir in Cheddar cheese and remove from heat.
  • Top each warm tortilla with 2 tablespoons of refried beans, 2 bacon strips, half of the eggs, 1 tablespoon of salsa, and 1 tablespoon of sour cream. Roll tortillas into burritos.

3 lbs potatoes
3 tablespoons olive oil
salt
pepper
8 large eggs
1 cup cheddar cheese (shredded)
1/4 cup bacon (chopped)
4 (8 inch) flour tortillas

Steps:

  • 1. Peel and cube potatoes.
  • 2. In a large frying pan add 2 tablespoons olive oil and heat up, add potatoes and salt and pepper. Cook through stiring often but gently. Once done set aside.
  • 3. Fry eggs to over-easy/meadium in remaining olive oil (I also salt and pepper the eggs), remove from pan and cut up the eggs with a fork.
  • 4. On a tortilla spead 1/4 of the potatoes in a line down the center, add two of the chopped up eggs on top of potatoes, sprinkle with bacon bits and cheese.
  • 5. While tortilla is still open microwave on high for 30 seconds to melt the cheese and warm the tortilla, roll up and serve.

12 slices bacon, diced
12 eggs, lightly beaten
salt and pepper
10 flour tortillas, 8 inches
1 1/2 cups cheddar cheese, shredded
1/2 cup green onion, thinly sliced

Steps:

  • In a large skillet, cook bacon until crisp, place cooked bacon on paper towels to drain.
  • Reserve 1-2 tablespoons bacon drippings and discard the rest.
  • Add eggs, salt and pepper to drippings, cook and stir over medium heat until the eggs are completely set.
  • Spoon about 1/4 cup of egg mixture down the center of each tortilla, sprinkle with cheese, onions and cooked diced bacon.
  • Fold bottom and sides of each tortilla over filling.
  • Wrap each burrito in waxed paper and aluminum foil.
  • May freeze for up to 1 month.
  • To use frozen burritos:
  • Remove foil. Place burritos on a microwave safe plate. Microwave at 60% power for 1 to 2 minutes or until heated through. Allow to sit for 20 seconds before eating.
