INCREDIBLE SOFT DINNER ROLLS (ABM)



Incredible Soft Dinner Rolls (ABM) image

Made these for our Thanksgiving dinner and they are awesome! Very light and tasty and the dough is so easy to handle.

Yield 20 rolls

Number Of Ingredients 7

1 cup warm water
2 tablespoons soft butter
1 egg
3 1/4 cups bread flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons active dry yeast

Steps:

  • Place all ingredients in bread machine in the order according to manufacturers directions.
  • Select dough cycle.
  • When cycle is complete, remove dough from pan.
  • Cover and let rest for 10 minutes on lightly floured surface.
  • Grease a large cookie sheet.
  • Divide dough into four parts, then cut each part into 5 pieces.
  • Shape each piece into a ball and place 2" apart on cookie sheet.
  • Cover and let rise for 30 minutes or until double in size.
  • Heat oven to 375° and bake for 12 to 15 minutes or until golden brown.
  • Remove from oven and brush tops with melted butter.
  • Serve warm or cool on wire rack.
  • Notes: Do not use delay cycle on your bread machine.
  • For rolls with soft sides, place rolls close together on cookie sheet and let rise.

Tasty, light and fluffy rolls. Can be made smaller for dinner rolls or as sandwich rolls. Crusty outside and soft inside. These pack a great punch when paired with grilled chicken or pulled pork or even steak sandwiches. I even made these for fancy hamburger rolls and received raves for the flavor enhancement of the burger. Adopted from a bread machine recipe I had. Prep time includes putting together and rising time once assembled. Times may change for rising based on altitude and temperature. Prep time does not include dough cycle

1 1/4 cups water
1 tablespoon sugar
2 teaspoons garlic (can be less, we love garlic)
2 teaspoons dried Italian herb seasoning
1/3 cup parmesan cheese
3 cups bread flour
1 tablespoon fast rising yeast

Steps:

  • Place all ingredients in bread machine as per directions from your unit.
  • Program to dough cycle, GO!
  • Once done, place dough onto lightly oiled surface and cut into 8 pieces.
  • Shape into balls.
  • Place on greased cookie sheet , flatten slightly.
  • Let rise in warm area until doubled.
  • Preheat oven to 400°F; brush buns with water, sprinkle top with a little bit of cheese, or for change a bit of garlic powder, Italian herbs, or for a kicker spicy herb. Bake 15 min or until lightly browned.
  • Serve warm or cool completely.
  • Can be frozen in double wrapped sealed container bag or ziploc. remember to take out as much air as possible. Good for a month.
  • To reheat: thaw completely and put into warmed oven for homey smells and freshness.

I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

1 (.25 ounce) package active dry yeast
1 ½ cups warm water (100 to 110 degrees F)
1 ½ teaspoons fine salt
19 ounces bread flour

Steps:

  • Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
  • Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
  • Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
  • Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
  • Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
  • Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
  • With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
  • Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

MOM'S AIR BUNS (ROLLS)

This recipe for light, soft, buns did NOT come from my Mom, but it is so good that I dedicate it to all Moms who bake bread..or anyone who bakes bread for that matter! I will give the original recipe, but I admit that I now use the ABM to knead the dough, and will give instructions for this variation at the end. Preparation time is the length of time for the "dough" cycle on my bread machine. For anyone wishing to make 100% whole wheat buns,(a variation of this recipe, and equally delicious IMHO), I have submitted it as recipe #168802 with minor alterations. More tweaking...I now like Mom's 100% Whole Grain Air Buns, recipe #186744 even better for a healthier version.

1/2 cup warm water
1/2 tablespoon yeast
1 teaspoon sugar
1/4 cup lard (I use shortening)
1/4 cup granulated sugar
1/2 teaspoon salt
1 tablespoon white vinegar
1 1/4 cups warm water
1 1/2 cups white bread flour
3 cups more white bread flour

Steps:

  • Mix the 1/2 cup warm water, yeast, and 1 tsp sugar, and allow to proof.
  • Melt the lard, and mix in sugar, salt, vinegar, and warm water. When body warm, add the proofed yeast, and beat in 1 1/2 cups flour. Let rest for 15 minutes.
  • Knead in approximately 3 cups more flour.
  • Let dough rise till double (approximately 2 hours).
  • Deflate dough, and form into buns, any size, (I make 16 large) or loaves. Rise till double (takes approximately one hour, but depends on size/shape chosen).
  • Bake buns at 350°F for approximately 20 minutes.
  • For ABM, in my machine, on the "dough" cycle, I use 2 teaspoons of bread machine yeast, and I reduce the water to about 1 1/2 cups, the flour to 4 cups, adding a tad more water or flour as it kneads to get a smooth,soft ball of dough. I leave the other ingredients as posted.

MAKE-AHEAD SANDWICH ROLLS



Make-Ahead Sandwich Rolls image

6 flatbreads or tortillas in assorted colors/flavors (2 red, 2 green, 2 white)
12 slices American cheese
1 pound shaved turkey
1 head romaine lettuce, shredded
1 pound shaved smoked ham
1 cup mayonnaise
1 canned chipotle chile in adobo, diced
Kosher salt and freshly ground black pepper
Serving suggestions: mayonnaise and Dijon mustard

Steps:

  • For the sandwich rolls: On each piece of flatbread, lay 2 slices of American cheese, a layer of shaved turkey, a layer of lettuce and finally a layer of shaved ham. Roll each flatbread into a large roll and wrap in plastic wrap. Refrigerate for several hours.
  • For the chipotle mayonnaise: In a medium bowl, mix together the mayonnaise, diced chipotle and salt and pepper to taste.
  • When ready to serve, remove the flatbreads from the fridge and slice each into 4 or 5 thick rounds. Serve with the chipotle mayonnaise, regular mayonnaise and Dijon mustard.

I do not like to buy rolls from the store. They smell funny to me. This is a nice way to make them at home, in your bread maker. No fuss, No paying for junk at the store. They will taste wonderful, fresh out of the oven, whether you use them for sandwiches or not! I only have a copy of this recipe. I am not sure of the name of the book, but it might be: The Bread Machine Cookbook I.

1 teaspoon salt
3 -3 1/4 cups bread flour
1/3 cup powdered milk or 1/3 cup dry buttermilk

  • Place all ingredients in order suggested by your bread machine manufacturer.
  • Use dough cycle.
  • When dough is finished, remove from machine.
  • Form into 10- 12 balls.
  • Shape into rolls.
  • Let rise for 40- 50 minutes on a lightly greased baking sheet.
  • Bake in a preheated oven 375* for 20 minute or until golden brown.

I came up with this recipe when I needed a recipe for sturdy sub buns. So I combined a couple of recipes, and these came out just like Mancino's grinder buns. Slightly crisp on the outside, slightly soft on the inside and sturdy enough to hold up to the hardiest of fillings.

Number Of Ingredients 10

1 cup warm water
1/4 ounce active dry yeast (quick rise)
2 tablespoons lard or 2 tablespoons shortening, softened
2 tablespoons sugar
1 teaspoon salt
2 1/2 cups bread flour
3 tablespoons water
1 tablespoon cornstarch
1 tablespoon cornmeal
olive oil flavored cooking spray

Steps:

  • Put first 6 ingredients into bread machine in order that your machine calls for. Mine is water, lard,sugar, salt, flour then yeast.
  • Set machine to dough setting and let run through.
  • Spray a baking sheet with olive oil cooking spray then sprinkle very lightly with cornmeal.
  • Divide dough into 4 equal parts. Take each part and roll it into a rope about 12 inches long. Set the rope down, then flatten to about 3 -4 inches wide and roughly square off the ends with your fingers. Should look like a flat rectangle.
  • Place shaped dough onto prepared pan.
  • Spray plastic wrap with olive oil spray and cover dough spray side down and let rise until doubled in size.
  • Preheat oven to 375 degrees F.
  • Remove plastic wrap from dough. Mix together 3 Tbs cold water and the cornstarch. Brush cornstarch mixture over the rolls then put in oven. Discard remaining cornstarch mixture.
  • Bake until golden brown, about 20 minutes.
  • Let cool completely.
  • To slice in half for hoagies, place the bun flat on the counter. Place your hand on top of the bun, holding it flat down, while you slice through it with a long serrated bread knife.
  • Fill with your fave fillings and enjoy!

Soft egg dinner roll. These are our families favorites for holiday dinners - but we make them for almost any reason. I've even used this recipe for hamburger buns! They end up being rather large or good size rolls! They freeze well too - if you wrap well. Very tasty!!! You'll probably not switch to another after trying this one! (Cook time does not include the time on bread machine dough cycle).

This makes fairly large rolls that can be served with dinner or as sandwiches. Easy recipe and leftover rolls can be frozen for later use.

3 1/2 cups flour
2 teaspoons active dry yeast
1 1/4 cups milk
1/4 cup sugar
1/4 cup shortening
1 teaspoon salt
1 egg
2 tablespoons butter, melted

Steps:

  • Add all ingredients EXCEPT melted butter to bread machine in order as directed by manufacturer.
  • Set for dough cycle.
  • Check dough after a few minutes and if needed add a little more milk or water to make a smooth dough.
  • When dough cycle is complete, remove dough, punch down and let rest for ten minutes.
  • Lightly grease 13 x 9 glass baking dish.
  • Divide dough into 18 pieces and place in pan.
  • Dough will be sticky, so don't try to roll smooth balls.
  • The rolls will smooth out when they rise and are baked.
  • Let rise in warm place for 30 to 40 minutes until doubled.
  • Drizzle melted butter over top of rolls and bake at 400° for 10 to 15 minutes until golden brown.
