CHICKEN AND DUMPLINGS
This comfort-food recipe combines chicken thighs, plump dumplings, and plenty of vegetables for a meal that's warm and filling. Everything is ready in about an hour, so try them for a weekend meal.

- In a Dutch oven (or a 5- to 6-quart heavy pot with a tight-fitting lid), heat butter over medium. Add onion, carrots, and thyme. Cover and cook, stirring occasionally, until onion is soft, about 5 minutes.
- Add 1/4 cup flour and cook, stirring, 30 seconds. Add broth and bring to a boil, stirring constantly; season with salt and pepper. Nestle chicken in pot; reduce heat to medium-low. Cover and cook, stirring occasionally, 20 minutes.
- Meanwhile, make dumplings: In a medium bowl, whisk together remaining 3/4 cup flour, dill, baking powder, and 1/2 teaspoon salt. With a fork, gradually stir in 1/2 cup milk to form a moist and soft batter. It should be just a little thicker than pancake batter and should easily drop from the tip of a spoon. (Add additional 2 tablespoons milk if too thick.) Set aside.
- Stir peas into pot. Drop batter in simmering liquid in 10 heaping tablespoonfuls, keeping them spaced apart (dumplings will swell as they cook). Cover, and simmer until chicken is tender and dumplings are firm, 20 minutes. Serve.

- In a large, heavy-bottomed pot or dutch oven melt 6 tbsp butter over medium high heat.
- Add the onion and carrots and cook for 5 minutes. Add garlic and peas and cook for 1 minute more.
- Add 3 tbsp of flour to the pot and stir to combine. Add evaporated milk and chicken stock. Stir to combine.
- Bring the pot to a boil and add the chicken and thyme. Season with salt and pepper. Add 1 tbsp lemon juice. Let the soup simmer for about 10 minutes, uncovered, while you make the dumplings.
- In a large bowl, whisk together the flour, baking powder, salt and thyme. Pour the milk and butter into the center of your bowl. Stir in the milk and butter until a soft dough forms.
- Once your dough is formed, use a large cookie scoop or spoon to create balls of dough. Roll the dough gently into 9 - 10 balls.
- Place the balls of dough onto the surface of the pot, taking care to place them around the pot and not overlapping if possible.
- Press the dough balls down into the pot so that they are covered by the liquid.
- Add the lid to your pot and reduce the heat to a simmer. Simmer for 15 minutes, until the dough is cooked through. Test a dough ball to see if it's cooked through before removing the pot from the heat. If it's not cooked through, keep simmering the pot for 3 - 4 more minutes.

CHICKEN WITH FLUFFY DROP DUMPLINGS

- Gather the ingredients.
- Melt the butter with the olive oil in a Dutch oven or stockpot over medium heat.
- Pat the chicken pieces dry with a paper towel.
- Sear chicken pieces in the butter and olive oil mixture until they are just brown on all sides, about 4 to 5 minutes.
- Add the water, celery, onion, garlic, thyme, parsley, bay leaf, seasoned salt, and pepper. Cover and bring to a boil; then simmer for 1 to 2 hours, or until the chicken is cooked and tender.
- Remove the chicken meat from the bones, chop meat, and return to the pot.
- Stir the flour in a small bowl with just enough cold water to make a smooth paste.
- Add the flour paste to the hot stew, stirring until thickened over medium heat.
- Gather the ingredients.
- In a bowl, whisk together the 1 cup of flour, baking powder, poultry seasoning and salt; blend well.
- Cut the shortening into the flour mixture using a fork, and add the fresh parsley.
- In a separate bowl, whisk together the egg and milk.
- Add to the dry mixture and stir with a fork until well blended into a sticky, shaggy dough.
- Drop dumplings by teaspoonfuls onto chicken soup. Cover, and steam for 10 minutes, or until dumplings are fluffy and cooked through inside.

- Heat milk and butter for dumplings in a small saucepan over medium heat until butter melts, 2 to 3 minutes. Remove from heat.
- Combine flour, baking powder, parsley, and salt in a bowl. Stir in club soda and milk mixture until dough forms a ball, making sure not to overmix. Cover dumpling dough and let stand for 30 minutes.
- Combine chicken stock and cream of chicken soup in a large saucepan or Dutch oven. Bring to a simmer over medium-high heat. Add chicken, potatoes, onion, celery, carrot, bell pepper, peas, lemon, and thyme. Poach until chicken is no longer pink in the centers and vegetables are tender, about 12 minutes. Transfer chicken to a plate to cool; transfer vegetables to a bowl, leaving stock in the pan. Discard thyme and lemon.
- Boil remaining stock over medium-high heat until reduced by 1/3, 5 to 7 minutes.
- Meanwhile, pour cream into a small saucepan and heat over medium-high heat. Cook until reduced by about 1/2, 7 to 10 minutes. Whisk into reduced stock. Season with salt and pepper and set aside.
- Chop cooled chicken into bite-sized pieces.
- Melt butter in a small skillet over medium-high heat. Add mushrooms, season with salt and pepper, and saute for 2 to 3 minutes. Stir into stock mixture and add chicken and cooked vegetables.
- Bring soup to a simmer over medium heat, adding more stock if necessary. Drop dumpling dough by teaspoons into the mixture. Cover and let simmer for 7 to 8 minutes. Serve hot garnished with parsley and green onion.

- Separate the chicken legs from the thighs, and season with salt and pepper, to taste. Coat the pieces with the flour, shaking off any excess and reserve the leftover flour. Put the oil into a heavy bottomed skillet and heat it over medium-high heat. Add the chicken and brown it on all sides, about 5 minutes per side. Remove the chicken to a plate and add the carrots, celery, onion, mushrooms, and corn. Sprinkle with the reserved flour, and give it a good stir. Add chicken broth and stir. Nestle the chicken pieces into the vegetables and add enough water to just cover the chicken. Bring to a boil, reduce the heat, cover, and simmer for 20 minutes.
- Just before the cooking time is up combine the baking mix, poultry seasoning, and milk in a small bowl. Drop the batter by tablespoons on top of the simmering chicken leaving some room between the dumplings. Cover and simmer for 20 minutes. Serve hot.

- Place the chicken in a Dutch oven, and add the water, broth, carrot, onion, celery and salt.
- Bring to a boil, cover and lower heat. Simmer for 60 to 70 minutes, or until tender and chicken is done.
- Remove chicken and allow it to cool enough to handle.
- Remove the carrot, onion and celery pieces from the broth and discard.
- Reserve the broth.
- Bone the chicken, discarding all skin and bones, and cut meat into bite-size pieces. Set aside.
- THE DUMPLINGS:
- Combine the flour, baking soda and 1/2 teaspoon salt; cut in the shortening with a pastry blender or two knives until mixture is consistency of coarse meal.
- Add the buttermilk, stirring just until dry ingredients are moistened.
- Turn dough out onto a floured surface and knead 4 or 5 times -- no more.
- FOR DROP DUMPLINGS:.
- Pat the dough down to a 1/4-inch thickness, and pinch off 1-1/2-inch pieces.
- FOR ROLLED DUMPLINGS:
- Roll the dough to a 1/4-inch thickness, and cut into 3" x 1" strips.
- Bring the chicken broth to a boil, and stir in the milk and pepper.
- Correct seasonings, if desired.
- Drop dumplings, one or two at a time, into the boiling broth and reduce heat to medium-low.
- Stir from time to time to make sure dumplings do not stick together.
- Cook dumplings 8 to 10 minutes. Add the boned chicken to the mixture and simmer until heated through.
- Remove from heat.
- Makes 4 to 6 servings.
- Notes: Dumpling dough is very similar to biscuit dough and, like biscuit dough, the less it is handled, the lighter and more tender the result.

CHICKEN AND DUMPLINGS
Steps:
- Remove skin from chicken and shred meat into large pieces. Set aside.
- In a small frying pan, add vegetable oil and heat over medium heat. When oil is hot, add chopped onions and saute until soft.
- In a large pot or Dutch oven, add broth, poultry seasoning, salt, pepper, carrots, celery, and sauteed onions. Bring to a boil. Reduce to simmer for about 10 minutes to soften vegetables, and then add shredded chicken. Continue to simmer while making dumplings.
- While stew is simmering, prepare dumplings. Open can and remove biscuits. On a lightly floured surface, roll each biscuit to 1/4-inch thick. With a knife, cut each biscuit into 4 pie-pieces. Set aside.
- Skim surface for any scum that has risen to top. Stir in chicken gravy.
- With the stew still simmering over low heat, stir in dumplings a few at a time. Once all dumplings are in to pot, cover with a tight fitting lid and cook for 10 minutes.
- Ladle into bowls and serve piping hot.
