These hearty cookies are packed with wholesome dried fruits and nuts. They borrow their delicious flavors from the traditional holiday fruitcake.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups sweetened shredded coconut
1 1/2 cups chopped dried apricots
1 1/2 cups chopped dates
1 1/2 cups chopped macadamia nuts
1 1/2 cups chopped pistachios

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking soda, and salt in a medium bowl.
  • Put butter in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until smooth. Add sugars, and mix until pale and fluffy, about 3 minutes. Mix in eggs one at a time until combined; mix in vanilla.
  • Reduce mixer speed to low. Add flour mixture and mix until just combined. Stir in coconut, apricots, dates, macadamias, and pistachios.
  • Drop batter, 2 heaping tablespoons at a time, onto prepared baking sheets, spacing 2 inches apart. Flatten slightly. Bake, rotating sheets halfway through, until golden brown, 12 to 15 minutes. Remove from oven; transfer cookies on parchment paper to a wire rack to cool completely.

3 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 1/2 sticks (12 tablespoons) unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
Gel-paste food coloring, optional
Royal Icing, recipe follows
Edible decorations, such as sprinkles or candy balls, optional
1/4 cup meringue powder
8 cups sifted confectioner's sugar

Steps:

  • In a large bowl, use a whisk to combine the flour, salt and baking powder. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium speed until light and fluffy, 3 to 5 minutes. Add the eggs and vanilla extract and beat until completely combined.
  • Reduce the mixer speed to low and add the flour mixture slowly, about 1/2 cup at a time until finished, mixing until just combined. Form the dough into 2 disks and wrap in plastic. Refrigerate until slightly firm, about 1 hour, or up to overnight.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper, or spray with cooking spray.
  • Roll the dough out onto a floured work surface and use cookie cutters to cut out shapes, then transfer to the prepared baking sheets, leaving about a 2-inch space between each cookie.
  • Chill the cut-out cookies on the baking sheets for about 15 minutes before baking for a more precise shape. Bake until just starting to become crisp and golden around the edges, about 15 minutes. Remove the cookies to a rack and let cool completely.
  • Use food coloring to tint Royal Icing into different colors. To decorate, cover the cookies with the Royal Icing, then sprinkle on decorations while the icing is still wet. Let the icing set completely.
  • Add the meringue powder to 1/2 cup water in the bowl of a stand mixer fitted with the whisk attachment and whip for about 30 seconds. Slowly add the confectioner's sugar, and continue to beat until medium peaks form. If the icing is too stiff, add water a tablespoon at a time. Keep covered until ready to use. Transfer to a squeeze bottle for easier decorating.

1-1/2 cups all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup shortening
1/2 cup whole milk
1 cup chopped mixed candied fruit
1/2 cup chopped walnuts
ICING:
1 cup confectioners' sugar
1 to 2 tablespoons whole milk

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in shortening until crumbly. Stir in milk just until moistened. Stir in fruit and nuts., On a floured surface, roll or pat dough into a 12x6-in. rectangle. Cut into 4x1/2-in. strips. Form into "S" shapes; place 1 in. apart on greased baking sheets., Bake at 425° for 6-8 minutes or until lightly browned. Cool on wire racks. Combine confectioners' sugar and enough milk to achieve a drizzling consistency; drizzle over cookies.

1 roll (16.5 oz) Pillsbury®refrigerated sugar cookies
2 cups powdered sugar
2 tablespoons butter or margarine, softened
2 to 3 tablespoons milk
2 to 3 drops red food color
68 semisweet chocolate chips (about 1/4 cup)
34 cinnamon candies
2/3 cup coconut
34 miniature marshmallows

Steps:

  • Freeze cookie dough at least 1 hour.
  • Heat oven to 350degreesF. Cut chilled dough into 1/4-inch slices. (Return dough to freezer if it becomes too soft to cut.) On ungreased cookie sheet, place slices 3 inches apart.
  • Bake 8 to 12 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 5 minutes.
  • In small bowl, beat powdered sugar, butter and enough milk until smooth and desired spreading consistency. In small bowl, place half of frosting. Add red food color; stir until blended.
  • Frost cooled cookies with red and white frosting. Use small amount of frosting to attach chocolate chips for eyes and cinnamon candy for nose. Gently press coconut into white frosting for beard. Press marshmallow into red frosting for tassel on cap. Let stand until frosting is set. Store between sheets of waxed paper in tightly covered container.

Steps:

  • In a saucepan,boil together the raisins, chopped dates, chopped apples and water on low heat for 3 minutes. Allow to cool slightly, then add margarine, flour, baking soda and chopped nuts. Mix well; refrigerate overnight.
  • Drop by teaspoonfuls onto greased cookie sheet.Bake at 350 degrees.
  • 10 to 15 minutes. Cool on wire rack.

¼ teaspoon cream of tartar
⅛ teaspoon salt
½ cup white sugar
¾ teaspoon vanilla extract
1 cup chopped walnuts
2 cups semisweet chocolate chips

Steps:

  • Beat egg whites to a froth with cream of tartar and salt. Gradually add sugar.
  • Beat at medium speed for 10 minutes. Beat in vanilla. Stir in nuts and chocolate chips.
  • Drop by spoonfuls on a greased cookie sheet. Place in an oven preheated to 375 degrees F (190 degrees C). TURN OFF heat as soon as you put the cookies in. Leave in closed oven overnight.

1 cup shortening
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon cream of tartar
Dash salt
1 package (11-1/2 ounces) milk chocolate chips, melted
14 peppermint candies, crushed

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cream of tartar and salt; add to creamed mixture and mix well. Cover and refrigerate for at least 1 hour or until firm., Shape dough into 3/4-in. balls. Place 2 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks to cool., Dip one end of each cookie into melted chocolate; sprinkle with crushed peppermint. Place on waxed paper; let stand until set.
