SUPER EASY DOUGHNUTS
Really quick and easy donuts made from ingredients you probably already have. My 3 year old loves these because he can have them whenever he wants. There's hardly any waiting time. Use any topping you want. Our favorite is powdered sugar!

- Stir the vinegar into the milk, and let stand for a few minutes until thick.
- In a medium bowl, cream together the shortening and sugar until smooth. Beat in the egg and vanilla until well blended. Sift together the flour, baking soda, and salt; stir into the sugar mixture alternating with the vinegar and milk. Roll dough out on a floured surface to 1/3 inch thickness. Cut into doughnuts using a donut cutter. Let stand for about 10 minutes.
- Heat the oil in a large deep skillet to 375 degrees F (190 degrees C). Fry doughnuts in the hot oil until golden, turning over once. Drain on paper towels. Dust with confectioners' sugar while they are still warm, and serve immediately.

- Preheat oven to 350 degrees F (175 degrees C). Spray a mini muffin tin with cooking spray or line with paper cups.
- Place flour, sugar, milk, vegetable oil, egg, baking powder, salt, 1/2 teaspoon nutmeg, and 1/2 teaspoon ground cinnamon in a bowl. Mix dough by hand until well combined but some lumps remain. Fill muffin tin with dough.
- Bake in the preheated oven until tops spring back when lightly pressed, but color is not yet golden brown, about 15 minutes.
- Pour melted butter into a bowl. Mix 1/3 cup sugar, 1 tablespoon cinnamon, and 1 teaspoon nutmeg together in a separate bowl. Dip muffins in the butter coating; immediately roll in the cinnamon dusting.

FILL-YOUR-OWN DOUGHNUT HOLES

- Fill a medium Dutch oven with 3 inches of oil and heat to 350 degrees F.
- Pop open the can of biscuits, cut each biscuit into 4 pieces, roll each into a ball and then press flat like a small saucer.
- Gently drop half of the dough pieces into the hot oil and fry, flipping them as they cook so all sides brown evenly, until puffed and dark golden brown, 2 to 3 minutes. Remove with a slotted spoon and cool on a sheet pan lined with a wire rack. Repeat with the remaining dough.
- Place the raspberries in the bowl of a mini food processor or mash by hand until smooth. Fold the mixture into the whipped topping and transfer it to piping bags or squeeze bottles. Add 1 teaspoon of hot water to the jar of fudge. Stir until loosened and slightly warm, adding more water if necessary, then transfer the fudge sauce to piping bags or squeeze bottles
- Use a chopstick to poke a hole in one side of each doughnut to make a little space inside. Gently pipe the filling inside each doughnut until you feel it expand a little in your fingers, then stop and place on a cooling rack filled-side up. Sprinkle with confectioners' sugar. Serve immediately or at room temperature.

BENS MINI DOUGHNUT BITES
Nothing beats the smell or taste of fresh, home cooked doughnuts. These can be filled using a small piping bag with a 5mm nozzle on or served with seperate dips. A great little treat all the family will truly love.

- Slowly heat the milk in a saucepan until tepid (37ÃÂðC if using a thermometer). Whisk in the butter, caster sugar and the beaten eggs. Place the yeast into a bowl and and a little milk mixture to the yeast Use your hands to form a smooth paste. Transfer the yeast into the saucepan containing the milk mixture, whisking to combine.
- Sift the flour and ÃÂý teaspoon of salt into a large bowl and make a well in the centre. Gradually pour in the milk mixture, whisking until smooth. Cover the bowl with cling film and set aside in a warm place to prove for approx 1 hour.
- Place remaining caster sugar in a bowl.
- Pour oil into a saucepan until one-third full. Heat over medium-high heat until 165ÃÂðC.
- Spoon donut mixture into 2"/5cm round balls into the hot oil, ensuring you allow room in the pan for the balls to expand. Cook for 2 minutes then turn over, cook for another 2 minutes or until golden and cooked throughout. Remove from oil, drain on paper towel, then once they are cooled slightly, roll them in the sugar until adequately covered.
- If you are filling the doughnuts make an incision into the doughnuts and place jam (or other filling) into a small piping bag and attatch a 5mm straight-edged nozzle. Push nozzle into the centre of each donut and pipe enough jam to fill. Alternatively, place the jam, clotted cream and melted chocolate into small dipping pots and serve.
- Tip: To melt the chocolate, break into smaller pieces and place into a large bowl. put a couple of inches of water in a pan, boil the water then turn heat down to minimum. Place the bowl over the pan, ensuring the water is not touhing the base of the bowl. The Chocolate should melt after 5-7 minutes, ensure to keep stirring throughout until all lumps have disapeared and you have a lovely smooth texture.
DOUGH BALLS WITH GARLIC BUTTER
Serve a platter of warm dough balls with plenty of garlic butter. This easy recipe makes a great sharing-style starter for family and friends

- Warm 175ml water in a saucepan until steaming, then add the butter and set aside to cool until warm but not hot. Mix the flour, yeast, sugar and 1 tsp salt in a large bowl or tabletop mixer. Add the cooled water and mix to make a soft dough. Knead for 10 mins by hand, or for 5 mins in a mixer, until the dough feels bouncy and smooth. Return to a clean, oiled bowl and cover with oiled cling film. Leave somewhere warm to rise for 1½-2 hrs, or until doubled in size.
- Oil a baking sheet. Knock the air out of the dough and knead again for several mins. Take a small piece of dough (about the size of a walnut) and roll it into a ball. Place the ball on the baking sheet and repeat with the remaining dough, spacing the dough balls about ½ cm apart. Cover and leave to rise for 30 mins. Meanwhile, to make the garlic butter, melt the butter in a pan, then stir in the garlic. Season.
- Heat oven to 180C/160C fan/gas 4. The dough balls should be almost touching by now. Bake for 25-30 mins until cooked through. Brush with some of the garlic butter and leave to cool for 5 mins. Serve with the remaining garlic butter and a selection of crudités and cured meat, if you like.

- Combine all of the dry ingredients in a large bowl. In a separate bowl, whisk together the wet ingredients. Add the wet ingredients to the dry and stir until a sticky dough forms.
- Pour the oil into a large skillet or Dutch oven for frying, about 2 inches deep. Heat the oil to about 375 degrees or medium heat. You can test the oil by pouring a drop of water into the pan; if it sizzles across the top, it’s ready.
- With floured hands, roll the dough into small balls, about 1 1/2 inches in diameter. Drop the balls immediately into the oil (they start to lose their shape if you roll them ahead of time). The balls should start to puff out on the bottom and turn a golden brown color. If the tops of the donuts aren’t covered with oil, flip the donut balls and fry for another 1-2 minutes. When the donuts are cooked through, remove them from the frying pan and place them on a plate lined with paper towels.
- When the donuts are dry to the touch, roll them in cinnamon sugar. These are best served fresh and warm, but they will also last for a day or two in an airtight container. This recipe makes about 20 donut balls.
