SUNNY'S EASY CHICKEN PARMESAN
Steps:
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or nonstick aluminum foil and spray with cooking spray.
- Season each chicken breast with salt and pepper, then coat each breast with cooking spray. In a shallow bowl, mix the breadcrumbs and Parmesan. Press the chicken breasts into the mixture 1 at a time to coat on all sides, shaking off the excess. Transfer to the prepared baking sheet. Bake, flipping halfway through, until the juices run clear, 20 to 25 minutes.
- Remove the chicken from the oven and turn on the broiler. Spoon the pizza sauce evenly over the top of each chicken breast and top with a slice of mozzarella. Place under the broiler and watch for the cheese to melt and bubble. Serve.

- In large resealable food-storage plastic bag, mix bread crumbs, Parmesan cheese and 1/4 teaspoon pepper. Shake each chicken breast in bread crumb mixture; set aside.

QUICK BAKED CHICKEN PARMESAN
In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Whisk water and egg together in a bowl until smooth. Combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder in a separate bowl.
- Dip each chicken breast in egg mixture, allowing excess egg to drip back into bowl. Coat each chicken breast in bread crumb mixture, shaking off excess. Repeat dipping each coated chicken breast in the egg mixture and the bread crumb mixture for a double-coating and place in the prepared baking dish. Spray breaded chicken breasts with cooking spray.
- Bake in the preheated oven for 40 minutes. Pour spaghetti sauce over each chicken breast and top each with mozzarella cheese and remaining Parmesan cheese. Continue baking until chicken is no longer pink in the center and the cheeses are melted, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

SUPER SUPPERS PARMESAN CHICKEN WITH CREAMY SAGE SAUCE
This isn't a copycat recipe. This is THE recipe from Super Suppers. If you've ever made it, you know you love it. If you haven't, well get cooking already! By the way, the original recipe calls for Campbell's White Cream Sauce (Bechamel), but it is rather difficult to find. If you cannot find it, just use recipe #61333 and shoot for medium thickness.

- Preheat the oven to 350 degrees.
- Line a cookie sheet with foil and spray it with nonstick spray, or just use nonstick foil.
- In a medium bowl, mix together all of the ingredients under "chicken" except for the chicken, butter and oil.
- In a small measuring cup, mix together the oil and butter. This is called "liquid butter." You will need to save some of this for the sauce recipe.
- Add 1/4 cup of the liquid butter to the breadcrumb mixture and stir well.
- Coat each chicken breast with the mixture, pressing firmly while you coat.
- Place the chicken on the foil and bake for 40-45 minutes, until breading is golden brown.
- While the chicken is baking, make the sauce. Combine all of the sauce ingredients in a medium saucepan and whisk the ingredients together until well blended. Heat sauce until it simmers and serve with chicken. Enjoy!
SUPER EASY BAKED CHICKEN PARMESAN FOR TWO
This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

- Preheat the oven to 400 degrees F.
- Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
- Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
- Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
- Bake for 18 minutes, flipping once halfway through, until done.
- Take the chicken out and switch the oven to BROIL.
- Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
- Broil 2 minutes or until the cheese melts.
