An ideal winter recipe. The bread can be replaced by mashed potato or polenta. Serve with a salad or steamed vegetables.

2 tablespoons olive oil
1 large onion, sliced
1 medium carrot, sliced
2 cloves garlic, finely chopped
1 teaspoon white sugar
1 red bell pepper, seeded and chopped
6 fresh mushrooms, sliced
1 tablespoon all-purpose flour
½ cup water
1 tablespoon tomato paste
½ teaspoon dried basil
¼ teaspoon dried thyme
1 (14.5 ounce) can red kidney beans, drained
½ teaspoon salt
ground black pepper to taste
½ (1 pound) loaf French bread, cut into 1/2 inch thick slices
1 tablespoon olive oil
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, garlic and carrot; cook and stir until onion is tender and transparent. Stir in the sugar, red pepper and mushrooms and continue to cook until onion is browned.
  • Sprinkle the flour over the vegetables and stir to blend. Cook for 1 minute then mix in the water and tomato paste. Season with basil and thyme. Mix in the beans and season with salt and pepper. Transfer to a greased casserole dish.
  • Pour the remaining oil into a shallow dish. Dip one side of each slice of bread in the oil, then arrange on top of the casserole with the oiled side up. Sprinkle Parmesan cheese over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the bread and cheese are toasted.

STRING BEAN "CASSEROLE" SALAD

Kosher salt and freshly ground black pepper
1 pound haricots verts, trimmed and cut into thirds
1 red bell pepper, seeded and sliced
1/2 cup apple cider vinegar
2 ounces dried porcini mushrooms
3 cloves garlic, smashed
8 sprigs fresh thyme
1 tablespoon Dijon mustard
4 tablespoons mushroom soaking liquid
2 tablespoons olive oil
1/2 cup French-fried onions, lightly hand-crushed (recommended: French's)

Steps:

  • Fill up a large bowl of water and a few handfuls of ice, set aside.
  • Bring a large pot of water to a rolling boil. Add a heavy pinch of salt, the green beans, and the bell peppers. Stir to dissolve the salt and cook the vegetables until bright and still crisp, just a few minutes. With a sieve or slotted spoon, remove the vegetables to the bowl of ice water to stop them from over cooking. Once the vegetables are cooled remove them to a paper towel-lined baking sheet and pat dry.
  • To prepare the mushrooms: In a small saucepot on medium heat add 2 cups of water, the vinegar, mushrooms, garlic, thyme, and 1 teaspoon salt. Stir to dissolve the salt, cover and cook on medium heat for 15 minutes. Turn off the heat and let it rest covered for 15 minutes more.
  • To make the vinaigrette: Whisk together the mustard, 4 tablespoons of the liquid the mushrooms are soaking in, and olive oil in a small bowl. Season with some salt and a grind or two of pepper.
  • Shake the excess liquid off the mushrooms and add them to a large bowl along with the cooked vegetables and the vinaigrette. Toss and serve with fried onions sprinkled over the top.

1 1/2 pounds lean ground beef
1 small onion, finely chopped
1 bell pepper, cored, seeded, and finely chopped
Two 16-ounce cans pork and beans
1/2 cup barbecue sauce
1/2 cup ketchup
2 tablespoons spicy brown mustard
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 tablespoons brown sugar
6 to 8 slices bacon, cut into pieces and cooked

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9- by 13- by 2-inch casserole dish with cooking spray.
  • In a large saucepan, brown the ground beef, onions and bell peppers. Add the pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce and brown sugar to the mixture. Simmer for 5 minutes. Transfer the mixture to the prepared casserole dish. Sprinkle the bacon over the top of the casserole. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and continue to bake for an additional 10 minutes. Let the casserole stand for 10 minutes before serving.

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • In a large oven-proof skillet over medium heat, cook the bacon until almost crisp.
  • Add the minced onion to the bacon drippings and continue to cook until tender.
  • Add the cans of beans, the ketchup, corn syrup or brown sugar , and ground mustard; mix well.

8 ounces sliced mushrooms
2 tablespoons flour
1 cup milk

1 ½ pounds green beans, blanched, cooled and cut into 2" pieces

Steps:

  • Preheat oven to 350 degrees F. Butter a 9 x 9-inch baking dish.
  • In a small mixing bowl, combine all ingredients for topping and set aside.
  • Heat oil in a small skillet, add shallots and cook until tender, about 2 minutes. Add mushrooms and continue to cook until all moisture evaporates. Add flour and continue to cook for 1 minute. Pour in milk and stir until mixture is thick. Add cream cheese, salt and pepper and mix until smooth. Fold in cheddar cheese, add green beans and pour all into prepared baking dish.
  • Sprinkle topping mixture over beans and bake for 20 to 25 minutes or until heated thoroughly. Serve.

1 lb great northern bean
4 -6 lean pork chops
1 can tomato sauce
1 small onion, chopped fine
1/2 cup ketchup
1/2 teaspoon dry mustard
1 tablespoon brown sugar
1 tablespoon molasses

Steps:

  • Wash beans and cover with 6 cups of water; bring to a boil and boil for 3 minutes.
  • Cover, let stand for 1 hour.
  • Drain and throw away soak water.
  • Cover beans with fresh water and boil gently until tender.
  • Drain.
  • Brown pork chops lightly, sprinkle with salt and pepper to taste.
  • Combine beans, mustard, brown sugar, ketchup, onion, tomato sauce and molasses and pour into a casserole.
  • If necessary, add more liquid such as ketchup.
  • Place pork chops on top and bake in a 350 degree oven for 1& 1/2 hours.

I put this casserole together with leftovers from a pot roast dinner and a few other ingredients. There was a severe thunderstorm in the area here in Denver, thus the name! My family gobbled it up and there were no leftovers in the 8"x8" baking dish I used! You don't need a thunderstorm to try this recipe! :)

1/2-1 lb leftover pot roast, chopped into bite-size pieces
1 cooked carrot, chopped
1 large potatoes or 3 small red potatoes, cooked and chopped
1 (14 1/2 ounce) can stewed tomatoes, undrained
1 (15 ounce) can creamed corn
2 tablespoons ketchup
1 teaspoon Worcestershire sauce
seasoning salt
seasoned bread crumbs
grated parmesan cheese
non-stick cooking spray
1/4 cup sour cream (I used "lite")

Steps:

  • Combine all ingredients, except bread crumbs, Parmesan cheese, and oil spray.
  • Pour mixture into baking dish.
  • Sprinkle with bread crumbs and cheese to coat surface evenly.
  • Spray with oil spray to moisten.
  • Bake at 350 for 30 minutes or until bubbly and crumbs are golden brown.
  • NOTE: Recipe may be adjusted to amount of leftovers you may have.
  • Also, casserole is moist!
