1 lb pitted dark sweet cherry, from a can
1/4 cup orange juice
3 tablespoons brown sugar
3 tablespoons vinegar
3 tablespoons lemon juice
2 tablespoons soy sauce
1/4 teaspoon Worcestershire sauce
1/4 teaspoon grated orange rind
1 tablespoon cornstarch

Steps:

  • FOR THE MEATBALLS: Prepare sauce and set aside.
  • Mix meat ingredients well and shape into 3 dozen small balls. Brown slowly in skillet without added fat. Drain well, add to sauce and simmer gently about 10 minutes. Serve hot with cocktail picks.
  • FOR THE CHERRY SAUCE: Drain cherries from a 1 pound can or from a 1 pound jar and put syrup in large saucepan. Add remaining ingredients and mix well. Cut cherries in half and add to mixture. Cook, stirring, until clear and slightly thickened.

1 small onion, chopped

SAUCE:
1 can (21 ounces) cherry pie filling
1/3 cup sherry or chicken broth
1/3 cup cider vinegar
1/4 cup steak sauce
2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
1 teaspoon honey

Steps:

  • Preheat oven to 400°. In a large bowl, combine the first six ingredients. Add beef and pork; mix lightly but thoroughly. Shape into 1-in. balls. Place on a greased rack in a shallow baking pan. Bake 11-13 minutes or until cooked through. Drain on paper towels., In a large saucepan, combine sauce ingredients. Bring to a boil over medium heat, stirring constantly. One 24-ounce jar arrabbiata pasta sauce
1/2 cup sliced hot cherry peppers
12 store-bought spicy Italian meatballs (from the meat counter)
1 tablespoon crushed red pepper flakes
One 8-ounce log fresh mozzarella, cut into 12 slices
8 to 12 fresh basil leaves, torn
Crusty bread, salad leaves and Italian salad dressing, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the arrabbiata sauce to a 12-inch cast-iron skillet and top with the peppers. Add the meatballs, then bake until the meatballs are cooked through, 18 to 20 minutes. Remove the meatballs from the oven, then turn the oven to the broiler setting.
  • Sprinkle the crushed red pepper flakes over the meatballs, then lay a slice of mozzarella over the top of each meatball. Place under the broiler for 3 to 4 minutes to melt the cheese, watching closely so that nothing burns. Scatter over the torn basil.
  • Serve with crusty bread and a dressed salad.

The writer Anissa Helou put this bright and tart Syrian dish on the cover of her cookbook "Feast: Food of the Islamic World," which gathers recipes from across the Muslim diaspora. "If there is a dish that symbolizes the cooking of Aleppo, this has to be it," she writes inside; the recipe is adapted from Maria Gaspard-Samra, a chef who taught cooking classes in Aleppo. These small lamb meatballs are browned - take care not to overcook them - and then simmered in a pool of pitted sour cherries, raw cane sugar and pomegranate molasses. Then they are piled on a bed of pita bread triangles drizzled with butter and dusted with chopped parsley and toasted pine nuts. If you can't find fresh or frozen sour cherries, use dried, which you can rehydrate by soaking overnight in water.

Steps:

  • Make the meatballs: Mix the lamb, salt and spice mixture (or allspice) and shape into small balls, the size of large marbles. Melt the butter in a large skillet over medium heat and sauté the meatballs just until lightly browned. Remove from pan with a slotted spoon and set aside.
  • Put the cherries, sugar and pomegranate molasses in a pot large enough to eventually hold the meatballs and bring to a bubble over medium heat.   • Assemble the dish: Arrange the pita bread triangles all over a serving platter, coarse side up, making sure the pointed ends are nicely arranged on the outside. Drizzle the melted butter all over the bread. Spoon the meat and sauce over the bread. Sprinkle the chopped parsley all over, then the toasted pine nuts. Serve immediately.

1 1/2 teaspoons ground allspice
Salt
2 tablespoons extra-virgin olive oil
1 1/2 cups chopped onions
1 tablespoon tamarind concentrate (sold in Middle Eastern stores and some fancy food shops)
Juice of 1 lemon
1 tablespoon sugar
1 cup beef stock, optional
1 cup sweet red wine, ruby port or Concord grape juice
1 pound fresh cherries, pitted
Boiled white rice or flatbread (pita) for serving
2 scallions, trimmed and chopped

Steps:

  • Combine beef, pine nuts and 1/2 teaspoon allspice. Season with salt. Form into balls or 2-inch long ovals about an inch thick. You should be able to make 12 to 16.
  • In a shallow 3-quart saucepan, heat 2 tablespoons oil. Sauté meatballs over medium heat, turning, until lightly browned, about 3 minutes. Remove from pan.
  • Add onions and sauté over medium-low heat until softened. Add tamarind, lemon juice, sugar, remaining allspice, 1 cup water or beef stock and wine or grape juice. Bring to a simmer. Season to taste with salt. Add cherries and meatballs, partly cover and simmer about 1 hour. Sauce should have thickened. Check seasoning.
  • To serve, spoon over a bed of rice or onto split rounds of warmed pita. Sprinkle with scallions.
