- Beat butter in the bowl of an electric mixer fitted with the paddle attachment on medium high speed until pale and creamy, about 2 minutes.
- Reduce speed to medium. Add the confectioner's sugar, 1/2 cup at a time, beating well after each addition and scraping down the sides of the bowl with a spatula as needed, about 5 minutes total. After every 2 additions, raise speed to high, and beat 10 seconds to aerate the frosting. Add vanilla, and beat until buttercream is smooth.
FLUFFY VANILLA BUTTERCREAM FROSTING
This fluffy vanilla buttercream recipe is perfect for piping and works great with the viva paper towel method! Good flavor, and contains shortening which makes is a bit more heat resistant.

- Cream butter, shortening , salt and extracts until creamy and smooth.
- Add powdered sugar and milk. Mix thoroughly on medium speed for approximately 8 minutes. For the last two minutes decrease the mixing speed to VERY SLOW ( number 2 speed on a KitchenAid) until creamy and smooth. Scrape the sides of the bowl occasionally during the mixing process.

- Cream the butter in a stand mixer fitted with the paddle attachment (or in a large bowl if using a handheld electric mixer). On low speed, beat in the powdered sugar and then the salt. Add the vanilla, increase the speed to medium-high and beat until light and fluffy. Beat in 2 tablespoons milk; adjust the consistency with extra milk as desired. Use immediately, or refrigerate in an airtight container for up to 3 days. Allow to come to room temperature and beat on medium-high until smooth.

- Put the butter into a large bowl and blend until fluffy, about two minutes, using a hand mixer.
- Sift in the confectioners sugar one cup at a time, beating well after each addition.
- Once the confectioners sugar is fully mixed into the butter, add in the milk or heavy cream and the vanilla. Use a spatula to spare down the sides of the bowl, and beat with the hand held mixer one last time, incorporating the milk, vanilla and all of the butter or confectioners sugar that was left on the sides of the bowl.
- Once buttercream is done, you can pipe on to cupcakes, spread onto cakes, and much more. Just make sure that if you are putting it on something that has been in the oven, it is at least room temperature as it could melt and slide off of your dessert. Store in the fridge for up to two weeks.
