CHICKEN THIGHS SURPRISE
This recipe was one of those great surprises you invent by throwing everything you have in the house together. It is a very versatile recipe in that you can substitute any chicken parts for the thighs, use whatever vegetables and herbs you have in the house, or any cheese you prefer. I have used broccoli when I have no zucchini on hand, and added dill when I have some of that. Any way you make it, it is an easy weeknight meal that has a sauce that is delicious over rice.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Add the squash, eggplant, mushrooms, onion and garlic. Cook and stir for about 5 minutes, until lightly browned. Transfer to a 9x13 inch baking dish.
- In a medium bowl, stir together the condensed soup, chicken broth, garlic salt and pepper. Pour half of this mixture over the vegetables. Place chicken thighs over the top of the vegetables, and sprinkle with Swiss cheese. Pour the rest of the soup over all.
- Bake uncovered for 45 minutes in the preheated oven, or until chicken is cooked through and juices run clear.

- Preheat oven to 375°. Place chicken in a greased 13x9-in. baking dish. In a small bowl, mix the remaining ingredients; pour over chicken., Bake, uncovered, 30-35 minutes or until thermometer inserted in chicken reads 165°, basting occasionally. Remove chicken from dish and keep warm., Transfer sauce to a small saucepan. - Place chicken in a 3-qt. slow cooker. In a small saucepan, combine brown sugar and flour. Stir in the water, vinegar and soy sauce. Add the ketchup, onion, mustard, garlic powder, salt and pepper. CRISPY BAKED CHICKEN SUPREME

- Preheat oven to 350 degrees.
- Grease a 9x13 baking dish.
- If the chicken breasts are super thick, I slice them in half, horizontally, to get breasts with a more even thickness, otherwise you can just pound them slightly to flatten out the thick end. Evening out the thickness of the meat means it will cook more evenly.
- Place the chicken breasts into the prepared pan.
- Stir together the sour cream and soup. Spread the sauce in an even layer over the top of the chicken breasts.
- Pour the contents of the stuffing box into a gallon-sized zip-top bag. Use a rolling pin to crush the stuffing mix into fine crumbs.
- Once the stuffing is crushed, add the Parmesan cheese to the bag. Shake the bag so all the crumbs and herbs form the stuffing are combined with the Parmesan.
- Sprinkle the Parmesan/stuffing mixture over the sauce on your chicken. Use it all. It will seem like a thick layer, but trust me, it's perfect!
- Distribute the butter slices over the top of the crumbs.
- Bake in a 350 degree oven for 45 minutes to an hour, depending on the thickness of your chicken breasts. Internal temperature of the chicken should be 165 degrees.

SHREDDED, SAUCY BBQ CHICKEN SAMMIES

- Bring liquids to a simmer in a small to medium skillet and slide in the chicken breast meat. Gently poach the chicken 10 minutes, turning once about after 5 minutes.
- While chicken poaches, heat a second medium skillet over medium low heat. To hot skillet, add extra-virgin olive oil and garlic and onion and gently saute until chicken is ready to come out of poaching liquids. Combine the next 5 ingredients in a medium bowl and reserve.
- When the chicken has cooked through, add 2 ladles of the cooking liquid to the bowl, combining with the sauces, spices, brown sugar and tomato paste. Once the liquids and seasonings are combined, remove chicken, slice it, and transfer to the medium bowl. Using 2 forks, shred the chicken and combine with the liquids. Add the shredded chicken to the onions and garlic and combine well. Simmer together 5 to 10 minutes, using extra cooking liquids to make your chicken as saucy as you like.
- Combine sour and sweet pickles in a small bowl. Split rolls and fill with scoops of shredded chicken. Top with pickle relish and serve.
CHICKEN SURPRISE
Easy Chicken dish which all my family loves including the grandchildren. This receipe came from my turn to cook Sunday dinner and what I had in the pantry and frig. We like the receipe because it is easy, spicy and a meal all in one. We serve it with green salad.

- Boil chicken breast until tender.
- Remove meat from bone.
- Spray 9 by 13 pan with low fat spray.
- Cut at least 9 tortillas into strips.
- Line the bottom of the pan until covered.
- In a small skillet, melt cream cheese and the jar of cheese with chilies.
- Add milk to a sauce consistency.
- Sprinkle red pepper.
- Break chicken into small pieces and place in pan, layer with tortillas strips and alternate until pan is filled.
- Pour cheese mixture over the top.
- Sprinkle cheddar cheese on top.
- Bake at 350 for approximately 30 minutes.
CHICKEN SURPRISE

- Remove the skin and fat from the chicken thighs. Place them in a saucepan, cover with 6 cups of water and season with salt and pepper. Simmer for 45 minutes. Remove and let cool; reserve the broth.
- Remove the meat from the bones and set aside. In a frying pan, heat the oil over medium heat. Add the onion and mushrooms and saute for 5 minutes or until the mushrooms are cooked and the onion wilted. Set aside.
- In a saucepan, melt the butter over medium-high heat. Add the flour and stir well. Slowly whisk in 2 to 3 cups of the reserved broth to make a thin roux. Season with the thyme, lime juice, salt and pepper.
- Add the chicken, onion and mushrooms to the sauce and reheat slowly. Adjust the seasonings and serve.
