CHINESE PORK CHOPS
This is a great and easy way to add flavor to pork chops, and it is always a hit at family gatherings. Just take a few minutes to make the marinade and let it sit for several hours. If cooking in the oven, set at 350 degrees F and cook for 30 minutes, or until done.

- In a bowl, mix the soy sauce, brown sugar, lemon juice, vegetable oil, ginger, and garlic powder. Set aside some of the mixture in a separate bowl for marinating during cooking. Pierce the pork chops on both sides with a fork, place in a large resealable plastic bag, and cover with the remaining marinade mixture. Refrigerate 6 to 8 hours.
- Preheat the grill for high heat.
- Lightly oil the grill grate. Discard marinade, and grill pork chops 6 to 8 minutes per side, or to desired doneness, marinating often with the reserved portion of the marinade.

SAUCY CHINESE PORK CHOPS

- Place pork chops in a 3-qt. slow cooker coated with cooking spray. In a small bowl, combine the onion, ketchup, brown sugar, water, soy sauce, garlic and ginger. Pour over chops. Cover and cook on low for 3-4 hours or until meat is tender. Serve with rice and cooking juices.

My mom and I developed this recipe together. We call it Vietnamese/Chinese because the fish sauce is from Vietnamese cuisine and 5 spice powder from Chinese cuisine. It is our favorite marinade for pork chops. If you buy your pork chops from an Asian market, let them know what you're cooking. Generally, the thinner the chop, the better.

- Whisk together the brown sugar, honey, fish sauce, 3 tablespoons of vegetable oil, soy sauce, Worcestershire sauce, ginger, five-spice powder, sesame oil, shallot, garlic, onion, lemon grass, salt, and pepper in a bowl, and pour into a resealable plastic bag. Add the pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours.
- Heat 1/4 cup of vegetable oil in a large skillet over medium-high heat or preheat an outdoor grill for medium-high heat, and lightly oil the grate. Cook until the pork chops are no longer pink in the center, about 4 minutes on each side.

- Tenderize meat pork with a meat mallet. If you're short on time, pound to at least 1/4 inch thickness or thinner.
- Mix together all the ingredients except cornstarch and oil and pour over pork. Allow to marinate for 30 minutes. (I've marinated it as long as 1 day and as little as 10 minutes.).
- Just before frying, pour cornstarch on top of pork and stir into marinade.
- Heat enough oil in a large skillet to cover bottom. Place pork in pan when oil begins to shimmer. Cook pork chops over med-high heat until cooked through.

BARBECUED STICKY CHINESE PORK CHOPS

- Make marinade by mixing ingredients together. Put chops in a shallow bowl or tray, pour marinade over, turning chops to make sure they are coated all over, and leave to stand for at least 30 mins.
- To make salad, put the fish sauce, lime juice and 1 tbsp water into a small bowl, add the sugar, then mix until dissolved. Stir in shallot and chilli. Put cucumber in a serving dish, sprinkle mint over, pour dressing over and scatter with peanuts.
- Heat the barbecue or griddle pan and cook chops on each side for 4-5 mins, until cooked. Serve with cucumber salad.

- Season both sides of pork chops with seasoning blend and pepper. In a large nonstick skillet, brown meat in margarine on each side over medium-high heat. Add the tea, celery, onion and soy sauce; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until meat and vegetables are tender., Remove meat to serving dish. CHINESE PORK CHOPS WITH ONIONS IN TANGY SAUCE

Steps:
- Prepare the brine, and leave the boneless pork chops in it for 30 minutes.
- In the meantime prepare the marinade, mixing the ingredients into a smooth paste.
- Remove the meat from the brine, rinse, drain and pat dry the chops thoroughly with some paper towels.
- Pound the chops gently to even thickness.
- Coat each chop with the marinade and massage it evenly into the meat for 1 minute.
- Add 1 tbsp of oil to seal the marinade.
- Marinate for at least 1 hour in a Ziploc bag in the refrigerator. Bring to room temperature before cooking.
- Cut onions into medium slices, and minced the garlic clove.
- Heat 2 tbsp of oil in a frying pan on high heat.
- Place the pork into the hot oil and reduce the heat to medium. Do not move the pork chops for 30 seconds to lock in the juices, and allow the crispy crust to form.
- Prepare the tangy sauce in the meantime by mixing the ingredients.
- Turn the pork chops over after 3 minutes or when they become golden, and fry the other side for another 3 minutes or until golden.
- Transfer the cooked pork chops onto a plate and keep warm.
- Add 1 tbsp of oil to the same pan at medium-high heat.
- Add onions and saute for 2 minutes till they become fragrant, then add the minced garlic and mix well.
- Add the sugar and salt into the onions and continue sauteing for a minute.
- Add the tangy sauce and mix well with the onions and serve them over the pork chops.
