16 bob evans dinner sausage links (NOT maple!)
1 (16 ounce) can crushed tomatoes
1 beef stock cube
1 onion, diced
1/2 lb bacon, cut into bite size pieces
3 cloves garlic, crushed
8 ounces mushrooms, sliced.
salt, to taste
pepper, to taste
1 dash dried basil
1 dash Worcestershire sauce
1/4 cup red wine, for flavour of course

Steps:

  • In large saucepan, fry saute garlic, bacon, mushrooms, stock cube and onion til soft and aromatic.
  • Add sausage links and brown (about 10 mins) Add crushed tomatoes, salt, pepper, worcester sauce and basil.
  • Simmer over medium low heat for about 35-45 minutes Thats it!
  • nothing to it really but its sooooooo tasty and fantastic for winter.
  • I serve with broccoli and jacket potatoes and there is never any leftovers!

Ensure there are enough tasty eggs to go around. This hardy Sausage and Bacon Egg Casserole is packed with delicious breakfast meat and veggie favorites in every bite!

1 Tablespoon Butter, unsalted
8 Ounces (1/2 Lb) Bacon
16 Ounces (1 Lb) Sausage
1/2 Large Onion (diced)
1 Bell Pepper (seeds removed and diced)
2 Garlic Cloves (minced)
2 Cups Shredded Cheese
12 Large Eggs
1/3 Cup Whole Milk
Green Onion
Salt and Pepper

Steps:

  • Preheat the oven to 400 F. Prep the casserole dish. Melt 1 tablespoon of butter and use a silicon brush to coat the inside of the casserole dish. Set aside.
  • Bake the bacon: While the oven is preheating, line a baking sheet with parchment paper and place 8 ounces of bacon strips side by side on the pan. Place the baking sheet in the oven on the middle rack. Bake around 15 minutes. Check the bacon often to make sure it does not overcook.
  • Cook the filling: Cook the sausage in a stove top pan. Place the cooked sausage in the casserole dish. Remove any excess sausage grease from the pan and then sauté the diced onion, peppers and garlic in the remaining grease. When perfectly sautéd with light browning, place in the casserole dish.
  • Remove the bacon from the oven and allow to cool before handling.
  • Assemble the casserole: Top the sausage and veggies with cheese. After the bacon has cooled, crumble into the casserole dish and mix all the ingredients together until well distributed.
  • Whisk the eggs and milk together. Pour the egg mixture over the meat and veggies and lightly mix with a wooden spoon or spatula.
  • Add a bit of salt and pepper and green onion slices on top.
  • Place the casserole dish in the oven, on the middle rack, and bake for 25-30 minutes.
  • Once baking is complete, remove from the oven and allow to cool for 5 minutes before serving.

2 (8 ounce) cans refrigerated crescent rolls

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease the bottom of a 9x11 inch baking dish.
  • Cook the sausage in a skillet over medium heat until crumbly and beginning to brown; drain. Stir the cream cheese into the cooked sausage.
  • Roll the dough from one can of crescent rolls into the bottom of the prepared baking dish without separating. Bake in the preheated oven for 5 minutes. Spread the sausage mixture over the baked crescent rolls; top the sausage mixture with the remaining can of rolls. Return to oven and bake until the top layer is golden brown, about 8 minutes.

From a popular collection of Recipes originally published in an Afrikaans magazine, Huisgenoot. The recipe calls for a coarse South African sausage, Boerewors, which is generally made up of 2/3 beef, 1/3 pork, plus spices, etc., but I use normal pork sausages for this. A lovely casserole, I serve it with Dauphinoise potatoes.

500 g sausages
250 g streaky bacon
2 large granny smith apples, peeled and sliced
2 medium onions, chopped
30 ml sunflower oil
2 large tomatoes, skinned and sliced
1 large green pepper, seeded and chopped
15 ml cake flour
150 ml beef stock
15 ml Worcestershire sauce
1 bay leaf
1 pinch dried thyme
1 pinch dried sage

Steps:

  • Roll each sausage in 1 or two rashers of bacon and secure with a toothpick.
  • Sauté the apples and onions in half the oil. Spoon them into an ovenproof dish with a lid.
  • Arrange the sausages on top.
  • Braise the tomatoes and green pepper in the remaining oil, sprinkle the flour over, and cook for about three minutes.
  • Add the stock and flavourings and cook for a further three minutes.
  • Spoon the tomato sauce over the sausage, cover with the lid, and bake for 45 minutes in a preheated oven at 180°C (350°F).

6 bacon strips, chopped
3 cups water
1 cup whole milk
3/4 teaspoon salt
1 cup uncooked old-fashioned grits
2 cups shredded Colby-Monterey Jack cheese, divided
2 large eggs, room temperature, lightly beaten
1 cup fresh or frozen corn, thawed
1/4 teaspoon pepper
Sliced avocado, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Meanwhile, in a Dutch oven, bring water, milk and salt to a boil. Slowly stir in grits. Reduce heat to low; cook, covered, until thickened, 15-20 minutes, stirring occasionally. Remove from heat. Stir in 1-1/2 cups cheese until melted. Slowly stir in eggs until blended. Stir in bacon, corn and pepper. Transfer to a greased 2-qt. baking dish. Sprinkle with remaining 1/2 cup cheese., Bake, uncovered, until edges are golden brown and cheese is melted, 35-40 minutes. Let stand 10 minutes before serving. If desired, serve with avocado. , Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake grits as directed until heated through and a thermometer inserted in center reads 165°, increasing time to 45-55 minutes.

1 pound ground pork sausage
1 pound bacon
4 cups milk
8 eggs
12 slices white bread, crusts trimmed
2 tablespoons butter, softened
3 small onion, chopped
6 slices processed American cheese, shredded

Steps:

  • Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
  • In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
  • The next morning: preheat oven to 425 degrees F (220 degrees C).
  • Bake, covered, in preheated oven for 45 to 60 minutes.

1 package (28 ounces) frozen O'Brien potatoes, thawed
3 cups shredded Mexican cheese blend
12 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper
Minced fresh parsley, optional

Steps:

  • In a large skillet, cook bacon in batches over medium heat until crisp. Remove to paper towels to drain., In a greased 4- or 5-qt. slow cooker, layer a third of each of the following: potatoes, reserved bacon and cheese. Repeat layers twice. In a large bowl, whisk eggs, milk, salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. If desired, sprinkle with parsley.
