If making one half-size vegetarian/one half-size meaty strata (add)
1/2 pound chorizo sausage
If making a full-on meaty strata (add)
1 pound chorizo sausage
Optional toppings

This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

This is a make ahead dish, great for when you have overnight company. Time to make doesn't reflect overnight refrigeration. Let me know what you think!
