SAUSAGE & EGG BREAKFAST CUPS RECIPE BY TASTY

Steps:
- Mix sausage, salt, pepper, garlic powder, onion powder, paprika, and dried parsley in a bowl until well combined.
- Grease a muffin tin and start to form shells with the sausage mix. Cover the sides and leave room in the middle for the eggs.
- In a separate bowl, mix the eggs, salt, and pepper.
- Pour egg mixture into the middle of each cup.
- Top with shredded cheese, tomatoes, spinach, or toppings of your choice.
- Bake at 350°F (180°C) for 30 minutes.
- Enjoy!

Steps:
- In a bowl, whisk eggs, soup, salt and pepper. Set aside.
- Heat skillet to med-high and saute onion in olive oil until translucent.
- Add sausage to skillet. Brown sausage with onion, turning meat often so it is small crumbles.
- Drain grease off.
- Add scramble egg mixture to the sausage mixture and scramble, stirring frequently.
- Remove from heat and cool slightly.
- Mix in cheese.
- Fill pita pockets with mixture and stand in a pan.
- Wrap filled pockets in wax paper and place in gallon size freezer bags.
- Freeze.
- To serve, take a frozen pocket out of the freezer. Take off wax paper. Place pocket on a plate. Cover with paper towel and microwave for 60-90 seconds. Enjoy.

- Preheat oven to 325°. Wrap pita breads in foil; warm in oven while preparing toppings., In a small bowl, mix yogurt, green onions, parsley, lemon juice and garlic. Super simple. Attractive and tasty way to get rid of leftover Easter eggs. Using eggs that have been boiled and sitting in the fridge for a day or two makes slicing easier. Boiling your eggs with a little salt makes for easier peeling. Try adding different things to the recipe, very versatile. I like adding Greek olives, or occasionally baby spinach leaves tossed with balsamic vinaigrette. It also works well with grated parmesan cheese, or other hard white cheeses.
