MUSHROOM RAVIOLI AND SAUSAGE CASSEROLE

3 tablespoons unsalted butter
1 onion, finely chopped
10 ounces white mushrooms, thinly sliced
Freshly ground pepper
6 ounces mild Italian sausage, casings removed
3 cloves garlic (2 thinly sliced, 1 grated)
2 teaspoons fresh marjoram, chopped
1 28-ounce can crushed tomatoes
2 10-ounce packages refrigerated mushroom ravioli
1 cup shredded mozzarella cheese
1/4 cup breadcrumbs
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the broiler. Bring a large pot of salted water to a boil. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, mushrooms, 1/4 teaspoon salt and a few grinds of pepper. Cook until the vegetables are beginning to brown, 5 to 8 minutes. Add the sausage and cook, breaking up the meat, until no longer pink, about 4 minutes. Add the sliced garlic and marjoram and cook until softened, 1 more minute. Add the tomatoes and 1/4 cup water, bring to a simmer and cook until the vegetables are tender and the sauce has thickened slightly, about 6 minutes.
  • Meanwhile, cook the ravioli in the boiling water as the label directs. Reserve 1/4 cup cooking water, then drain. Add the ravioli and the reserved cooking water to the sauce; stir to coat. Transfer half of the ravioli and sauce to a 9-by-13-inch broiler-proof baking dish. Sprinkle with 1/2 cup mozzarella. Top with the remaining ravioli, sauce and mozzarella.
  • Meanwhile, microwave the remaining 1 tablespoon butter in a small microwave-safe bowl until melted. Stir in the grated garlic and breadcrumbs; season with salt and pepper. Sprinkle over the baked ravioli and broil until browned on top, about 2 minutes. Top with the parsley.

Steps:

  • Preheat oven to 350°. Cook tortellini according to package directions. , Meanwhile, in a large skillet, saute mushrooms, garlic powder, onion powder and pepper in 1/4 cup butter until mushrooms are tender. Remove and keep warm. , In same skillet, combine milk and remaining butter. Bring to a gentle boil; stir in brick cheese until smooth. Drain tortellini; place in a large bowl. Steps:

  • Heat butter in a large, deep skillet over medium heat. Cook and stir mushrooms, 1/2 cup white wine, and 1 clove minced garlic until liquid has reduced and mushrooms have softened, about 5 minutes. Remove from heat and place in a bowl.
  • Heat the same skillet over medium-high heat. Cook and stir Italian sausage in the hot skillet until browned and crumbly, 5 to 7 minutes, dividing it into bite-sized portions while stirring. Remove excess grease by placing paper towels onto a plate and dumping browned sausage onto it to drain. Return sausage to the skillet.

1 green bell pepper, chopped
1 (24 ounce) jar marinara sauce
1 (14 ounce) can Italian-style diced tomatoes

2 cups shredded mozzarella cheese

Steps:

  • Heat a large pot over medium heat. Crumble sausage into the saucepan; add onion and green bell pepper. Cook and stir the sausage mixture until the sausage is completely browned, 7 to 10 minutes. Drain grease.
  • Pour marinara sauce and diced tomatoes over the sausage mixture; season with garlic powder and stir. Bring the mixture to a simmer, reduce heat to medium-low, and cook at a simmer until the diced tomatoes break down into the sauce, 30 to 45 minutes.

1 tablespoon olive oil
1 medium onion, chopped
4 cloves garlic, minced
3 tomatoes, diced
1 cup chopped fresh spinach

½ teaspoon salt
¼ teaspoon ground black pepper
¾ cup heavy cream
¾ cup milk
½ cup finely shredded Italian cheese blend

Steps:

  • Heat a nonstick skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned, about 10 minutes.

I felt like cooking today but didn't know what, so my husband suggested something with a rose sauce, which he loves. So, I thought about it, and decided to make this up as I went. I was worried it wouldn't taste good (because I usually follow a recipe), but it turned out incredible! I'm sharing it with those who aren't too concerned about their waistline.:) You can add bell peppers, if you like.

1 (9 ounce) bag frozen cheese tortellini
1 Knorr parma rosa sauce mix
3 tablespoons butter or 3 tablespoons margarine, divided
1 1/2 cups skim milk
3 hot Italian sausages, sliced into 1 cm. medallions
250 g sliced mushrooms
1/2 small onion, finely chopped
1 cup mozzarella cheese (or more)
1/2-1 cup Ritz cracker crumbs
2 tablespoons parmesan cheese

Steps:

  • Bring a pasta pot of salted water to a boil. While waiting for the water to boil, heat a skillet over medium-high heat. Fry sausage slices on both sides until brown; remove them from the skillet. Place in a large mixing bowl.
  • In the same skillet, saute mushrooms for 2 minutes, then add onion, and sauté for an additional 2 minutes, until mushrooms have rendered their liquid and onion has softened. Remove from skillet, scraping any sausage bits that remain, and place in the same bowl as the sausage.
  • Preheat oven to 350°F.
  • Cook tortellini approximately 7 minutes; drain and rinse. Place in the mixing bowl.
  • While tortellini is cooking, melt 1 tbsp of butter or margarine in a small saucepan over medium-high heat. Add milk and sauce mix, stirring constantly until well combined. Continue stirring frequently until sauce comes to a boil; reduce heat and continue stirring until thickened, about 1-2 minutes.
  • Pour sauce over everything and mix with a spatula until well combined. Place in a greased casserole dish, and sprinkle with parmesan cheese. Top with mozzarella cheese, then crushed Ritz crackers.
  • Melt remaining 2 tbsp butter or margarine in the microwave for about 30 seconds, and drizzle over the crumbs.
  • Place in the oven for 30 minutes until golden brown on top; let stand 10 minutes before serving. Enjoy!

Traditionally made by my stepmother, Sue, for New Year's Day brunch, this is a wonderful make-ahead dish. It can be prepared with canned cream of mushroom soup or leftover homemade cream of mushroom soup, and you can substitute various kinds of sausage, according to your taste. Serve with Mimosas (pages 246-247) or Bloody Marys (page 245).

Number Of Ingredients 8

1 pound breakfast sausage links
8 slices white bread, cut into cubes
1 cup grated Cheddar cheese (4 ounces)
4 extra-large eggs
1 1/2 cups milk
1 tablespoon dry mustard
Kosher salt and freshly ground black pepper to taste
One 14 3/4-ounce can condensed cream of mushroom soup mixed with 1/4 cup milk, or 1 1/2 cups homemade cream of mushroom soup

Steps:

  • Cook the sausage in an 8-inch nonstick skillet over medium heat. Turn it a couple of times so that it browns evenly. Remove the sausage from the skillet and cut into 2-inch pieces.
  • Lightly butter a 9 x 13 x 2-inch baking pan. Pour the bread cubes over the bottom of the pan. Sprinkle evenly with the sausage and Cheddar cheese.
  • Whisk together the eggs, milk, and dry mustard in a large bowl. Pour the egg mixture over the sausage mixture. Cover tightly with aluminum foil and refrigerate overnight.
  • Preheat the oven to 300°F.
  • Remove the pan from the refrigerator, uncover, and pour the mushroom soup mixture over the casserole.
  • Bake the casserole, uncovered, for about 1 1/2 hours or until fairly firm inside and lightly golden on top. Let stand for 5 minutes. Serve warm.
